DEEP FRIED OYSTERS
This is a very simple recipe for fried oysters. You can use the same recipe for shrimp and scallops too.

Steps:
- Heat deep fryer to 375 degrees F (190 degrees C).
- Combine flour, salt and black pepper. Dredge oysters in flour mixture, dip in egg and roll in bread crumbs.
- Carefully slide oysters into hot oil. Cook five at a time until golden brown, about 2 minutes. Drain briefly on paper towels. Serve hot.

FRIED OYSTERS

- Heat oil in a deep fryer to 350 degrees F.
- Whisk together the buttermilk, garlic powder, paprika and hot sauce in a casserole dish. Whisk together the flour, cornmeal, salt and pepper together in a separate casserole dish.
- Add the oysters to the buttermilk and let soak. Then remove, letting the excess drip off, and dredge through the cornmeal mixture, tapping off the excess. Fry in the hot oil in batches, until golden and crisp, about 2 minutes. Remove to a paper towel-lined plate and sprinkle with salt and pepper. Serve hot with the Remoulade Sauce.
- Mix together the mayonnaise, mustard, paprika, vinegar, Worcestershire sauce and hot sauce in a small bowl until well combined. Season with salt and pepper. Serve immediately or cover with plastic wrap and refrigerate until serving.
FRIED OYSTERS WITH CORNMEAL BATTER
Steps:
- Gather the ingredients.
- Pat the drained oysters dry with paper towels or a clean kitchen towel.
- In a medium-sized bowl, beat the eggs.
- Add the oysters to the egg bowl and set aside for 10 minutes.
- In a medium bowl, combine the cornmeal, sugar, pepper, salt, and flour.
- Lift each oyster out of the egg mixture and allow the excess moisture to drip off before rolling them in the cornmeal mixture to evenly coat. Repeat the process with all oysters.
- Pour about 3 inches of vegetable oil in a heavy, deep saucepan. Place the pan over medium-high heat and bring it to a temperature of 370 F.
- Carefully add the oysters to the hot oil. Do not overcrowd the pan.
- Fry each batch of 6 to 8 oysters for about 2 to 4 minutes, or until they are golden brown.
- Use a metal slotted spoon to remove the oysters to paper towels to drain. Reserve.
- Gather the ingredients.
- In a bowl, combine the mayonnaise with the dill relish, capers, Dijon mustard, lemon juice, and black pepper. Mix well.
- If using, add the green onion to the sauce and stir it into the mixture, or reserve the onion to garnish the finished oysters. Stir to blend thoroughly.
- Serve the sauce alongside the fried oysters and enjoy.

- Crumble bread in mixing bowl.
- Add oysters, oyster juice, and eggs; mix well.
- Add grated lemon rind; beat well.
- Saute onions, celery, and bell pepper in butter until transparent.
- Add oyster mixture, Worcestershire, hot sauce, salt, and black pepper.
- Cook stirring constantly, until oysters curl.
- Place mixture in individual ramekins or casserole dish.
- Sprinkle cracker crumbs on top; dot with butter.
- Bake in 350 degrees about 30-40 minutes until bubbly and slightly browned.

LEMON-CAPER DEVILED EGGS WITH FRIED OYSTERS

- For the deviled eggs: Fill a large saucepan with water and bring to a boil over high heat. With a ladle, slowly lower the eggs into the water, one by one. Reduce the heat to a low boil and cook for 10 minutes. Drain. When cool enough to handle, peel the eggs.
- Slice each egg in half lengthwise. Remove the yolks and place them in a food processor. Arrange the whites, cut-side up, on a serving platter. To the food processor, add the mayo, mustard, capers, garlic, lemon zest, 1/4 teaspoon salt and 1/4 teaspoon pepper. Process until well blended and smooth, then transfer to a resealable plastic bag. With scissors, snip off a bottom corner from the bag. Using the bag like a pastry bag, pipe the egg yolk mixture into the egg whites.
- For the fried oysters: Fill a Dutch oven or deep, heavy saucepan with about 3 inches of oil and heat to 350 degrees F over medium-high heat.
- In a shallow dish, combine the cornmeal, flour, baking powder, paprika, salt and pepper. Pour the milk and any oyster liquor into another shallow dish. Dip the oysters in the milk, then dredge them in the cornmeal mixture, shaking off the excess. If you like a thicker breading, repeat the process, dipping again in the milk and the cornmeal mixture.
- Working in batches, lower the breaded oysters into the hot oil and fry, turning frequently, until golden brown, 1 1/2 to 2 minutes. Transfer to a paper-towel-lined plate to drain.
- To assemble, place a fried oyster on each deviled egg and dust with paprika. Serve immediately.

Steps:
- Rinse fresh oysters in the shell under cold running water.
- Remove oysters from the shell and place in a small container.
- Add enough evaporated milk to cover the oysters. Stir to coat.
- Place flour in a small mixing bowl.
- Add corn meal.
- Add salt. Stir to combine.
- Place oysters in flour and toss well to fully coat.
- Place medium saucepot over Medium heat on stove top.
- Fill pot just under half full with cooking oil. Heat oil to 350F degrees.
- Gently shake any excess flour from the oysters.
- Place a few oysters into the hot oil.
- Stir the oysters when they float to the top. Fry until light golden brown.
- Oysters are done when lightly golden colored. Usually takes just a minute or two.
- Remove oysters when done. Place on wire rack to drain prior to serving.
- Serve while hot.
- Enjoy!

- Rinse off the oysters under cool running water. - Melt 1 tablespoon plus 1 teaspoon butter in a small, stainless pan over medium-low heat. Add the shallots and cook them until translucent but without browning, about 3 minutes. Add the mustard powder and cook for an additional minute, then add the white wine and lemon juice, scraping any flavoring from the base of the pan. Reduce the liquid by half. Remove from heat and strain through a fine mesh sieve, pressing the shallots with the back of a spoon or spatula to squeeze out any additional liquid.
- Place the reduction back over medium heat and add the cream. Reduce by almost half, 2 to 3 minutes, stirring constantly, then remove from the heat. Whisk the Dijon mustard into the reduction, and add the remaining 2 teaspoons butter and salt. Taste and adjust the seasoning if needed. Strain the sauce once again and cool the sauce in an ice bath if you are not using it immediately. The sauce can be made up to 1 day ahead, covered and refrigerated.
- Before finishing the dish, heat the oven to 350 degrees. Shuck the oysters and place them on a bed of rock salt in an oven-proof dish. Be sure the oysters lay flat in the dish so you don't lose any of their liquor. Warm the sauce gently on the stove. (To lighten the consistency of the warm sauce, pulse the sauce with an immersion blender a few times or whisk vigorously before spooning over the oysters.)
- Spoon enough sauce over each oyster to fill the shell completely. Sprinkle each oyster with fresh bread crumbs and then drizzle each oyster with a little melted butter. Bake the oysters for 3 minutes, then finish them under the broiler to brown them. The bread crumbs should be golden brown and the sauce should be bubbling. Top each oyster with a very thin slice of scallion green and a thin slice of red jalapeno. Serve immediately.

- Preheat broiler. Reserve the oyster juice in a large mixing bowl. Chop the oysters, basically cutting each oyster into four pieces and reserve.

- Fill a large saucepan about half-way up with cold water. Stir in a few generous pinches of salt (the salt makes peeling the eggs easier). Gently put the eggs in a single layer in the saucepan and add enough additional cold water to cover by 1 inch. Bring water just to a boil over high heat. Remove the pan from the heat, cover and let stand for 13 minutes. Then rinse the eggs under cold water until cool enough to handle.
- Crack the egg shells and carefully peel under cool running water. Gently dry with paper towels. Slice the eggs in half lengthwise, removing yolks to a medium bowl, and placing the whites on a serving platter.
- Lightly mash the yolks with the tines of a fork. Add the pickles, mayonnaise, mustard, and hot sauce. Stir until evenly mixed. Season with salt and pepper to taste.
- Transfer the egg yolk mixture to a small ziploc bag. Snip off one corner of the bag and pipe some of the filling into the openings of the egg whites. Spoon about a 1/2 teaspoon of bacon jam on each egg half and top with crumbled bacon. Dust eggs with paprika and serve.
