This is the only steak my family will eat. They do not even like NY strip any more. We have our meat processor cut our venison steaks to about 1 inch thick, then I marinate and grill to medium rare. Better than beef and better for you too! Our traditional family Christmas Eve dinner menu is always venison steak and shrimp scampi!

3 tablespoons canola oil
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 -2 teaspoon minced garlic
1/2 teaspoon ground pepper
1 (1 1/2 lb) package venison steak

Steps:

  • Mix all marinade ingredients together in a small measuring cup.
  • Place venison steaks in a large zip lock bag.
  • Pour marinade over steaks and seal bag.
  • Place bag in a flat casserole dish so that the steaks are in a single layer.
  • Refrigerate and marinate at least 4 hours, turning every half hour to marinate each side.
  • Drain marinade and grill steaks to desired doneness.
  • I double or triple this recipe for each addition package of steak. Any wild game steak can be used in this recipe.

I threw this together one afternoon, as we needed to use up the venison we had in our freezer. We don't like the 'gamey' taste of some meats, and this marinade did the trick! I find it best to have the meat marinate overnight so it really takes in the flavors.

¼ cup Worcestershire sauce
2 tablespoons soy sauce
½ lime, juiced
1 tablespoon dried minced onion
1 teaspoon red pepper flakes
1 teaspoon dry mustard
½ teaspoon Kosher salt
¼ teaspoon thyme
¼ teaspoon ground black pepper
¼ teaspoon dried, minced garlic
3 dashes hot pepper sauce (such as Tabasco®), or to taste
2 (4 ounce) venison steaks

Steps:

  • Whisk Worcestershire sauce, soy sauce, lime juice, onion, red pepper flakes, dry mustard, salt, thyme, black pepper, garlic, and hot pepper sauce together in a bowl; pour into a resealable plastic bag. Add venison steaks, coat with the marinade, squeeze to remove excess air, and seal the bag. Marinate in the refrigerator at least 1 hour.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove venison from the marinade and shake off excess. Discard remaining marinade.
  • Cook the steaks until they are firm, hot in the center, and just turning from pink to grey, about 5 minutes per side. An instant-read thermometer inserted into the center should read 150 degrees F (65 degrees C).

1 (12 fluid ounce) bottle amber beer (such as Honey Brown Lager®)
¼ cup soy sauce
2 tablespoons Dijon mustard
1 tablespoon Worcestershire sauce
1 tablespoon ground black pepper

1 dash hot pepper sauce, or to taste
4 (3/4 pound) venison steaks

Steps:

  • Whisk together beer, soy sauce, mustard, Worcestershire sauce, pepper, salt, and hot sauce in a bowl and pour into a resealable plastic bag. Add venison steaks, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 2 days.
  • Preheat an outdoor grill for high heat, and lightly oil the grate. Remove steaks from marinade and shake off excess. Discard remaining marinade.

1/4 cup green onion, chopped
4 venison chops

  • VENISON MARINADE RECIPE #1: Mix marinade ingredients together in a large resealable bag. Add venison and let sit in the marinade for at least 4 hours, overnight is best. This deer steak marinade is delicious for grilling or frying on the stovetop. I'm also sharing how to grill deer steaks, one of our favorites on how to cook deer steak.

2 1/2 inch-thick deer steaks
1 cup soy sauce
3/4 cup worcestershire sauce (We use Lea & Perrins)
1/3 cup brown sugar
1 teaspoon garlic powder
1 teaspoon onion powder
5 dashes hot sauce (or per taste)
salt and pepper to taste (Remember soy sauce has a LOT of salt already)
2 Tablespoons melted butter

Steps:

  • In a bowl, mix together soy sauce, Worcheshire sauce, brown sugar, garlic powder, onion powder, hot sauce, and salt and pepper.
  • Place steaks in gallon size ziptop bag and pour marinade over steaks, pushing out air, and sealing the bag.
  • Let marinate in the refrigerator for at least one hour, preferably overnight, moving the bag around often to make sure all steaks sit in marinade at some point.
  • When ready to cook, remove steaks from the refrigerator and bring to room temperature, or as close as possible. (Do not microwave.)
  • Preheat grill to high heat and place steaks over the hot part of the grill, and grill on each side for 3-4 minutes.
  • Pull steaks off of the grill, coat with melted butter and let rest for 3-4 minutes.
  • Steaks will be a "medium" steak at this cook time. If you prefer steaks that are well done, cook on the grill an additional minute until steak reaches desired "doneness".

Steps:

  • Mix all the ingredients in a bowl then pour into a sealable plastic bag.

MARINATED VENISON BACKSTRAP

Tender, juicy, flavorful venison backstrap that is marinated then pan seared or grilled until nicely browned on the outside and lightly pink on the inside. Super easy to make, melt in your mouth venison without the gamey taste!

1 pound venison backstrap
1/2 tablespoon olive oil
1/4 cup olive oil
1/4 cup soy sauce
2 tablespoons lemon juice
2 tablespoon balsamic vinegar ((or apple cider vinegar))
1 tablespoon Worcestershire
2 garlic cloves, minced
1/2 teaspoon black pepper

Steps:

  • Mix together the marinade ingredients in a shallow dish or a ziploc bag. Add the backstrap and place in the refrigerator. Marinate for at least 4 hours or up to 24 hours, flipping halfway through.
  • 30 minutes before you're ready to cook, remove the venison from the marinade, rinse off and pat dry. Set on a clean plate and allow to come to room temperature.
  • Preheat the oven to 375 degrees F.
  • Heat an oven-safe cast iron skillet or staineless steel skillet with olive oil over medium-high heat. Once hot, add the backstrap and sear on all sides until a nice brown crust forms, including the ends by using tongs to stand the backstrap in the pan.
  • If using an oven-safe skillet, transfer the skillet with the backstrap to the preheated oven. If your skillet isn't oven-safe, transfer the backstrap to an oven-safe dish with a little olive oil. Bake for 12-15 minutes, or until a meat thermometer reads 130-135 degrees F. for medium-rare. Keep in mind that the internal temperature will continue to rise once removed from the heat. Transfer the backstrap to a plate and loosely tent with tinfoil for 5-10 minutes before slicing. While resting, the temperature will rise another 5-10 degrees bringing it closer to medium doneness.
  • Preheat the grill to medium-high heat.
  • Place the backstrap on the hot grill and cook for 6-8 minutes, then flip and continue to cook another 6-8 minutes.
  • The backstrap is done when a meat thermometer reads 130-135 degrees F. for medium-rare. Keep in mind that the internal temperature will continue to rise once removed from the heat. Transfer the backstrap to a plate and loosely tent with tinfoil for 5-10 minutes before slicing. While resting, the temperature will rise another 5-10 degrees bringing it closer to medium doneness.
