DEVILED EGGS
Steps:
- Place eggs in a large wide saucepan and cover with cold water. Bring to a boil for 12 minutes. Remove eggs and and cool in refrigerator. Remove shells from eggs and slice in half lengthwise. Separate egg yolks and place into a bowl. Place whites on a separate plate. Add mayo, mustard, relish and salt and pepper, to taste, to yolks and mash together with a fork until creamy and smooth. Using a large star tip and resealable plastic bag, pipe the yolk mixture back into each egg, enough to fill yolk holes completely. Dust tops with paprika. Refrigerate. Serve cold.

Steps:
- Place eggs in a medium saucepan; add cold water to cover by 1 inch. Bring to a rolling boil. Remove pan from heat; cover, and let stand 7 minutes. Drain, and run eggs under cold water to cool.
- Meanwhile, in a medium bowl, mix together mayonnaise, relish, mustard, and a large pinch of cayenne.
- Peel eggs, and halve lengthwise. Carefully remove yolks to bowl with mayonnaise mixture, leaving whites intact.
- Mash egg yolks with mayonnaise mixture until smooth; season with salt. Mound into egg whites. Sprinkle with paprika just before serving, if desired.
CREAMY DEVILED EGGS
These deviled eggs are nicely flavored with a tang of mustard and a spark of sweetness from pickle relish. We served them at the wedding reception of my daughter, Katherine Beth, and Patrick Althouse.

- Place the eggs in a pot and fill with cold water until the eggs are just covered. Bring the pot to a boil, then cover, remove from heat, and let sit for about 12 minutes.
- Transfer the eggs to a bowl of ice water for about 3 minutes, then peel them and cut them in half. Transfer the egg yolks to a bowl, and set the cooked egg whites aside.
- Mix the mayonnaise, mustard, relish, salt, and pepper with the yolks and transfer to a piping bag. (Alternatively, use a zip-top bag with a corner cut off.)

- Boil, steam or pressure cook your eggs. I made my eggs in my pressure cooker, this is my favorite way to make hard boiled eggs as they peel so easily. To make them add 1 cup of water to your pressure cooker, place your eggs in a steaming basket and cook on low pressure for 12 minutes. NPR (natural pressure release) for 6 minutes and then let out the remaining steam. Place in an ice water bath for 5 minutes before peeling.
- Slice your eggs in half lengthwise and remove the yolks carefully. Place yolks into small mixing bowl and add the remaining ingredients, except the paprika. Smash everything together and then mix until well blended.
- Place mixture into a piping bag or a sandwich baggie with a corner cut off and pipe into the egg whites. Garnish with the McCormick® paprika and enjoy!
