- dry 36 dates and chopping them in the blender.
- Combine all ingredients in a saucepan and bring to a boil.
- Reduce heat to medium-low and simmer, stirring frequently for 1 hour.
- Cool to room temperature, put in a blender and blend until smooth.
- Store in refrigerator; heat slightly before using on anything you are serving hot.
- Use Date Syrup just as you would use maple syrup on pancakes, waffles, French toast, ice cream.
- It is higher in fiber and lower in calories than maple syrup or honey. Makes about 1 3/4 cups.
HOMEMADE DATE SYRUP
With this recipe of homemade date syrup you will never need to buy a bottle from store again. Tasty, healthy and clean date syrup ready in 30 minutes flat. Apart from mixing with milk, you can use this as dessert or cake topping too!

- If you have refrigerated the dates, remove them to a bowl and add water to cover them and set aside for 10 minutes. This will soften the dates and makes it easier to pit them.
- Drain the excess water and pit the dates and halve them or chop them roughly.
- In a big pan bring 4 cups of water to rolling boil. Add the pitted and halved dates and cook for 5-6 minutes. Switch off the flame. Let the dates remain in hot water for an hour.
- Using a sieve over large bowl filter the water from the soaked dates. Using the back of ladle or potato masher mash the cooked dates really well. Get all the juice extracted from the dates by mashing.
- You will get about 2.5 cups of extracted liquid. Now take the filtered liquid back in a sauce pan. Simmer for 15-20 minutes. The syrup will start to thicken. Simmer till the syrup thickens and reduces a bit.
- I simmered for around 15 minutes to keep the consistency slightly thin as it thickens on refrigerating.

- Chop your dates roughly.
- Soak your dates in boiling water for 20 minutes to get rid of impurities, discard the soaking water afterwards.
- Place the soaked dates in a large lidded pot with 1 litre / 4 cups of water. Bring to a gentle boil, simmer, covered, for 1-2 hrs (2 is better if you have time).
- Allow it to cool down completely.
- Place a sieve over a large bowl and line the sieve with a large piece of cheesecloth or use a nut bag.
- Squeeze all of the water from the cooked dates really well. You'll need to do this in smaller batches unless you have a very large piece of cheesecloth. You should get about 2 cups of liquid.
- Pour the date juice into a pot and allow it to come to a gentle simmer. Simmer, uncovered, for about 45-60 minutes until the excess water evaporates and the syrup reduces by approximately half. If you dip a spoon in it, the syrup should coat the back of it - the syrup will become even thicker after cooling. If the syrup is too thin for your liking, return it to the heat and reduce some more, but be careful not to over reduce.

- Place dates in a small bowl and completely cover with hot water. Allow to soak until softened, 10 to 15 minutes. Drain, but reserve soaking liquid.
- Combine soaked dates, 2 tablespoons toasted sesame seeds, walnuts, almonds, coconut, coconut oil, cardamom, cinnamon, vanilla, and salt in the bowl of a large food processor. Pulse several times until mixture comes together to form a soft "dough," scraping down the sides as necessary. If mixture is too dry, add in some of the reserved soaking liquid, 1 tablespoon at a time, until desired consistency is reached.
- Turn out dough onto a piece of parchment paper. Roll into a 10-inch long by 1 1/2-inch wide log using lightly greased hands. Sprinkle remaining toasted sesame seeds evenly over the log on all sides, pressing them in gently. Wrap the log in parchment paper, and refrigerate until firm, at least 1 to 2 hours.
- Remove log from fridge, and cut into about sixteen 1/2-inch thick rounds. Serve immediately or store in the refrigerator until ready to use.

- Put the dates and water in a medium saucepan on medium high heat to bring to a boil. Then turn the heat down to med low and allow the mixture to simmer. If you see foam appearing on the top, skim it off (same thing you do when making soup stock or jam). Using a wooden spoon, mix occasionally and smash the dates with the back of the spoon. After about 15 minutes of simmering, take it off the heat and let it cool.
- Now set your strainer lined with cheesecloth on the top of the bowl and pour the mixture through. Use the wooden spoon to coax much of the liquid out of the dates. Then wrap the cheesecloth around the date mixture and wring it out as you might a wet rag. The liquid will keep coming. Don’t leave any behind.
- At this point, I was left with about 1 2/3 cup of sweet goodness. Give it a taste to get an idea of the sweetness. Mine was yummy but too thin and not quite intense enough yet. I poured the liquid back into the pot I was using (but cleaned) and brought it back up to a boil. Then I reduced the heat to medium low to maintain a low boil and reduced it down to about ¾ cup of liquid. This took about 20 minutes. You don’t need to be standing over it the whole time – put a timer on and check it every five minutes or so. If you note on a spatula at the start how high the liquid is when you dip it in, you can use that spatula to get a sense of how much you have reduced as you boil it down. Or, just use your taste buds and eyeballs and a spoon. When it starts to coat the back of a spoon, it’s getting thicker. When it tastes more intensely sweet, it is reduced. I stopped at a syrupy consistency – it tasted just like liquid dates, exploding with sweet flavor in my mouth. So I took it off the stove
