SHRIMP IN GARLIC BUTTER (MICROWAVE)
This is quick, simple and delicious. I usually serve this with a bed of whole grain rice yum yum!

Steps:
- 1. 1. Place butter in custard cup. Microwave at high 30 to 45 seconds until melted. Stir in garlic powder and parsley flakes.
- 2. 2. Separate shrimp; place in 9 or 10 inch diameter dish. Pour butter mixture evenly over shrimp, cover tightly.
- 3. 3. Microwave 5 to 8 minutes until shrimp is opaque; stirring every 2 minutes. Let stand uncovered 1 to 1 1/2 minutes.

This easy creamy shrimp and grits recipe is rich and savory yet so simple to put together. The smokiness of the bacon and shrimp paired with the cheesiness of the corn grits really hits the right spot for a taste of the South!

Steps:
- Bring the water to a boil then add the grits and salt. Stir, cover and allow to simmer on low for 5 minutes.
- After the grits have simmered, add the grated cheddar and whisk together with 1/4 stick of butter. Cover and put aside.
- Cook the bacon in a skillet until crispy. Remove the bacon and put aside. Keep the grease from the bacon in the skillet.
- Add the shrimp and the Creole Seasoning and cook for 3 minutes on each side. Remove the shrimp promptly and put aside.
- Add the onions to the grease and cook on a medium heat until soft. Add the garlic and cook for a further 2 minutes.
- Add the flour and cook together for about 2 minutes, stirring constantly.
- Slowly start to add the chicken broth, stirring constantly with the whisk.
- Add the Parsley and Green onions
- Add the bacon and the shrimp back to the pan. Stir for a minute or so then add the cream.
- At this point you can do a taste test, some people prefer a spicier flavor and so more creole seasoning can be added to taste.
- Serve on top of a bed of cheesy grits and eat right away.

- 1. Heat 1 teaspoon of oil in a large nonstick skillet over medium-high heat add shrimp and cook through, about 3 minutes. Remove shrimp from the pan and set aside.
- 2. In the same pan heat the remaining teaspoon of oil and add the onions and peppers sautee' for 2 minutes or until slightly softened.
- 3. Add the curry paste, sugar, coconut milk and fish sauce, stirring until smooth. Bring the sauce to a boil and reduce to a simmer for 15-20 minutes.
- 4. Add the shrimp, basil and scallions cook 1 minute. Serve over jasmine rice with a lime wedge. Enjoy!

- To a large pot or dutch oven, add water, lemon wedges (one lemon), onion, garlic, old bay seasoning. Give the mixture a quick stir, bring to a boil over medium-high heat and add the potatoes. Season with salt and cook the potatoes for 10-12 minutes or until they’re almost done.
- Add the raw shrimp, and cook for 1-2 minutes or until it’s opaque. Be very careful not too overcook the shrimp. Drain the mixture immediately (reserving ½ cup of the broth for serving).
- Place all of the ingredients on a platter or sheet pan, drizzle with melted butter (and some of the reserved broth if desired), lemon juice, sprinkle with additional Old Bay seasoning, ground black pepper, and garnish with chopped parsley.
