Devils Food Cupcakes Recipe

  1. boiling water
  2. cocoa powder
  3. semisweet chocolate
  4. instant espresso powder
  5. eggs
  6. sour cream
  7. vanilla extract
  8. all-purpose flour
  9. baking soda
  10. salt
  11. granulated sugar
  12. light brown sugar
  13. unsalted butter


  1. place oven rack in lower-middle position and heat oven to 350 degrees
  2. line 2 standard muffin tins with cupcake liners
  3. in small bowl whisk together boiling water , cocoa , chocolate , and espresso powder
  4. in medium bowl whisk eggs , sour cream , and vanilla together until well combined
  5. using electric mixer on low speed , combine flour , baking soda , salt , granulated sugar , and brown sugar in large bowl until blended
  6. incorporate butter by mixing it in on low speed , about 1 minute
  7. add egg mixture in 2 additions , then beat at medium speed , scraping down sides of bowl as needed , until combined , about 1 minute
  8. add chocolate mixture and beat at medium speed until incorporated , about 1 minute
  9. divide batter evenly among the prepared 24 cupcake liners
  10. bake until tester inserted in cupcake comes out with a few moist crumbs attached , about 20 minutes
  11. cool cupcakes in muffin tins for 10 minutes before removing and cooling completely on wire rack
  12. frost using recipe #414787 or recipe #414801 if desired
