3 tablespoons olive oil
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
Salt and pepper
4 pieces salmon fillet (6 ounces each), with skin
Chopped fresh dill (optional)

Steps:

  • Preheat the oven to 425 degrees. In a small bowl, mix together olive oil, mustard, lemon juice, and 1/4 teaspoon each salt and pepper.
  • Put salmon, skin side down, in a baking dish, and spoon mustard glaze over each piece of fish. Bake until salmon is just cooked through and no longer red, 6 to 8 minutes. Sprinkle with chopped dill, if desired, and serve.

Steps:

  • In a small bowl, whisk together the first 4 ingredients.
  • Add salt and pepper to taste and blend well.
  • Allow to stand at room temperature for 1 hour.
  • Lightly grease or oil a baking sheet.
  • Put salmon, skin side down, on baking sheet.
  • Sprinkle with garlic, salt and pepper.
  • Spread with 1/3 cup of sauce.
  • Bake at 400 degrees for 20 minutes or until just opaque in the center.
  • Serve with the rest of the sauce.

Steps:

  • GRILL DIRECTIONS: Heat grill. In small bowl, combine dill, mustard and honey; mix well. Place 2 tablespoons mustard mixture in small bowl; stir in mayonnaise until well blended. Refrigerate sauce until serving time. Reserve remaining mustard mixture for brushing on salmon.
  • When ready to grill, spray skin side of salmon with nonstick cooking spray. Place salmon, skin side down, on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Spoon reserved mustard mixture onto salmon, spreading evenly; cover grill. Cook 10 to 15 minutes or until fish flakes easily with fork. Serve mayonnaise-mustard sauce mixture with salmon.

1 tbsp olive oil
2 tbsp lemon juice
1/4 tsp salt

4 cloves garlic (minced)
1 tbsp capers
1 lemon (sliced)

Steps:

  • Heat the oven to 400F and line a baking sheet with parchment paper.
  • Place the salmon skin side down on the baking sheet.
  • In a small bowl, mix dijon mustard, olive oil, lemon juice, salt, dill, garlic and capers.
  • Slather the salmon with the dijon mixture using a silicon brush. Top with a few lemon slices if desired.

1 1/2 tablespoons extra virgin olive oil
4 tablespoons chopped fresh dill
4 salmon fillets, patted dry with paper towels
3 tablespoons Dijon mustard
1/4 cup plain whole milk yogurt
3 tablespoons finely chopped fresh dill
2 tablespoons fresh lemon juice

Steps:

  • Combine all of the marinade ingredients in a baking dish and mix well. Add the salmon, turning to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 6 hours.
  • Combine all of the sauce ingredients in a small bowl and mix well. Cover and refrigerate.
  • Preheat oven to 400 degrees F.
  • Place salmon (skin side down) in a foil-lined baking dish with sides. Bake 10 to 15 minutes, or until cooked through.
  • Top cooked salmon with sauce and salt and pepper to taste; serve with brown rice and the vegetable of your choice.

1 tablespoon chopped fresh dill
1 tablespoon Dijon mustard
1 tablespoon honey
1/4 cup mayonnaise
1 1/2 lbs fresh salmon fillets
vegetable oil cooking spray

Steps:

  • Mix together dill, mustard and honey.
  • Next, stir in mayonnaise and 2 Tablespoons of mustard until blended well.
  • This will be the sauce used after salmon is grilled.
  • Refrigerate until needed.
  • I use my George Foreman but if using a regular grill I suggest spraying the skin side of the salmon with vegetable spray so it doesn't stick to grill.
  • Brush top of salmon with reserved mustard.
  • Grill for 10 to 15 minutes or until salmon begins to flake.
  • When done, serve with dill sauce.

QUICK AND EASY DIJON DILL SALMON



Quick and Easy Dijon Dill Salmon image

1 3/4 pound wild salmon
1/2 cup prepared Dijon mustard
2 tablespoons fresh dill weed
2 tablespoons butter or olive oil
freshly ground pepper to taste
1 lemon (juiced)
Greek Yogurt Aioli (recipe below or traditional Aioli)
additional dill weed

Steps:

  • Skin salmon then cut the fillet in half lengthwise into two, long 1/2-inch thick pieces. Then cut these long, thin fillets into 3-inch wide pieces. (see notes)
  • Mix the Dijon mustard and dill together in a shallow bowl.
  • Dredge salmon in the mustard dill sauce.
  • Warm frying pan over medium-high heat and add oil or butter.
  • Cook salmon 1-2 minutes on each side until done to your liking.
  • Season to taste with lemon juice and a of couple grinds of black pepper.
  • Serve and garnish as desired.

1 bunch mustard greens, trimmed, cut crosswise into 2-inch-wide strips

  • Preheat oven to 350°F. Mix first 4 ingredients in small bowl. (Sauce can be prepared 2 hours ahead. Cover and let stand at room temperature.) Place potatoes in small bowl. Spoon 1 tablespoon sauce over and toss to coat. Arrange potatoes in baking pan. Bake 15 minutes.
  • Remove pan from oven; push potatoes to sides of pan. Spread each salmon fillet with 2 teaspoons sauce and place in center of baking pan. Bake until salmon is cooked through, about 18 minutes. Meanwhile, place greens in large skillet. Toss with 2 tablespoons sauce. Stir over medium-high until wilted, about 4 minutes. Divide salmon, greens and potatoes between 2 plates. Serve, passing remaining sauce separately.
