You cook this one on the stovetop, resulting in a creamy, fluffy meringue that is more stable than the standard method.

- In a small saucepan, combine sugar, corn syrup, water, cream of tartar, and salt. Cook over medium heat, stirring constantly, until mixture comes to a boil and sugar has dissolved. Remove from heat.
- In a medium mixing bowl, beat egg whites until foamy. With mixer on medium speed, slowly pour the hot syrup mixture over the egg whites. Turn mixer to high speed and beat until stiff peaks form. Spread over top of pie, covering filling completely. May brown meringue in oven if you desire.

Steps:
- Combine cocoa& chocolate in food processor& pulse until ground into a fine powder.
- Add icing sugar& corn starch; pulse again& set aside.
- Beat egg whites in a large bowl until frothy; gradually incorporate granulated sugar.
- Dissolve coffee in vanilla& add to egg white mixture; beat until mixture is stiff& glossy.
- Fold in chocolate/cocoa until evenly incorporated but not over mixed.
- Spoon into piping bag fitted with ½ inch star tip& pipe kisses about 1 inch in diameter onto 2 parchment lined baking sheets, about 1 ½ inches apart.
- Bake in preheated 325F oven for 14 to 18 minutes or until cookies are almost firm to the touch.
- Use the top& bottom thirds of the oven switching the sheets halfway through the cooking time.
- Let cool on racks for a couple of minutes; slide off the parchment onto a flat surface& allow to cool completely.

Steps:
- Preheat oven at 200°C.
- Beat 3 egg whites at high speed until fluffy enough that you can flip upside down without it falling.
- While the egg whites are beating put the sugar substitute into saucepan and add water just enough so it makes a thick paste.
- Boil at medium heat until bubbling and has formed a caramel texture.
- Add the caramel while the egg whites are still beating.
- Keep beating until fluffy.
- On sheets of waxed paper place small drops in any shape you like.
- Cook for 1 hour or until the top coat is a little stiff but careful not to leave it on high heat because it can easily burn.
- Cover and let cool for about 30 minutes, then enjoy!
- **If you want to multiply the recipe just calculate 4 tablespoons of sugar substitute for every egg white you add**.
