DELUXE LEMON BARS
The best lemon bars I have ever had! I have to make these very often because my family and customers clamor for them, I can barely keep up with the demand!

Steps:
- Preheat oven to 350°F Mix crust ingredients in a food processor, or by hand. Press down evenly into a parchment lined 9 x 13" pan. Bake for 20 mn.
- Mix filling ingredients, pour over the hot crust. Bake an additional 20-25 mn. or until set.
- Cool completely, dust with powdered sugar.

Steps:
- Mix 1 cup flour with confectioners' sugar, add melted butter or margarine and press evenly into bottom of an 8-inch square pan. Bake for 20 minutes at 325°. Beat eggs, add granulated sugar and lemon juice, then 2 tablespoons flour, baking powder and salt. Beat together well and pour over crust. Bake about 30 minutes at 325°, then turn to 350° for last 5 minutes to give crust a delicate brown color.To serve, sprinkle with confectioners' sugar and cut in squares.

- Trim fat from meat. Cut meat into 1/2-inch pieces. In a 5 1/2- or 6-quart slow cooker combine meat, sweet peppers, and onions. Stir in chili beans in gravy, tomatoes, kidney beans, broth, chipotle peppers, garlic salt, cumin, and oregano.
- Cover and cook on low-heat setting for 10 to 12 hours or on high-heat setting for 5 to 6 hours; cool slightly. Spoon off fat.
- If desired, serve with Avocado-Tomato Salsa, Cilantro Sour Cream, and/or Hotter-than-Hades Cheese 'n' Nuts and/or lime slices.

2012-10-22 Great lemon bars, but the recipe is missing why the flour is divided. I compared it to another recipe here that is very similar, and figured out that 2 cups of the flour go into the crust and 1/4 cup goes into the filling. I used 1 tablespoon lemon zest plus some pure lemon extract in the filling. Made for the Billboard recipe tag game.
