Diabetic Bran Muffins Recipe

  1. whole wheat flour
  2. baking powder
  3. baking soda
  4. salt
  5. natural bran
  6. buttermilk
  7. cooking oil
  8. unsweetened applesauce
  9. egg
  10. splenda granular
  11. vanilla


  1. in a large bowl combine flour , baking powder , soda and salt
  2. stir well
  3. push up around sides of bowl making well in cetner
  4. in another bowl stir buttermilk with bran
  5. let stand 5 minutes
  6. add remining ingredients to bran mixture in order given
  7. beat with spoon until mixd
  8. pour into well in flour mixture and stir to moisten
  9. batter will be lumpy
  10. fill greased muffin cups 3 / 4 full
  11. bake at 375 for 20-25 minutes
  12. let stand 5 minutes
  13. remove from pan
