BRAMBLETT'S VEGETABLE STOCK



Bramblett's Vegetable Stock image

A perfect base for any number of recipes. Store some in the freezer, and you have an almost instant meal on your hands!

1 tablespoon olive oil
2 onions, cut into chunks
1 celeriac (celery root), chopped
1 cup potato peelings
1 cup chopped carrots
1 cup fresh mushrooms
1 cup butternut squash peelings and pulp
salt to taste
1 quart water

Steps:

  • Heat the oil in a large pot over medium-low heat. Place onions in pot and cook 20 minutes, stirring occasionally until very tender and golden brown.
  • Mix celery root, potato peels, carrots, mushrooms and squash into pot. Season with salt. Continue cooking 45 minutes or until vegetables are very tender and golden brown.
  • Pour water into pot. Bring to a boil. Reduce heat to low and simmer 30 minutes, stirring occasionally. Strain out the solids, taste for sufficient salt and voila! Your stock!

This is a good basic stock, and is perfect for vegetarians!

Number Of Ingredients 11

1 tablespoon olive oil
1 large onion
2 stalks celery, including some leaves
2 large carrots
1 bunch green onions, chopped
8 cloves garlic, minced
8 sprigs fresh parsley
6 sprigs fresh thyme
2 bay leaves
1 teaspoon salt
2 quarts water

Steps:

  • Chop scrubbed vegetables into 1-inch chunks. Remember, the greater the surface area, the more quickly vegetables will yield their flavor.
  • Heat oil in a soup pot. Add onion, celery, carrots, scallions, garlic, parsley, thyme, and bay leaves. Cook over high heat for 5 to 10 minutes, stirring frequently.
  • Add salt and water and bring to a boil. Lower heat and simmer, uncovered, for 30 minutes. Strain. Discard vegetables.
  • Other ingredients to consider: mushrooms, eggplant, asparagus (butt ends), corn cobs, fennel (stalks and trimmings), bell peppers, pea pods, chard (stems and leaves), celery root parings, marjoram (stems and leaves), basil, potato parings . . . Get the idea?

Number Of Ingredients 11

2 large onions, chopped (about 4 cups total)
2 large leeks, well washed and chopped (about 2½ cups total)
3 celery ribs, chopped
2 large carrots, chopped
1 parsnip, well washed and chopped
3/4-1 lb celery root, peeled and diced
1/2 cup chopped shallot
3 1/2 quarts bottled water
1 cup fresh parsley (stems and leaves)
2 bay leaves
2 tablespoons black peppercorns

Steps:

  • Saute the chopped onions in a skillet until they are all brown and almost black.
  • Although you may vary the vegetable ingredients to taste, I strongly recommend that you do not omit the browned onions or the parsnip.
  • In a crockpot, combine vegetables and water.
  • Bring to a simmer, skimming foam from surface.
  • Add parsley, bay leaves, and peppercorns.
  • Cook on low for about 3 hours and check it periodically, adding more water as necessary to keep ingredients covered.
  • Taste the stock and continue cooking, if desired – the longer it cooks, the stronger the flavour will be.
  • Strain stock through a fine sieve.
  • Stock keeps 3 days in the refrigerator or 1 month if frozen.

ROASTED VEGETABLE STOCK

This takes a while, but the end result is a lovely rich vegetable stock, ready to be the base for many soups, stews and sauces. Add or change the herbs according to your taste--add fennel if you like a hint of anise in your stock.

Number Of Ingredients 9

2 large garlic cloves, peeled (or more if you like)
1 large onion, peeled and quartered
3 carrots, peeled and cut into 1-inch chunks
3 leeks, white part, cut into 1-inch pieces
3 stalks celery, cut into 1-inch chunks
2 tablespoons olive oil
parsley
2 fresh bay leaves
6 -8 peppercorns

Steps:

  • Heat oven to 450°F.
  • Toss the vegetables with the olive oil, until gently coated.
  • Place the vegetables in a roasting pan or on a foil-lined baking sheet and roast for about half an hour, turning them occasionally (They should be nicely browned and very aromatic).
  • Place all the vegetables in a large pot, scraping all the good brown stuff from the roasting pan into the pot with the herbs and peppercorns.
  • Fill with water and place on the stovetop on medium high heat.
  • Bring to a boil, lower the temperature, and boil gently for 2-3 hours (watch the water level--if it boils down too much, add more water).
  • Strain, pressing down on solids to extract as much liquid as possible; discard the solids and place the remaining liquid in a sauce pan.
  • Simmer until reduced by three quarters; this could take about an hour.
  • You should end up with about one and a half to two quarts of stock.
