Diet Friendly Dill Dip Spread Or Salad Dressing

DIET FRIENDLY DILL DIP SPREAD OR SALAD DRESSING

i always offer this as a diet-friendly dip for raw vegetables at parties. it's one of my tried & true favorites. it came from the 1975 edition of the american heart association cookbook. it can also replace sour cream.

Time: 10 minutes

Steps:

  • place cottage cheese , lemon juice , skim milk , and salt in blender jar
  • blend until creamy , adjusting the milk measure to produce desired consistency
  • mix in chopped fresh dill and minced onion
  • chill
  • serving size is 1 tablespoon , about 10 calories each

A sure classic for a crowd. This dip is creamy with pretty flecks of green dill. Serve this with a range of crudite such as carrot sticks, celery, radishes, or cauliflower.

CREAMY CUCUMBER DILL DRESSING

Cucumber and dill is always a pleasant combination. When I made this the first time I didn't know what to expect. It has a nice crisp taste and is good on fresh salads.

Steps:

  • 1. Puree cucumber and garlic in food processor. Place puree in a fine mesh strainer, press down gently with a spoon and let drain. (Cucumbers are largely water, so if they are not well drained, the dressing will be too thin)
  • 2. Place remaining ingredients in food processor and blend together
  • 3. Add pureed cucumber and garlic. Mix together. If too thick, thin with a little water, a teaspoon at a time. Refrigerate for an hour (or longer) before serving.

  • 2 Tbsp fresh dill, chopped or 1 tbsp dry
  • salt to taste
