POTATO LASAGNA
This lasagna is made using potatoes in place of noodles. The perfect mix of fresh veggies, cheese and tomato sauce!

- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart casserole dish.
- In a medium bowl, toss together the carrots, bell pepper, onion, garlic, and spinach. In a separate bowl, blend together the Gouda cheese, mozzarella cheese, and sharp Cheddar cheese. Set aside.
- Place two layers of sliced potatoes in the bottom of the prepared casserole dish. Season the potatoes with a little salt and pepper. Top with a layer of the spinach mixture, and pour about 1/2 cup of sauce over all. Sprinkle with some of the cheese blend. Repeat layering with remaining potatoes, vegetables, sauce and cheese, ending with cheese on the top.
- Bake covered for 35 minutes in the preheated oven. Remove the lid, and bake for 10 more minutes until the top is browned.

Steps:
- Scrub potatoes.
- Leave skins on, if desired, or peel thinly and remove eyes.
- Cut into large pieces.
- Heat 1 inch water (salted if desired) to boiling in 3-quart saucepan; add potato pieces.
- Cover and heat to boiling; reduce heat.
- Cook covered 20 to 25 minutes or until tender; drain.
- Shake pan gently over low heat to dry potatoes.
- Heat milk, whipping cream, butter, salt and pepper in 1-quart saucepan over medium-low heat, stirring occasionally, until butter is melted.
- Measure out 1/4 cup of the milk mixture; cover and refrigerate.
- Add remaining milk mixture in small amounts to potatoes in medium bowl, mashing with potato masher or electric mixer after each addition.
- (Amount of milk needed to make potatoes smooth and fluffy depends on kind of potatoes used.) Beat vigorously until potatoes are light and fluffy.
- Spray 2-quart casserole with cooking spray.
- Spoon potatoes into casserole.
- Bake immediately, or cover and refrigerate up to 24 hours.
- Heat oven to 350 degrees.
- Pour reserved milk mixture over potatoes.
- Bake uncovered 40 to 45 minutes or until potatoes are hot.
- Just before serving, stir potatoes.
- Variation: Love garlic?
- Peel and finely chop 1 or 2 cloves and add to the potatoes before mashing.

MASHED POTATO LASAGNA WITH A VEGETABLE SAUCE
I used leftover roasted garlic mashed potatoes use your favorite. This has texture, creaminess and richness from the cheeses and potatoes. Tiny chucks of veggies. The Solemio noodles that I used are fresh and consist of 8 wide noodles 2 per layer so adjust if using different brand. This lasagna has 4 layers of noodles. I just dip the fresh noodle to remove some starch and soften lightly. If not using fresh do follow the package directions.Served with recipe #210458

Steps:
- Preheat oven to 350 degree.
- Boil a large pot of salted water, set aside for noodles.
- Sauce:.
- Heat oil in large heavy pot.
- Saute vegetables for 10 minutes.
- Add the canned tomatoes and herbs bring to a boil then reduce and simmer for 30 minutes stirring often.
- Cheese mixture:.
- Mix all cheese ingredients together,set aside.
- In a 9x13 casserole dish place 1 cup of the sauce in bottom of dish.
- Take 2 of the noodles dip into the water and shake to remove water and place over the sauce on bottom of pan; spread with 1 cup of cheese mixture; follow with 1/2 cup mashed potatoes; then 1 cup sauce.
- Repeat step #10 for two more layers.
- Place the last two noodles on top spread remaining cheese mixture on noodles; arrange the sliced mozzarella cheese on top of the cheese mixture; top with remaining sauce; sprinkle with grated cheese.
- Bake lightly covered with foil for 30 minutes uncover and bake 15-20 more minutes. Let rest 15 minutes before slicing.
