DIED AND GONE TO HEAVEN CHEESECAKE

This is one of the first recipes I ever made and still one of the best. It's asked for every year at holiday time. It is extremely easy!! And extremely rich. Serve small slices and a large glass of milk with it. It's THE BEST!

Number Of Ingredients 8

2 (8 ounce) packages cream cheese, softened
1/2 cup sugar
2 eggs
1 teaspoon vanilla
1 cup hersheys miniature chocolate chip
6 ounces pie crusts (I use chocolate or graham)
1/3 cup hersheys miniature chocolate chip
2 tablespoons heavy cream or 2 tablespoons whipping cream

Steps:

  • Blend cream cheese and sugar in bowl.
  • And eggs and vanilla; beat well.
  • Stir in mini-chips.
  • Pour into crust.
  • Bake at 450 degrees for`10 minutes without opening door, reduce temp.
  • to 250 degrees.
  • Continue to bake for 20- 25 minutes (Until set).
  • Cool completely.
  • Cover, chill thouroughly.
  • Spread top w/ chocolate topping.
  • Chill several minutes or just until set.
  • CHOCOLATE TOPPING: Place mini chips and cream in microwave safe bowl.
  • Microwave at high for 20 seconds or just until chocolate is melted and mixture is smooth when stirred.
  • Cool slightly.
  • Dig in and enjoy.

1 3/4 cups all-purpose flour
1 cup granulated sugar
3/4 cup Dutch-processed cocoa powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon salt
1 1/4 cups buttermilk
1 cup packed light brown sugar
2 eggs
1/4 cup canola oil
2 teaspoons vanilla
1 cup hot strong black coffee
1 cup confectioners' sugar
1/2 teaspoon vanilla
1 -2 tablespoon buttermilk or 1 -2 tablespoon low-fat milk

Steps:

  • Preheat oven to 350°F.
  • Lightly oil a 12-cup bundt pan or coat it with nonstick cooking spray.
  • Dust with flour and shake out excess.
  • In a large mixing bowl, whisk together flour, white sugar, cocoa powder, baking soda, baking powder and salt.
  • Add buttermilk, brown sugar, eggs, oil and vanilla.
  • Beat on medium speed for 2 minutes.
  • Whisk in coffee until well blended.
  • Pour into the prepared pan.
  • Bake for 35- 40 minutes or until a cake tester inserted in middle comes out clean.
  • Cool the cake in the pan on a rack for 10 minutes; remove from the pan and let cool completely.
  • Make icing: In a small bowl, whisk together the confectioner's sugar, vanilla and enough of the buttermilk to make a thick but pourable icing.
  • Set the cake on a serving plate and drizzle the icing over the top.

  • Place 28 oreos in a food processor or grinder and pulse until they are finely ground. Add the melted butter and stir until the oreos are moistened. Pour the crumb mixture into the 9x13 and press firmly until the crumbs are evenly distributed. Bake this for 10 minutes in oven and remove from oven and set on a cooling rack while you make the cheesecake mixture.
  • In large mixing bowl beat the cream cheese and sugar about 2 minutes until smooth. Add the sour cream, vanilla, and salt and beat together for 30 seconds. Scrape down the sides. Add the eggs one at a time and beat well after each egg. 4. Break the remaining cookies in half and gently pulse them in the food processor so that they are still chunky. Stir them into the cheesecake mixture.
  • Pour the cheesecake on top of the oreo crust and spread evenly. Then I took about 4 oreos and crumbled them on the very top. Bake in the preheated oven for 40 minutes until the filling is set around the edges and the middle is a little wobbly. Chill for at least 3 hours or overnight. Keep them stored in the refrigerator.
