This easy lemon vinaigrette recipe is a great one to have in your back pocket. It's delicious and versatile - perfect for tossing with salads, roasted vegetables, and more!

1/4 cup fresh lemon juice
1 small garlic clove (grated)
1 teaspoon Dijon mustard
1/4 teaspoon sea salt (more to taste)
Freshly ground black pepper
1/2 teaspoon honey or maple syrup (optional)
1/4 to 1/3 cup extra-virgin olive oil
1/2 teaspoon fresh or dried thyme (optional)

Steps:

  • In a small bowl, whisk together the lemon juice, garlic, mustard, salt, pepper, and honey, if using.
  • Drizzle in the olive oil while whisking and continue to whisk until the dressing is emulsified. Alternatively, combine everything in a jar with a tight-fitting lid and shake to combine.
  • If your dressing is too tangy, add more olive oil, to taste.
  • Add the thyme, if desired, and season to taste. Store in the fridge for up to 1 week. The olive oil will solidify a bit in the fridge. To soften, let the dressing sit at room temp for a few minutes and stir before using.

2 tablespoons sour cream
salt & freshly ground black pepper
Tabasco sauce

Steps:

  • Whisk everything except sour cream together in a small bowl until well-mixed.
  • Add sour cream& whisk again.
  • Try using lime juice.
  • Lime works well with a lot of Latin American food, since lemons are hard to come by in Mexico, Central& South America.
  • Also, you may substitute another hot sauce for the Tabasco.
  • There are actually a few other Tabasco sauces that may work well.
  • There is a Chipotle Tabasco sauce, and another that comes in a green bottle, which is quite good as well.
  • Experiment with these.
  • Chipotle Tabasco with a Lime Vinaigrette would be expecially tasty, in my opinion.

1 tablespoon red wine vinegar
1 tablespoon apple cider vinegar
2 dashes dry mustard
1 teaspoon salt
1 dash italian seasoning
1/2 teaspoon ground black pepper
8 tablespoons vegetable oil
2 tablespoons red onions

Steps:

  • Blend all ingredients except the oil and onions in Blender/Food Processor.
  • Next slowly add the oil, blending it all together thoroughly.
  • Then add half the onions and again blend.
  • Finally the last of the onions are chopped finely and whisked into the mixture.
  • Let stand 2-3 hours - Do Not Refrigerate.

2 large (2- by 1/2-inch) strips lemon peel (from 1/2 medium lemon)
10 sprigs lemon thyme, left whole
1 stalk lemongrass, tough outer layers removed and bottom 4 inches roughly chopped
1/4 cup freshly squeezed lemon juice (from 1 1/2 medium lemons)
1/2 teaspoon Dijon mustard
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1/2 cup extra-virgin olive oil

Steps:

  • In medium heavy saucepan over very low heat, combine oil, lemon peel, lemon thyme, and lemongrass. Cook, uncovered, until aromatic, about 1 hour. Do not let oil boil. Remove from heat and cool to room temperature. Strain through fine-mesh sieve into medium heatproof container and refrigerate until cool, about 1 hour. (Oil can be refrigerated, in airtight container, up to 5 days).
  • In medium bowl, whisk together lemon juice, mustard, salt, and pepper. Slowly whisk in 1/4 cup lemon oil, then olive oil. (Vinaigrette can be made up to 3 hours ahead and chilled, covered. Bring to room temperature and stir before serving.)
