Steps:
- Mix pickle dip base ingredients: In the bowl of a food processor or a mixing bowl with a hand-held mixer, combine the sour cream, cream cheese, ranch mix, garlic, onion, celery salt and lemon juice. Process or beat until creamy and smooth, stopping to scrape down the sides and bottom of the bowl as needed.
- Fold in remaining ingredients: Add the pickles, dill, chives, breadcrumbs and celery. Gently stir/fold to combine.
- Chill (for best taste): Cover the dip and refrigerate for at least 2 hours, or up to overnight. (Note: I recommend refrigerating at least 8 hours for the most flavor!)
- Serve: Taste and adjust the dip for seasoning with kosher salt and ground black pepper. Garnish with remaining pickles and breadcrumbs. Serve and enjoy!

- In a bowl, add and mix up Hellmann's mayo, dried dill, Lawry's seasoning salt, dried minced onion, full fat sour cream, cracked pepper, and dried parsley.
- Once dip is thoroughly mixed, put in fridge overnight so flavors can combine and meld together. This also allows the minced onion to soften in the dip.
- If you want to serve same day, you have to omit dried onion (or understand it will have a little crunch) and use either onion powder or real minced onions in its place for the flavor.

- Into the softened cream cheese, mix in the dill, spices, and lemon juice. You can do this by hand, but I prefer to use a mixer on medium-high to get the mixture smooth.
- Spoon the mixture into a pastry bag with your preferred tip, or a zip top bag. Place in the refrigerator while you slice the cucumber.
- Slice the cucumber into 1/4 inch rounds. You can leave the cucumber unpeeled or you can peel strips to form a striped look. Pipe the cream cheese onto the rounds and top with dill if desired.

- In a food processor (in batches if your food processor is small), pulse cucumbers 8 to 10 times to cut into 1/8-1/4 inch pieces. *You can make your relish chunky or smoother by simply processing less or more. I like mine a little chunky, to resemble chopped dill pickle. Process a bit more for a smoother relish.
- Place the processed cucumbers into a large bowl. Sprinkle cucumbers with salt and turmeric. Stir well to combine, then add the cold water. Stir again, cover and let stand at room temperature for 1 hour, stirring a couple of times as it sits. Drain cucumber mixture in a large sieve. Rinse well under cold water to remove excess salt. Drain again, using your hand to press down on the mixture to remove as much moisture as possible.
- In a large saucepan, bring the vinegar, sugar, garlic, dill seeds and mustard seed to a boil over medium heat Add cucumber mixture and onions to the pot and return to a boil, stirring often. Reduce heat to medium low and simmer, stirring occasionally, until the mixture has thickened, has lost its bright green colour and has just a bit of liquid left on the bottom of the pan, about 30 minutes. *Cook until you have just a thin layer of liquid visible at the bottom of the pan. You don't want to cook all the liquid off.
