Double Chocolate Malt Shop Cupcakes W Cherry Vanilla Buttercream Recipe

Ingredients:

  1. all-purpose flour
  2. unsweetened cocoa powder
  3. sugar
  4. baking soda
  5. baking powder
  6. salt
  7. whole milk
  8. instant malted milk powder
  9. espresso powder
  10. canola oil
  11. eggs
  12. sour cream
  13. vanilla extract
  14. miniature chocolate chip', "confectioners' sugar", 'unsalted butter
  15. whipping cream
  16. cherry preserves
  17. malted milk balls

Steps:

  1. preheat oven to 350 degrees
  2. line 2 regular 12- cuo tins with paper liners
  3. in a large bowl , combine the flour , cocoa powder , sugar , baking soda , baking powder , and salt
  4. whisk until well blended
  5. in a medium bowl , whisk together the milk , malted milk powder , and espresso powder
  6. add the canola oil and eggs
  7. whisk to blend
  8. add the milk mixture to the flour mixature and beat until smooth
  9. add the sour cream and vanilla and beat until combined
  10. stir in the minature chocolate chips
  11. divide the batter among the prepared cupcake tins , filling only halfway full
  12. bake the cupcakes for 15 to 17 minutes , until they spring back when touched and a toothpick inserted into the center emerges clean
  13. while the cupcakes bake , prepare the buttercream
  14. in the bowl of an electris mixer fitted with the paddle attachment , mix together the sugar and the butter on medium-low speed until well blended
  15. add the vanilla and whipping cream and beat on medium speed for 2 minutes , until light , spreadable and fluffy
  16. beat in the cherry preserves until well incorporated
  17. when the cupcakes have finished baking , let sit in the pans for 2 minutes and then transfer the cupcakes to the wire racks to cool for 10 minutes more
  18. while the cupcakes cool , transfer the buttercream to a patry bag fitted with a large star
  19. alternatively , you can frost the cupcakes with a knife or offset spatula
  20. when th ecupcakes have cooled , pipe the buttercream on decorativve swirls on top of the cupcake
  21. garnish on top of each cupcake with a malted milk ball or cherry and serve
