MEXICAN BAKED FISH
Make this Mexican baked fish as hot or mild as you like. Serve with rice, black beans, warm tortillas and margaritas for a festive meal!

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Lightly grease one 8x12 inch baking dish.
- Rinse fish fillets under cold water, and pat dry with paper towels. Lay fillets side by side in the prepared baking dish. Pour the salsa over the top, and sprinkle evenly with the shredded cheese. Top with the crushed corn chips.
- Bake, uncovered, in the preheated oven for 15 minutes, or until fish is opaque and flakes with a fork. Serve topped with sliced avocado and sour cream.

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- In a small saucepan, melt butter over medium low heat. Whisk in flour and salt to make a paste. Gradually whisk in milk. Stirring constantly, cook until sauce is thick enough to coat the back of a spoon.
- Select a pan large enough to accommodate all the fillets in one layer. Coat with cooking spray. Arrange fish in pan, and cover with shrimp.. Pour white sauce over shrimp. Sprinkle with grated cheese.
- Bake, uncovered, for 20 to 25 minutes.

The amounts are only a guideline you may adjust to taste --- use meaty fish fillets of choice such as tilapia, basa, cod etc.

Steps:
- Set oven to 400 degrees F (bottom oven rack).
- Grease a baking sheet.
- Rinse the fillets under cold water then pat completely dry using paper towels.
- Place the fillets onto the baking sheet.
- Lightly brush both sides of each fillets very lightly with melted butter or mayonnaise, then sprinkle lightly with black pepper to taste (can sprinkle with seasoned salt also if desired).
- Spoon/drizzle about 1/4 to 1/3 cup picante sauce over each fillet (can use more).
- Sprinkle about 1/4 cup shredded cheese over the salsa, then sprinkle crushed corn chips over the top.
- Bake uncovered for about 12-15 minutes or until the fish flakes (baking time will slightly vary depending on the thickness of the fillets).
- Serve topped with sour cream and green onions.
- Delicious!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Place cod and potatoes into the bottom of a baking dish (such as Pyrex®).
- Mix water, lemon juice, oil, dill, parsley, garlic, Dijon mustard, cumin, salt, and pepper together in a bowl and add to the fish and potatoes. Cover the dish with aluminum foil.
- Bake in the preheated oven until potatoes are tender, about 35 minutes. Remove foil and continue to bake for 10 minutes more.
