Cranberry Apple Granola Walnut Cobbler image

A walnut crust with a cranberry apple filling and a granola topping.

1 serving Carlini Cooking Spray
2 cups Southern Grove Walnuts
3 tablespoons Countryside Creamery Unsalted Butter
3 tablespoons Baker's Corner Granulated Sugar
5 ounces Southern Grove Dried Cranberries
4 each Granny Smith apples, peeled and diced
¼ teaspoon lemon zest
¾ cup water
¼ teaspoon Stonemill Essentials Ground Cinnamon
⅛ teaspoon ground ginger
⅛ teaspoon ground nutmeg
⅔ cup Baker's Corner Granulated Sugar
2 ½ cups Sweet Home Farm Honey Nut Granola with Almonds
¼ cup Countryside Creamery Unsalted Butter
2 tablespoons Baker's Corner Granulated Sugar

Steps:

  • Preheat oven to 350 degrees F. Coat a 2-quart casserole dish with baking spray.
  • In a food processor, pulse the walnuts, 3 tablespoons butter and 3 tablespoons sugar until finely crumbled.
  • Press crumbs into the bottom of the casserole dish. Bake for 8 minutes.
  • Meanwhile, in a medium sauce pan, bring the cranberries, apples, lemon zest, water, cinnamon, ginger, nutmeg and 2/3 cup sugar to a boil. Simmer 8 minutes. Pour over the walnut crust.
  • In a medium bowl, combine the granola, 1/4 cup butter and 2 tablespoons sugar. Sprinkle evenly over the apple layer. Press down gently with a spatula.
  • Bake for 25 minutes. Allow to rest 20 minutes. Serve warm.

1 (12 ounce) package fresh or frozen cranberries
1 cup pitted prunes, quartered
⅔ cup water
⅓ cup seedless raspberry jam
¼ cup white sugar
1 tablespoon apple cider vinegar
½ teaspoon salt
1 cinnamon stick

Steps:

  • Combine the cranberries, prunes, water, raspberry jam, sugar, vinegar, salt, and cinnamon stick in a 3-quart saucepan; bring to a boil, stirring occasionally. Reduce heat to medium and simmer until thick and most of the cranberries have burst, about 10 minutes. Remove from heat and allow to cool. Transfer to a container with a lid; cover and refrigerate at least 3 hours before serving.

I once had a recipe like this from a dear friend, but I misplaced the recipe. I was delighted to see it again in "Debbie Macomberr's Christmas Cookbook." Many will recognize Debbie's name as she is a popular women's writer.

2 1/2 cups fresh cranberries or 2 1/2 cups frozen cranberries
3/4 cup walnuts, chopped
1/2 cup plus 3/4 cup granulated sugar
2 large eggs
12 talespooons unsalted butter, melted (1-1/2 sticks)
1/4 teaspoon almond extract
1 cup flour
1 pinch salt

Steps:

  • Preheat oven to 350 degrees F. Have ready a 9" pie pan.
  • In pie pan, combine cranberries, walnuts, and 1/2 cup sugar. toss until coated.
  • In a medium bowl, whisk eggs, melted butter, remaining sugar and extract until blended. Fold in flour and salt until combined. Pour the batter over the cranberry mixture. Bake for 40 minutes until crust is golden and fruit bubbles. Transfer to a wire rack to cool.
  • VARIATION; In the summer try this substituting blueberries or strawberries, but cut the sugar added to the fruit in half.
