DELICIOUS HEALTHY TRUFFLES
These make a great snack or dessert. I keep them in a bowl in the fridge, covered, for about three days, and my family munches one or two when they want a bit of something instead of having a piece of chocolate or a cookie. I adapted the recipe from George Mateljan's World's Healthiest Foods website.

Steps:
- Chop dates and prunes into small pieces, then squish together with a fork (use a sturdy, large bowl).
- Add peanut butter and maple syrup and mix together.
- Add cocoa and mix thoroughly.
- Roll mixture into bite-size pieces and roll in coconut to cover.
- Refrigerate and eat!

HEALTHY PRUNE TRUFFLES
Sweet, juicy prunes become delicious bon-bons when dipped in chocolate. Just three make a satisfying dessert that's as tasty as it is good for you. You can eat them as soon as the chocolate sets, or keep them for a few hours at room temperature or in the fridge; they're equally tasty chilled.

- Stuff a whole almond into the space where each prune pit was. Fold and press the prunes around the almonds (it's fine if the almonds peek through a bit). Put the prunes on a baking sheet lined with waxed paper and refrigerate 30 minutes.
- Put the raspberries into a resealable plastic bag and crush into a fine powder. Place the powder in a small shallow bowl.
- Put the chocolate in a small microwave-safe bowl. Microwave at 70 percent power for 1 minute. Remove from the microwave; the chocolate will still look solid but will be softened. Stir until smooth.
- Dip one end of a prune in chocolate, let any excess drip back in the bowl, and then dip the chocolate end into the crushed raspberries to coat. Put the prune back on the baking sheet, almond-side down, and repeat with the remaining prunes. Let the prunes stand until the chocolate hardens enough to come away cleanly from the paper, about 15 minutes.

HEALTHY CHOCOLATE TRUFFLES
I may be biased, but I think these are the best easy homemade truffles! They're really decadent with a deep, rich, dark chocolate flavor (similar to 75% dark chocolate) and soft melt-in-your-mouth texture. They're perfect for Valentine's Day - or any ol' day you're craving chocolate! Store any leftover truffles in an airtight container in the refrigerator. They'll keep for at least one week, maybe more - if they last that long!

- Add the cocoa powder to a small bowl. Make a well in the center. Pour in the milk and maple syrup. Stir with a fork until all of the cocoa powder is fully incorporated. (It takes some effort and patience. See Notes!) Chill the mixture for 30 minutes.
- Line a baking sheet with wax paper or parchment paper.
- Roll the chilled chocolate mixture into 16 balls. (If the mixture sticks to your hands, wipe them with a very lightly moistened paper towel in between rolling each one.) After rolling each one, place onto the prepared baking sheet.
- Coat the truffles, if desired (see Notes!), before transferring to an airtight container. Refrigerate until ready to serve.
ALMOND JOY TRUFFLES
Truffles may just be the most perfect dessert on the planet. They're perfectly sized, super sweet, and they can actually be really healthy!

- Add oats, dates, banana, almonds, and coconut flakes to food processor and blend until a sticky and mold-able dough forms. If dough is too dry or crumbly, add more banana.
- Roll dough into balls with an almond on the inside, and refrigerate for 1-2 hours.
- Melt vegan chocolate chips in the microwave or in a double-boiler. Roll balls in chocolate using two forks and top with coconut flakes and almonds. Refrigerate until chocolate hardens. #Spoontip: For chocolate coating that won't melt on your fingers, temper the chocolate by heating it to 125°F in a double boiler, then cooling to 85°F by adding more chocolate chips and stirring.
5-MINUTE PROTEIN TRUFFLES

- 1. Mix the nut or seed butter, honey, and salt in a medium bowl until blended. Add the protein powder, stirring until completely combined (mixture will be firm).
- 2. Protein powders vary in terms of their dryness. Hence if the mixture seems too wet, add a bit more protein powder, or some ground oats or flaxseed meal, until the mixture comes together as a dough. If the mixture seems too dry, add some milk (nondairy or dairy) or water, one tablespoon at a time, until the mixture comes together as a dough.
- 3. Scoop about 1 1/2 tablespoons of the mixture into your hands and shape into 1-inch balls.
- 4. If desired, place one or more of the suggested coatings in small shallow dishes. Roll each ball in the coating, gently pressing to adhere. Place the balls in an airtight container and store in the refrigerator.
