DEER STEAK MARINADE & HOW TO GRILL DEER MEAT
This deer steak marinade is delicious for grilling or frying on the stovetop. I'm also sharing how to grill deer steaks, one of our favorites on how to cook deer steak.

Steps:
- In a bowl, mix together soy sauce, Worcheshire sauce, brown sugar, garlic powder, onion powder, hot sauce, and salt and pepper.
- Place steaks in gallon size ziptop bag and pour marinade over steaks, pushing out air, and sealing the bag.
- Let marinate in the refrigerator for at least one hour, preferably overnight, moving the bag around often to make sure all steaks sit in marinade at some point.
- When ready to cook, remove steaks from the refrigerator and bring to room temperature, or as close as possible. (Do not microwave.)
- Preheat grill to high heat and place steaks over the hot part of the grill, and grill on each side for 3-4 minutes.
- Pull steaks off of the grill, coat with melted butter and let rest for 3-4 minutes.
- Steaks will be a "medium" steak at this cook time. If you prefer steaks that are well done, cook on the grill an additional minute until steak reaches desired "doneness".

VENISON STUFFED SHRIMP IN BACON WRAP

- Combine venison, pork, basil, parsley, garlic, shallots, eggs, and salt and pepper and mix well.
- Preheat broiler.
- Make an incision along back of each shrimp and stuff with pork mixture. Secure by wrapping the half slice of bacon around each shrimp. Broil until meat stuffing is cooked and bacon is golden brown, being careful to avoid overcooking shrimp.

- VENISON MARINADE RECIPE #1: Mix marinade ingredients together in a large resealable bag. Add venison and let sit in the marinade for at least 4 hours, overnight is best. Here's another deer meat marinade along the same lines as the one above: VENISON MARINADE #2 2 cups homemade soy sauce 1 cup homemade brown sugar, packed 1 TBS homemade worcestershire sauce 1 TBS homemade garlic powder 1 TBS homemade onion powder 1/4 cup canola oil 1/4 tsp black pepper 1/2 tsp ginger Mix all ingredients well and place in a resealable plastic bag. Add meat and marinate for a minimum of 4 hours; overnight is best. VENISON MARINADE RECIPE #3 1/2 cup homemade vinegar 1/4 cup homemade ketchup 1/4 cup canola oil 1/4 cup homemade worcestershire sauce 1 TBS homemade garlic powder 1 TBS homemade onion powder 1-1/2 tsp ground mustard 1/2 tsp kosher salt 1/2 tsp freshly ground black pepper Whisk ingredients well and pour into a large resealable bag. DEER STEW RECIPE RECIPE - (4.6/5)

- 1. I am reiterating this point because it is key to the taste of the Deer Meat. Remove all the fat and silver skin from the Deer Meat. Then cut into 1 inch cubes. Rinse the Deer Meat in cold water, then drain. 2. Place the Deer Meat in a re-sealable plastic bag and add 2 Cups of Red Wine and freshly ground Black Pepper. Place the bag in a baking dish or pan, just in case it leaks, and then place the pan in the refrigerator over night to marinate. 3. Saute the Onion, Celery, Garlic, and Carrots in the Olive Oil in a large Dutch Oven on the stove top over medium heat, until tender. 4. Drain the Deer Meat from the marinade and discard the marinade. Add the Deer Meat and the Montreal Steak Seasoning to the dutch oven and brown slightly. 5. Next add the Broth, Tomatoes with juice, Wine, Basil, Bay Leaves, A-1 and Pepper to the dutch oven. Simmer on low with the lid on for 30 minutes. 6. While the Stew is simmering, cook the Wild Rice in a separate pot on the stove and set aside. Do the same with your Potatoes in a separate pot. I cook them both separately and add them later because I don't like the Stew to taste too starchy nor do I want the Potatoes or Rice to get mushy. Just a personal preference of mine . You can do this step ahead of time as well or purchase pre-cooked Wild Rice. 7. After 30 minutes, remove the 2 Bay leaves from the Stew. Stir in the Tomato Paste and turn the heat on high and bring the Stew to a boil. Boil for 2 minutes then reduce heat to low. 8. Add in the Rice and Potatoes and simmer another 20-30 minutes. 9. Remove the lid and let the Stew stand for 5 minutes, then stir and you are ready to serve! ~Enjoy this with a lite salad and some rustic bread or rolls and your family will be warm and happy all day!
DEER MARINADE
This is my go to marinade for back strap meat. It is a simple marinade that you adjust to your (and your family's taste), hence no exact measurements. What is great about it too, you can cook the marinade in a pan until the onions are cooked to have extra drizzle of sauce.

- Pour enough soy sauce in a bowl to lightly cover the meat. For example, for 8oz or meat, use about 3 tablespoons
- Add sriracha sauce and maple syrup to suit your taste. If unsure, keep adding small amounts of each at a time, and taste until you are satisfied. For me, I add a squirt of sriracha and about a half tablespoon of maple syrup for 8oz of meat.
- Mix well and pour marinade, deer meat and onions ziplock bag.
- Move marinade around in the bag until it coats the meat and onions. Close the bag and try to squeeze out the air. Place in the refrigerator and marinade for about 8 hours.
- When you are ready, cook the deer meat on the grill or pan. If you want you can also cook the marinade seperately as a little drizzle sauce, but be careful because it may burn b/c of the maple syrup, depending on how much of it was added.
MARINATED VENISON LOIN STEAKS WITH ONIONS AND SWEET PEPPERS
Onions and peppers are a classic accompaniment to grilled steaks, their pungency and sweetness acting as a perfect foil for the richness of the meat. Trouble is, the vegetables often are sauteed in copious amounts of butter or oil. When you pair them with steak, even relatively lean venison, any hopes of a healthy meal go out the window. I address this by cooking the roasted peppers and onions lightly in a small amount of oil in a saute pan set directly on the grill. Venison loin steak is a treat worth having, particularly if you serve it with these simply prepared onions and peppers. If you prefer, serve beef tenderloin steaks instead.

- In a small, heavy saucepan, combine all the marinade ingredients and bring to a simmer over medium heat. Cook for about 10 minutes, stirring occasionally. Remove from the heat. Set aside and let cool to room temperature.
- Lay each steak flat on the counter and tie each one horizontally so that the meat forms a tight, round package. You will need 6 pieces of kitchen twine, each measuring about 18 inches long.
- Spread half the marinade over the bottom of a nonreactive casserole or deep baking pan just large enough to hold all 6 steaks snugly but without crowding. Arrange the steaks in the pan and coat with the remaining marinade. Cover and refrigerate for at least 3 hours or up to 5 hours.
- Remove the steaks from the marinade and place them on a double thickness of paper towels to dry.
- Light a fire in a charcoal grill or preheat a gas grill to medium.
- Set the peppers over the hottest part of the grill and cook until they begin to char. Turn with tongs and continue grilling until the peppers are charred on all sides. Stand by the grill during this time, the peppers cook quickly. Using tongs to turn them prevents them from splitting open. Transfer immediately to a container just large enough to hold them. Cover tightly with plastic wrap and let the peppers cool to the touch. Rub the charred skin off the peppers. Remove the seeds and ribs from the peppers. Cut the peppers into strips.
- About 15 minutes before grilling, remove the steaks from the refrigerator and let sit at room temperature. Season the steaks with salt and pepper and brush with half the oil. Grill for 7 minutes on 1 side. Turn and grill for 7 minutes longer on the other side. Turn 1 more time and grill for about 2 minutes longer for rare steak. Grill for 1 to 2 minutes longer for medium-rare. Take care when turning the steaks to that the grill marks on the meat are perpendicular to the grate.
- Transfer the steaks to a warmer platter and remove the twine.
- Place a medium saute pan or skillet on the hottest part of the grill. Put the remaining 1 1/2 tablespoons oil and the sliced onions in the pan and cook, stirring, for about 5 minutes, or until the onions are lightly browned. Add the pepper strips and cook for about 2 minutes, or until heated through.
- Serve the steaks on warmed large plates with the grill marks showing. Carefully spoon the pepper and onions over half of each steak so that the grill marks are clearly visible.
- Put the cloves in a dry cast iron skillet and cook over low heat for 20 to 30 minutes, or until softened. Turn frequently so that the cloves soften but do not brown. Slide the cloves from the skillet onto a plate to cool to the touch. Squeeze the softened garlic pulp from the individual cloves.

During hunting season we dive into cooking with venison, and people don't always realize that venison can be easily substituted for beef in many common recipes. This is my flavorful twist on stuffed peppers utilizing lean ground venison. Easy to prepare and even easier to enjoy.

- Heat butter in a skillet over medium heat. Add onion and cook until softened, 3 to 5 minutes.
- Combine venison, 1/2 the Cheddar cheese, stuffing mix, garlic powder, black pepper, and salt in a bowl. Mix until well blended. Add enough cream to create a thick, doughy texture. Add cooked onions and mix to blend.
- Preheat the oven to 350 degrees F (175 degrees C). Grease a glass baking dish.
- Arrange bell pepper halves in the prepared baking dish, cut-sides up. Form meat mixture into 8 meatballs using your hands. Stuff meatballs into bell pepper halves in the baking dish.
- Bake in the preheated oven for 60 minutes. Top with remaining Cheddar cheese and continue baking until melted and starting to brown, about 15 minutes more.
