DEVIL'S FOOD CAKE I
This is an old-fashioned, but easy-to-make devil's food cake recipe. Pound cake like texture and sinfully chocolately. This is from an old Philadelphia Bakery. Great when frosted with Chocolate Fudge Buttercream Frosting.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour one 9x13 inch pan or two 9 inch round pans.
- In a small pan melt the butter or margarine with the unsweetened chocolate. Set aside to cool slightly.
- Cream together the sugar and the eggs until light in color. Add the chocolate mixture to the eggs and temper mixture by beating well (so you don't end up with scrambled eggs!) Add 1 cup boiled water (still warm) and blend well. Mixture will be very liquid.
- Mix together the flour, baking soda, and salt. Add this mixture to the chocolate mixture and blend well.
- Mix together the vinegar and the milk and stir into the chocolate batter. Pour into prepared pan(s).
- Bake at 350 degrees F (175 degrees C) for 30 minutes or until a toothpick inserted in the center comes out clean. Cake divides well for filling with mousse, or ganache, or black forest fillings. The best clue to this cake being nearly done is that you will start to smell the aroma of chocolate filling your house!

DEVIL'S FOOD CAKE

- 1. For frosting: Place chocolate in a large heatproof bowl. Bring cream to a boil in a small saucepan and immediately pour over chocolate. Set aside until chocolate softens, about 4 minutes. Stir until smooth. Cover surface of frosting with plastic wrap and let sit until room temperature, about 2 hours.
- 2. For cake: Preheat oven to 350F. Lightly butter two 9-inch round cake pans; line bottoms with parchment paper.
- 3. Whisk flour, baking soda, baking powder, and salt together in a medium bowl. Set aside. Beat butter using a mixer set at medium speed until smooth. Increase speed to medium-high and gradually add sugar. Beat until light and smooth, about 4 minutes. Scrape down bowl sides as needed. Add cocoa and vanilla, and beat at medium speed for 1 minute. Reduce speed to medium-low and add eggs, one at a time and beating for 1 minute between each addition.
- 4. Bring 1 1/2 cups water and milk to a boil in a saucepan. Remove from heat.
- 5. Beat flour mixture into batter 1/4 cup at a time using mixer set at low speed. Carefully pour hot milk mixture into batter. Stir using a rubber spatula until smooth. Evenly divide batter among prepared pans. Lightly tap pans on counter to distribute batter.
- 6. Bake on middle rack in oven until cakes begin to pull away from pan sides and center springs back when touched lightly, about 30 to 35 minutes. Cool cakes, in pans, on a rack for 10 minutes. Release from pans and cook completely on rack.
- 7. Ice cake, spreading 1/3 cup frosting between layers and remainder over top and sides. Garnish with raspberries.

DEVIL'S FOOD CAKE LAYERS
You will need three separate batches of this batter to create the Haunted-House Cake. Do not attempt to make a single large batch.

- Preheat oven to 350 degrees. Butter an 11- by-2-inch round cake pan and a 9-by-2- inch round cake pan. Line bottoms with parchment rounds, then butter parchment. Dust pans with cocoa powder, and tap out excess.
- Mix cocoa powder and the boiling water in a bowl until smooth. Let cool. Sift together cake flour, baking soda, and salt into a large bowl. With an electric mixer on medium-high speed, beat butter and sugar until pale and fluffy, 3 to 4 minutes. Beat in vanilla. Add eggs, 1 at a time, beating well after each addition, and scraping sides of bowl as needed.
- Whisking constantly, pour milk into cocoa mixture in a slow, steady stream; whisk until smooth. With mixer on low speed, add flour mixture to butter mixture in three additions, alternating with cocoa-milk mixture, and starting and ending with flour mixture.
- Transfer 5 cups batter to the 11-inch pan and 3 cups batter to the 9-inch pan. Bake, rotating pans halfway through, until a cake tester inserted in centers comes out clean, 40 to 45 minutes. Transfer pans to wire racks and let cool completely. Invert cakes onto racks, then remove parchment and re-invert, top sides up. Use a serrated knife to trim top of each cake to make level.
DEVIL'S FOOD SHEET CAKE
I like this cake because it's so moist and rich. It's great for large gatherings because it's so easy to make.

- In a large saucepan, bring water to a boil. Remove from the heat. Stir in sugar and butter until butter is melted. Add eggs and vanilla; mix well. Combine flour, cocoa, baking soda and salt; add to butter mixture and mix thoroughly. , Pour into a greased 15x10x1-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. - Preheat oven to 350.
- Heat milk in small pan until bubbles begin to appear around edges. Remove from heat.
- Mix cocoa and white sugar together in a small bowl and slowly beat in warm milk. Let cool.
- Cream the butter with the brown sugar. Beat in the eggs, sour cream, and vanilla. Add cocoa mixture.
- Mix dry ingredients together and gently blend into butter mixture.
- Do not overheat.
- Turn into 2 well-greased and floured 9-inch layer cake pans, and bake 25 to 30 minutes, until cake shrinks slightly from sides of pans and springs back when touched gently in the center. Cool on a rack for a few minutes, then turn out onto rack.
- Wait until completely cool before frosting.
- Seven-minute Frosting.
- Combine egg whites, sugar, water, cream of tartar, and salt in top of double boiler. Set over simmering water and beat with an electric mixer for about 5 minutes, until soft peaks are formed. Remove from heat and stir in vanilla. Keep beating until frosting is stiff enough to spread. Use immediately. This looks like a lot, but use it all; it is enough to fill and frost the cake.

DECADENT DEVIL'S FOOD CAKE
This Devil's Food Cake recipe, from Mrs. Fields, is the ultimate in chocolate cakes. The extreme moistness of this fudgey chocolate cakes makes it a real winner. It works beautifully for frosting or decorating due to the fact that it is very sturdy. A family favorite!

- Cake:
- Preheat the oven to 350 degrees F. Line the bottoms of two 9-inch cake pans with circles of was paper and then grease the pans with cooking spray.
- In a medium bowl, pour the boiling water over the 6 oz. of semisweet chocolate. Set aside for a few minutes. Once the chocolate is thoroughly melted, add the cocoa and stir until smooth. Set aside to cool to room temperature.
- In a small bowl, whisk together the flour, baking soda, and salt. In a large bowl with an electric mixer, cream the butter and brown sugar. Add eggs one at a time beating well after each addition. Beat in the vanilla. Add the flour mixture and half of the chocolate mixture. Beat on low speed to combine, and then on high for 1 1/2 minutes. Add the remaining chocolate mixture and beat till combined.
- Pour the batter into the prepared cake pans and bake for 30-40 minutes or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool in the pans for 20 minutes before removing (or they will fall apart). Invert the cakes onto wire racks to cool completely before assembling and frosting.
- Frosting:
- In a large bowl with an electric mixer, cream the butter. In a medium bowl, whisk together the sugar and cocoa. Beat 1/3 of the sugar-cocoa mixture into the butter. Mix in the vanilla. Add the rest of the sugar-cocoa mixture alternately with the milk and beat until frosting is smooth. Assemble the cake.
