A sweet use for leftover French bread.

Steps:
- Preheat oven to 350°F.
- In a bowl, whisk together milk, eggs, Splenda Sweetener, cinnamon, and vanilla extract. Gently stir in bread cubes and raisins. Let sit for 10-15 minutes so bread absorbs liquid.
- Pour mixture into a 1 ½-quart ungreased baking dish.
- Bake for 40 minutes or until a wooden pick inserted in center comes out clean. Let stand 10 minutes before serving warm.

CINNAMON BREAD PUDDING FOR DIABETICS
This is another one of those recipes that I found in my recipe box. I have not tried it before but now with my life style change it is on my list to try. The picture is taken of the recipe page. It is not mine. If someone tries this before me, please let me know what you think.

Steps:
- 1. Preheat oven to 350 degrees.
- 2. Heat milk and margarine to simmering in medium saucepan; remove from heat and stir until margarine is melted. Cool 10 minutes.
- 3. Beat egg and egg whites in large bowl until foamy; mix in Splenda, spices and salt. Mix milk mixture into egg mixture; mix in bread.
- 4. Spoon mixture into ungreased 1 1/2 quart casserole dish. Place casserole in roasting pan on over rack; add 1 inch hot water. Bake, uncovered until pudding is set and sharp knife inserted halfway between center and edge comes out clean, 40 to 45 minutes.

- Heat oven to 375 degrees. Mix the sugar and cinnamon together. In a separate bowl whisk the milk, egg substitute, brown sugar, and vanilla. Arrange one half of the toasted bread in the bottom of a baking dish then sprinkle with half of the cinnamon & sugar mixture and half of the diced apples. Repeat with a second layer. Pour the milk mixture over top. Bake 40 - 50 minutes or until knife comes out clean. Serve warm, drizzling caramel topping over top of each serving.
