Time 2h50m

Yield 12

Number Of Ingredients 10

1 (.25 ounce) package active dry yeast
2 tablespoons white sugar
1 ½ cups warm water (110 degrees F/45 degrees C)
2 teaspoons salt
2 tablespoons shortening
1 tablespoon minced onions
½ teaspoon dried oregano
3 ½ cups bread flour
½ onion
2 tablespoons butter, melted

Steps:

  • In a large mixing bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
  • Stir salt, shortening, minced onions, oregano and 2 cups bread flour into yeast mixture. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Stir dough to deflate and place it into a lightly greased 9x5 inch loaf pan. Cover with a damp cloth and let rise until the top of the dough is within 1/2 inch of the top of the pan, about 40 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
  • After loaf has risen, arrange onion slices on top of the loaf. Pour melted butter over the slices and bake in preheated oven for 35 to 40 minutes, or until golden brown. Remove from pan to cool on a wire rack.

GREYSTON'S POTATO ONION BREAD

Greyston's Potato Onion Bread image

Provided by Molly O'Neill

Time 5h

Yield 2 loaves

Number Of Ingredients 10

1 package dry yeast
1 cup warm water
1 tablespoons honey
2 1/2 tablespoons dry milk powder
2 teaspoons salt
1 tablespoons vegetable oil
1/2 pound potatoes, cooked until very tender, mashed and allowed to cool
3 ounces onion, minced
4 to 4 1/2 cups unbleached flour
1 egg beaten with 2 tablespoons water, for egg wash

Steps:

  • Dissolve the yeast in the warm water and then add the honey, milk powder, salt, oil, potatoes and onion, stirring well. Gradually stir in 1 1/2 cups of flour.
  • Add 2 more cups of the flour, 1/2 cup at a time, until the dough is stiff. Turn onto a lightly floured board and knead in enough flour until the dough is no longer sticky.
  • Continue kneading for about 15 minutes and then place the dough in a lightly oiled bowl. Cover the bowl loosely with plastic wrap and set in a warm place to rise until dough is doubled in volume, about 1 1/2 hours. Remove dough from bowl, punch it down and shape into a ball. Return to bowl, cover with plastic wrap and let rise for 40 minutes.
  • Preheat the oven to 350 degrees. Punch down the dough again and turn onto a lightly floured board . Divide the dough in half and knead one piece, adding about 1/4 cup or more of flour to make the dough stiff enough to hold a round shape.
  • Form a ball and then fold the dough inward while rotating it against the board to form a mushroom cap. Repeat this rotation 10 times. Lay the ball of dough on its side and roll and press the dough against the board about 10 times, continuing to keep the round shape. Repeat with the other ball.
  • Place both balls on a buttered baking sheet and let them rise in a warm place, lightly covered with plastic wrap, for about 25 minutes. Brush the loaves with egg wash and make 2 quarter-inch-deep slashes to form a cross in each.
  • Bake for 35 to 40 minutes, until the loaves are golden and produce a hollow sound when tapped on the bottom. Cool at least 1 hour before slicing.

BRAIDED ONION-POTATO LOAF

Braided Onion-Potato Loaf image

Ever wonder why a bread recipe includes mashed potatoes? The potato's starchy quality absorbs liquid during the kneading stage, and it holds onto that liquid during baking. The bread finishes with a crisp, brown exterior crust and a flavorful, moist interior that helps the bread keep longer. -Joan Ranzini, Waynesboro, Virginia

Provided by Taste of Home

Time 45m

Yield 1 loaf (16 slices).

Number Of Ingredients 15

1 large Yukon Gold potato, peeled and cubed
1 small onion, chopped

1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1-1/2 teaspoons salt
1/4 teaspoon pepper
4 cups bread flour
1 package (1/4 ounce) active dry yeast
TOPPING:
1 large egg, lightly beaten
Additional grated Parmesan cheese

Steps:

  • Place potato and onion in a small saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until vegetables are tender. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., When cycle is completed, turn dough onto a lightly floured surface. Divide into thirds. Shape each into an 18-in. rope. Place ropes on a greased baking sheet and braid; pinch ends to seal and tuck under. , Cover with a clean kitchen towel and let rise in a warm place until doubled, about 1 hour. POTATO BREAD WITH ROASTED ONIONS - THE FRESH LOAF
Here is a Potato Bread with Roasted Onions from Jeffrey Hamelman's Bread. Nice moist crumb, crackly crust and lots of flavor. It's a yeasted dough with a pate fermentee. I shaped it in the fendu style, as recommended by Hamelman. Next time I will initially roast the onions a bit less, as they end up a bit too toasty after the long bake required of a potato bread.
