1 (12 oz) can Diet Coke

Steps:

  • Pour brownie mix into a medium-sized bowl and pour in your 12 oz. can of diet coke. Using a hand held mixer or whisk, combine ingredients until you see no more lumps.
  • Pour mixture into a 9 x 9-inch pan coated with cooking spray and bake according to the package directions, adding an additional 5 to 10 minutes to the baking time.
  • Your brownies should bake for about 40 to 45 minutes, or until a toothpick inserted comes out clean. Allow to cool for about 5 minutes and enjoy!

½ teaspoon baking soda
⅔ cup coconut oil, divided
½ cup boiling water
1 cup stevia sugar substitute (such as Truvia®)
2 eggs
1 ⅓ cups almond flour
1 teaspoon vanilla extract
¼ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square pan with coconut oil.
  • Whisk cocoa powder and baking soda together in a bowl. Add 1/3 cup coconut oil and boiling water; mix until well blended. Add remaining 1/3 cup coconut oil, stevia, and eggs; blend well. Fold almond flour, vanilla extract, and salt into the batter.
  • Pour batter into the greased pan.
  • Bake in the preheated oven until top is dry and edges have started to pull away from the sides of the pan, 30 to 40 minutes. Let cool before cutting into 12 squares.

2 tablespoons vegetable oil
1 egg
1/2 cup cola carbonated beverage (from a 12-oz can)
1/2 cup buttermilk
1/2 cup butter or margarine
1/4 cup unsweetened baking cocoa
1/4 cup cola carbonated beverage
4 cups powdered sugar
1/2 chopped pecans, toasted

Steps:

  • Heat oven to 350° F. Spray bottom only of 13x9-inch pan with cooking spray.
  • In medium bowl, stir brownie mix, oil, egg, cola and buttermilk until well blended. Spread into pan.
  • Bake 24 to 28 minutes or until toothpick inserted 2-inches from side comes out clean or almost clean. Cool completely, about 1 hour.
  • In medium microwavable bowl, microwave butter on HIGH 45 to 60 seconds, stirring once, until melted; stir in cocoa and cola. Gradually beat in powdered sugar.
  • Spread frosting over brownies; sprinkle with pecans. For bars, cut into 6 rows by 4 rows.

My sister gave me this recipe. I was skeptical, but it was pretty good! I dusted the top with powdered sugar and served with ice cream and chocolate syrup drizzled on top. The calories Zaar calculated is off, but basically it will be whatever is indicated on the brownie mix package since all you're adding is diet pop. Any pop will do of course, not just Pepsi.
