Grilled Baby Potatoes with Dijon Mustard & Thyme image

A thick Dijon mustard marinade gives these grilled baby potatoes great texture and flavor. Perfect for a summer cookout!

1 pound baby Yukon Gold potatoes
¼ cup mayonnaise, best quality such as Hellman's or Duke's
¼ cup Dijon mustard
1 tablespoon + 1 teaspoon salt
¼ teaspoon freshly ground black pepper
3 cloves garlic, minced
2 teaspoons chopped fresh thyme (rosemary would also work well, or a combination)
1 tablespoon chopped fresh Italian parsley, for garnish (optional)

Steps:

  • Place the potatoes in a medium pot; add water to cover by 1 inch and 1 tablespoon of the salt. Bring to a boil over high heat; reduce the heat and simmer until the potatoes are tender when pierced with a sharp knife, about 12 minutes. Drain the potatoes; then place them back in the pan and run under cold water to cool.
  • Preheat the grill to medium-high heat.
  • In a large bowl, whisk together the mayonnaise, the Dijon mustard, remaining teaspoon salt, pepper, garlic and thyme.
  • Drain the potatoes and slice them in half. Add to the Dijon mustard sauce and toss to coat evenly, taking care not to smash the potatoes.
  • Clean and oil the grill grate. Place the potatoes on the grill and cook, covered, for about 3 minutes, or until you see nice grill marks on the first side. Using tongs, turn the potatoes and grill about 3 minutes more, until crisp and golden all over. Transfer the potatoes to a serving platter and sprinkle with chopped parsley (if using).
  • Note: Potatoes can be boiled 1 day ahead of time. Bring to room temperature before grilling.

1 tablespoon Dijon mustard
1 clove garlic, minced
¼ teaspoon thyme
¼ teaspoon rosemary
salt and ground black pepper to taste
5 red potatoes, cut into 1-inch pieces

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a roasting pan.
  • Stir olive oil, Dijon mustard, garlic, thyme, rosemary, salt, and pepper together in a bowl; add potatoes and toss to coat. Transfer potatoes to prepared roasting pan.
  • Roast in preheated oven, turning occasionally, until tender in the middle, 40 to 45 minutes.

5 -7 large red potatoes
3/4 cup butter
2 tablespoons Dijon mustard
1 medium onion, sliced thin
1 tablespoon parsley
1 teaspoon garlic salt
salt and pepper (to Taste)
aluminum foil

Steps:

  • Clean and microwave potatoes for at least 5 minute (this makes them easier to handle, and then takes them less time to cook).
  • Wait 5 min after heating and cut potatoes into 1in cubes, set aside.
  • slice onion, set aside.
  • in medium bowl melt butter, mix in dijon mustard, parsley. garlic salt, onions and potatoes, makes sure they are evenly coated.
  • make an aluminum foil pouch, pour in potatoe mixture, seal pouch by rolling sides together (you may place this pouch into a small disposable aluminum pan so they dont leak).
  • heat grill on medium heat, place potatoes on grill cook for about 20-25 minutes (you may need more time), opening pouch and stirring mixture occansionally, i usually let mine go for a couple minutes more because i like when they get a little crispy.

2 teaspoons canola oil
1 can (14-1/2 ounces) chicken broth
6 ounces cream cheese, cubed
1 tablespoon Dijon mustard
3 medium russet potatoes, peeled and thinly sliced
2 medium sweet potatoes, peeled and thinly sliced
1-1/2 to 2 cups crushed butter-flavored crackers
3 tablespoons grated Parmesan cheese
