1 lb. boneless skinless chicken thighs, cut into 1-1/2-inch pieces
1 large each green and red peppers, cut into 1-1/2-inch pieces
3 Tbsp. olive oil
1 clove garlic, minced
1 Tbsp. GREY POUPON Dijon Mustard
1 Tbsp. chopped green onions
2 tsp. lemon juice

Steps:

  • Heat grill to medium heat.
  • Thread chicken onto 4 skewers alternately with peppers; set aside.
  • Mix remaining ingredients in small bowl until blended.
  • Grill kabobs 7 to 9 min. on each side or until chicken is done, brushing frequently with mustard mixture.

You can easily double this recipe and I suggest you do so, this chicken is fantastic! Plan ahead the chicken needs to marinate in the sour cream-Dijon mixture for a minimum of 5 hours. If you are using wooden skewers make certain to soak them in cold water for a minimum of 30 minutes before threading.

1 (8 ounce) container sour cream
1/4 cup Dijon mustard
2 tablespoons minced fresh garlic
1 tablespoon prepared horseradish
2 tablespoons honey
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper (or use cayenne)
6 boneless chicken breasts (cut into about 1-1/2-inch pieces)
1 large red bell pepper (seeded and cut in desired pieces)
1 large cherry tomatoes (use as many as you want)

Steps:

  • In a large glass bowl mix together the sour cream, Dijon mustard, minced garlic, horseradish, honey, salt, pepper and red pepper; mix well to combine.
  • Add in the chicken to the bowl and toss to combine with remaining marinade; cover and refrigerate for 5 hours.
  • Remove the chicken and discard marinade.
  • Thread the chicken onto skewers alternating with bell pepper pieces and cherry tomatoes.
  • Grill covered with lid over medium-high heat for about 10-12 minutes or until the chicken is done.

4 boneless skinless chicken breast halves (4 ounces each)
4 small zucchini
4 small yellow squash
2 medium sweet red peppers
4 ounces small fresh mushrooms
Hot cooked rice, optional
GLAZE:
3/4 cup honey
1/2 cup prepared mustard
1/4 cup water
2 tablespoons soy sauce
2 tablespoons cornstarch
1 tablespoon cider vinegar

Steps:

  • Cut the chicken, squash and peppers into 1-in. pieces. On four metal or soaked wooden skewers, alternately thread chicken and vegetables. , In a small saucepan, combine glaze ingredients; bring to a boil. Boil for 1 minute or until thickened. , Grill kabobs over hot heat for 10 minutes, turning often. Brush with glaze; grill 5 minutes more or until the chicken is no longer pink and vegetables are tender. Serve over rice if desired.
