SEVEN-GRAIN BREAD
This bread loaf is full of robust wheat flavor with a touch of honey for sweetness and plenty of good-for-you grains.

- In a large mixing bowl stir together 3/4 cup of the all-purpose flour, the cereal, and yeast; set aside.
- In a medium saucepan combine the water, applesauce, honey, and salt; heat and stir just until warm (120 degrees F to 130 degrees F). Add applesauce mixture and egg to flour mixture. Beat with an electric mixer on low to medium speed for 30 seconds, scraping side of bowl constantly. Beat on high speed for 3 minutes. Using a wooden spoon, stir in the whole wheat flour, sunflower seeds, and as much of the remaining all-purpose flour as you can.
- Turn out dough onto a lightly floured surface. Knead in enough of the remaining all-purpose flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total). Shape dough into a ball. Place in a lightly greased bowl; turn once to grease surface of dough. Cover; let rise in a warm place until doubled in size (1 to 1 1/2 hours).
- Punch down dough. Turn out onto a lightly floured surface; cover and let rest for 10 minutes. Lightly grease an 8x4x2-inch loaf pan.
- Shape dough into loaf. Place in prepared pan. Cover and let rise in a warm place until nearly double (30 to 45 minutes).
- Bake in a 375 degree F oven for 40 to 45 minutes or until bread sounds hollow when lightly tapped. (If necessary to prevent over browning, cover loosely with foil for the last 10 minutes of baking.) Immediately remove bread from pan. Cool on a wire rack.

DIABETIC ZUCCHINI BREAD (LOW SUGAR, LOW CALORIE, LOW FAT )
I got a similar version of this recipe from a friend but had to tweek it for my fiance' who is diabetic. It is not 100% sugar free (less then 1 gram per serving) and very low in fat and calories without sacrificing taste, ENJOY!!

Steps:
- Preheat oven 350 degrees.
- Grease and flour two medium loaf pans.
- In a bowl combine egg, brown sugar, sugar, apple sauce, and margarine.
- To bowl add baking powder, baking soda, cinnamon,nutmeg, salt, and vanilla.
- Add flour slowly.
- Add shredded carrots, zucchini and nuts.
- Beat mixture (by hand or mixer).
- Pour loaf into pans.
- Bake 45 mins or 'til toothpick comes out clean.

- 1. Preheat oven to 350 degrees F. Grease one 9x5 inch loaf pan.
- 2. In large mixing bowl add the first 10 ingredients, beat 3 minutes.
- 3. Pour into prepared loaf pan. Smooth top.
- 4. Combine 3 tablespoons of Stevia, 1/2 teaspoon cinnamon and 2 tsp of ICBINB, mixing until crumbly.
- 5. Sprinkle topping over smoothed batter. Using knife, cut in a light swirling motion to give a marbled effect. (sprinkle top with 1/4 cup pecans)
- 6. Bake for about 50 minutes. Test with toothpick. When inserted it should come out clean. Remove bread from pan to rack to cool.
- 7. You can glaze with a simple confectioners' sugar, cream and vanilla mixture. (the below information does not take this glaze into consideration)

- Preheat the oven to 425°F. Line an 8 inch by 4 inch pan with a piece of parchment paper as wide as the bottom of the pan in the bottom to prevent sticking. Make it extra long, so that the extra length can be folded over the short ends of the pan (this will make handles to make it easy to remove the loaf).
- Pour the golden flaxseed meal over the wet mixture. Add the almond flour, arrowroot flour, baking powder, salt, and baking soda to the bowl. Mix well. Pour the batter into the prepared pan.
- Bake 25 to 30 minutes, until the top of the loaf is deep golden brown. Remove from oven, then cool in the pan for 15 minutes. Run a butter knife around the edges to loosen the loaf. Turn the loaf out onto a wire rack and cool completely. Store airtight and refrigerated.
