This dish depends on how much of each ingredient you put in it. It just depends on how much you wish to make. This dish takes a while to prepare and to cook but it is worth it. The spices are always according to how hot or spicy you like your food. It tastes better on the second day. If you want to make more, increase the ingredients. If you want less, decrease the ingredients. I learned this on my own and my husband, who is Mexican, loves it. It will please the most avid Mexican food lover.

2 pounds beef tripe
2 onions, chopped
4 (15 ounce) cans white hominy
¼ teaspoon chili powder
salt and pepper to taste

Steps:

  • In a 16 quart pot combine the tripe and the onions. Add water until pot is about 3/4 full. Cover and cook on low heat for about 2 hours, or until the tripe is tender. Add the hominy, chili powder, and salt and pepper to taste. Cover and cook for another 45 minutes to one hour to incorporate the flavors. Serve with fresh onions, corn tortillas and lemon if desired.

2 lbs cooked pork chops or 2 pork steak, cooked and chopped
1/4 cup oil
1 large onion, diced
4 cups chicken bouillon
2 cups hominy
1 garlic clove, smashed
1 teaspoon oregano (for garnish)
1/4 cup chopped green onion (for garnish)
salt and pepper

Steps:

  • Brown onions about 5 minutes.
  • Add meat and garlic.
  • Add rest of ingredients and simmer about an hour.

Menudo recipe is a classic favorite of many Filipinos. Pork menudo Recipe has always been a peasant food and comes in many various versions

Pork: 500 grams
Lemon: 0,5
Soy Sauce: 150 ml
Water: 0,5 liter
Cooking Oil: 4 tbsp
Garlic: 4 Cloves
Potatoes: 2 Medium sized
Carrot: 2 Medium sized
Salt: To taste
Black Pepper: To taste
Red Onion: 1 Piece
Red Bell Pepper: 1 Piece
Peas: 125 grams
Bay Leaves: 3 Pieces
Sugar: 1 tbsp
Pork Liver: 2 cans
Tomato Sauce: 250 ml
Hot Dog: 5 pieces

Steps:

  • Marinade the pork cubes in the Soy sauce and Lemon for about an hour or longer.
  • Meanwhile prepare the ingredients for the menudo recipe. Cut the potatoes, Carrots, Onions and Bell pepper and wash them well.
  • Put oil in a pan and sauté the garlic and the Onion.
  • Add the marinaded pork and cook for about 5 minutes until the pork is not pink anymore. (Keep stirring occasionally)
  • Next add the tomato sauce, water and Bay leaves. Let the whole mixture simmer for approximately 35 minutes and add water when necessary.
  • Add the Pork liver and keep stirring the mixture for about 1 minute.
  • Continue by adding the Potatoes, Carrots, Bell pepper and Hot Dog and let the mixture simmer until potatoes and carrots are cooked. (15 to 20 minutes)
  • Finally add the Peas and sugar to the menudo recipe and add salt/pepper to taste. Stir the mixture well until it reached the taste you want.

1/3 cup boiled garbanzo beans
3 medium tomatoes
3 cloves garlic, pounded
1 medium onion, sliced
1/2 cup water (in which pork was cooked)
1/2 tablespoon pimenton
shortening
salt

Steps:

  • Cook pork in water to cover until tender.
  • Dice.
  • Saute garlic,onion and tomatoes in shortening.
  • Add pork and liver and continue sauteing for 5 minutes.
  • Add water and salt,and pimenton (to color).
  • Add potatoes and cooked garbanzos.
  • Cook until potatoes are done.
