THE DEVIL'S OWN DEVILED EGGS
A spicy twist on a traditional classic. Habanero and jalapeno peppers give it a nice slow burn that will delight your tastebuds!

Steps:
- Place the eggs into a saucepan in a single layer, and fill with water to cover the eggs by at least 1 inch. Bring the water to a boil over high heat. Cover, and remove from the heat; let the eggs stand in the hot water for 15 minutes. Pour out the hot water, then cool the eggs under cold running water in the sink. Peel.
- Cut the cooled eggs in half lengthwise. Remove the yolks, and place them into a mixing bowl along with the jalapeno, habanero, mayonnaise, and mustard; mash together until smooth. Transfer the yolk mixture to a pastry bag, and decoratively squeeze into the white halves. Sprinkle with paprika to garnish.

FRIED HAM DEVILED EGGS
Steps:
- Place the eggs in a large wide pot and cover with cold water by 1 inch. Bring to a boil, then reduce the heat to medium low and simmer 10 minutes. Drain and run under cold water until cool.
- Meanwhile, melt the butter in a large skillet over medium-high heat. Working in batches, add the ham and fry until browned on both sides, 3 to 4 minutes. Remove to a paper towel¿lined plate, then finely chop.
- Peel and halve the eggs. Carefully scoop out the yolks into a medium bowl and place the whites on a plate. Add the mayonnaise, relish and Sriracha to the bowl with the yolks; season with salt and pepper and mix and mash until smooth (or use a food processor to speed up this process). Stir in about three-quarters of the fried ham.
- Transfer the yolk mixture to a piping bag and pipe into the egg whites. Top with the roasted red peppers and the remaining fried ham. Garnish with microgreens.
FRIED DEVILED EGGS

- Add the eggs to a large saucepan filled with cold water. Bring to a boil. Remove from heat and let sit in the water for 14 minutes.
- Peel the eggs and slice lengthwise. Remove the yolks to a bowl. Add the mayonnaise, Dijon, lemon zest, chives, hot sauce and salt and pepper. Mash the yolks together with a wooden spoon. Taste and adjust seasonings, if needed. Fill the egg yolk mixture into the egg whites.
- Heat oil in a deep-fryer to 350 degrees F.
- In a medium bowl, add 1 cup of flour and season with salt and pepper. In another bowl, beat the eggs, in a third bowl, add 1 cup of panko.
- Dip the eggs into the flour, then the egg and finally into the panko. Gently put the eggs into the hot oil. Fry until golden brown. Remove to a paper towel lined sheet tray. Season with salt and pepper and garnish with parsley.
BANANA SCRAMBLED EGGS
I discovered this from the remnants of banana french toast -- and it was so delightful that I just made this the next time! Easy and quick and tastey with honey ontop!

- Spray a small frying pan with nonstick spray (or use a dab of butter/ oil).
- Turn the stove on medium low heat.
- In a small bowl, mash the banana then add the egg. Whisk together until combined.
- Add mixture to pan, stir slightly to cook. DO NOT OVERCOOK! A little undercooked is fine, since the heat will continue to cook the eggs for a while after you remove from pan.
- Scoop mixture onto a plate, drizzle with honey, and bon appetite!
- Serve immediately.

- Cut eggs in half lengthwise and put yolks in a small bowl. Add mayonnaise, mustard, chili powder, salt, and pepper. Mash with a fork until smooth. Set filling aside.
- Place flour in a small bowl. Beat egg and hot sauce together in a separate bowl. Place panko in a third bowl.
- Preheat an air fryer to 400 degrees F (200 degrees C) according to manufacturer's instructions.
- Rinse the egg whites and place on a clean work surface. Drop in the bowl of flour; toss until coated. Dip into the beaten egg and then in the panko.
- Place breaded egg whites in the air fryer basket. Spray tops with cooking spray. Cook for 3 minutes. Flip and spray tops with more cooking spray. Cook for 4 minutes more.
- Place the egg whites on a serving tray and spoon yolk mixture into the centers.

- Bring a large pot of water to a boil over high. Carefully lower 12 of the eggs into water using a slotted spoon or steamer basket. Cook 10 minutes. While eggs are boiling, fill a large bowl with cold water and ice. After eggs have cooked, immediately transfer to ice water bath, and let stand 15 minutes.

Place breadcrumbs in a fourth shallow dish. Dip each egg white half in water, letting water drip off. Dredge in flour, gently shaking off excess. Dip in beaten egg, letting excess drip off. Dredge in breadcrumbs, gently shaking off excess.
- Working in batches of 8 halves, fry coated egg whites in hot oil until golden brown, 1 to 2 minutes. Drain on paper towels. Sprinkle evenly with remaining 1 teaspoon salt.
