Delicious Banana Pudding Cheesecake with Chessmen Cookies image

Follow this easy recipe to make a delicious banana pudding cheesceake with Chessman cookies for crust! A perfect combinatin of two of your favorite desserts!

20 Chessman cookies, crushed
2 tablespoon unsalted butter, melted
1 tablespoon granulated sugar
16 oz. cream cheese, room temperature
3/4 cup granulated sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
2 large eggs
1/4 cup sour cream
1 ripe banana, mashed
12 Chessman cookies
1 banana
1 cup whipped cream

Steps:

  • Preheat the oven to 350°F.
  • Place cookies into a food processor and pulse until crumbs.
  • In a medium bowl, mix together the cookie crumbs, melted butter, and 1 tablespoon sugar until combined.
  • Press the cookie mixture into the bottom of a 9" springform pan.
  • Bake for 8 minutes then remove and set aside. Leave the oven at temperature.
  • In a large bowl, beat cream cheese until smooth.
  • Add in the sugar, salt, and vanilla extract and beat until just combined.
  • To the mixture, add eggs one at a time until just combined.
  • Fold in the sour cream and mashed bananas until no streaks remain.
  • Pour the cheesecake batter into the prepared baked crust, and bake for 45-50 minutes until the center is set.
  • Cool to room temperature for no longer than 1 hour then refrigerate for at least 4 hours.
  • When ready to serve, top with whipped cream and additional cookies.

I discovered this from the remnants of banana french toast -- and it was so delightful that I just made this the next time! Easy and quick and tastey with honey ontop!

1 large egg
1 medium banana, preferably ripe
honey, to drizzle

Steps:

  • Spray a small frying pan with nonstick spray (or use a dab of butter/ oil).
  • Turn the stove on medium low heat.
  • In a small bowl, mash the banana then add the egg. Whisk together until combined.
  • Add mixture to pan, stir slightly to cook. DO NOT OVERCOOK! A little undercooked is fine, since the heat will continue to cook the eggs for a while after you remove from pan.
  • Scoop mixture onto a plate, drizzle with honey, and bon appetite!
  • Serve immediately.
