WHIPPED SWEET POTATOES AND BANANAS WITH HONEY
You can roast the potatoes and bananas ahead of time, then put it all together just before serving. Then heat it up in the oven.

Steps:
- Preheat the oven to 375 degrees F.
- Prick the sweet potatoes all over with a fork, put them in a roasting pan and roast for 30 minutes. Toss the bananas into the pan and continue roasting for 10 to 15 minutes, until both the bananas and potatoes are very soft. Remove the pan from the oven but don't turn the oven off.
- When the potatoes are cool enough to handle, scoop out the flesh into a large mixing bowl. Peel the bananas and add them to the bowl along with 1 stick of the butter, and the honey. Season with salt and beat vigorously with a wooden spoon until everything's well combined and the mixture is fluffy. Spoon into an oven-proof serving bowl and smooth the top.
- In a separate mixing bowl, use your fingers to rub together the remaining stick of butter, the brown sugar, flour, and pecans until the mixture is the consistency of coarse crumbs. Sprinkle the crumb mixture over the sweet potatoes and return to the oven. Cook for about 20 minutes, until the crumbs are golden. Serve hot.

- Place sweet potatoes in a Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or just until tender. Drain potatoes; place in a large bowl and mash. Stir in the orange marmalade, orange juice, brown sugar and extract. Cool slightly., In a small bowl, beat egg whites until stiff peaks form. Fold into sweet potato mixture. Transfer to a 2-1/2-qt. baking dish coated with cooking spray. Sprinkle with almonds. Bake, uncovered, at 350° for 30-35 minutes or until a thermometer reads 160°.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish with 1 tablespoon butter.
- Beat sweet potato, sugar, half-and-half, eggs, and vanilla together in a bowl with an electric hand mixer; spread into prepared casserole dish. Top sweet potato mixture with marshmallows.
- Stir 1/3 cup melted butter, brown sugar, pecans, and flour together in a bowl; sprinkle over marshmallows.
- Bake in preheated oven until hot throughout, about 30 minutes.

SWEET POTATO PIE (THE BEST ONE)
This is a variation on a Paula Deen recipe. Very good and quite easy - best one I've ever made. You won't find a better sweet potato pie recipe. I bake the sweet potatoes first double wrapped in foil (with a slit cut through the foil and potato) at 350°F for about an hour - then they easily come out of their skins for this pie recipe.

- Preheat the oven to 350°F.
- For the pie crust, crush the ginger snap cookies and the walnuts together in a food processor, blender or by hand. Then combine with 1/3 cup melted butter and press into a pie pan. Bake for about 5 minutes.
- For the filling, using an electric hand mixer, combine the potatoes, both sugars, 1/2 stick melted butter, eggs, vanilla, salt, and spices. Mix thoroughly. Add the milk and continue to mix. Pour the filling into the pie crust and bake for 45 to 55 minutes, or until a knife inserted in the center comes out clean.
- •Tips:.
- You may use a pie ring to prevent over browning of your crust.
- If you have a Trader Joe's market nearby, they have the best Triple Ginger Snaps to use for the crust.
- Use real sweet potatoes and bake them - even if you bake them in the microwave oven. Don't use the canned stuff.
