The name of the recipe may sound odd, but it is fantastic! My husband and I love to make this for breakfast on lazy weekends. Serve with syrup.

⅓ cup all-purpose flour
2 tablespoons vegetable oil
3 eggs, lightly beaten
cooking spray

Steps:

  • Combine cottage cheese, flour, oil, and eggs in a large bowl.
  • Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/3 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

I enjoy eating cottage cheese pancakes with Indian-inspired toppings, sometimes spiced with curry or ginger, and with chutney and a sour pickle on the side. Add fry bread and a bean salad for a full meal. Feel free to add any spice, fruit puree, seeds, dried fruit, bits of meat or cheese, beans, or condiments to the batter, between 1 tablespoon and 1/2 cup.

Steps:

1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda

Steps:

  • Measure eggs, cottage cheese, buttermilk, flour, sugar, salt, baking powder, and baking soda into a mixing bowl.
  • Beat until smooth.
  • Heat griddle; spray with non-stick spray or oil if needed.
  • Pour batter from ladle or alrge spoon.
  • Turn each pancake as soon as it's puffed adn full of bubbles.
  • Cook other side until golden brown.
  • Makes about 30 small pancakes.
