This is the best I've made. It tastes like the ones I have tried at Chinese restaurants.

½ cup rice vinegar
½ cup white sugar
1 clove garlic, minced
¼ teaspoon salt
1 ½ teaspoons dried red pepper flakes

Steps:

  • Bring the vinegar to a boil in a small, non-reactive pot, and mix in sugar until dissolved. Reduce heat to low, simmer 5 minutes, and remove from heat. Mash the garlic and salt into a smooth paste, and mix into the pot. Stir in the red pepper flakes. Cool to room temperature before using, or store up to 2 days in the refrigerator.

I don't know what made me think of putting sweet chili sauce on an egg sandwich in place of the traditional ketchup but I praise the sweet Lord for his abundant kindness! This sandwich was awesome!

2 eggs
2 pieces bread
sweet chili sauce

Steps:

  • Cook two eggs on a skillet. Break the yokes if you don't like your egg sandwich to be runny.
  • Toast two pieces of bread.
  • Place one of the cooked eggs on one piece of toast.
  • Administer sweet chili sauce.
  • Place the next egg on top of the first egg.
  • Place the 2nd piece of toast on top.
  • Enjoy!

1 (4 ounce) can diced green chilies
4 hard-cooked eggs, peeled and chopped
3 tablespoons light mayonnaise or 3 tablespoons fat-free mayonnaise
2 tablespoons green onions, sliced
1/4 teaspoon hot pepper sauce
4 bagels (of course my DH just used sliced bread) or 4 English muffins, split and toasted (of course my DH just used sliced bread)

Steps:

  • Combine chiles, eggs, mayonnaise dressing, green onion and hot pepper sauce in medium bowl.
  • Season with salt and ground black pepper.
  • Spread egg salad on toasted bagels or English muffins or bread.

4 -6 slices deli thin cooked ham or 4 -6 slices honey-roasted ham, per sandwich
12 slices bacon
12 slices white bread
3 slices cheese, per sandwich
mayonnaise
curly leaf lettuce
2 tomatoes, sliced

Steps:

  • Brown bacon slices and drain on paper towels. When cool, break each slice in half.
  • Toast bread slices.
  • Spread mayonnaise on 2 slices of bread.
  • Lay lettuce leaf, tomato slices, salt and pepper to taste, 3 pieces broken bacon, 3 slices deli thin ham on one slice.
  • Top with other bread slice, mayonnaise side up. Lay lettuce leaf, tomato slices, salt and pepper to taste, 3 pieces of bacon, 3 slices of deli-thin ham, and 1 slice of cheese on bread. Top with third slice of bread.
  • Repeat procedure for remaining three sandwiches.
  • Slice diagonally.

1 tablespoon butter
3 eggs
3 tablespoons mango chutney
4 slices toasted white bread
1 teaspoon chili sauce

Steps:

  • Melt butter in a skillet over medium heat. Cook the eggs until the white is completely set, but the yolks are still soft , flipping once.
  • Spread the mango chutney evenly on four pieces of toasted bread. Place a fried egg on a slice of bread, break the yolk and season egg with a dash of chili sauce. Repeat with two of the remaining pieces of toast and the remaining two eggs. Stack the pieces so that the egg and toast alternate layers. Place the final piece of toast on top and serve immediately.

1/2 cup water
6 tablespoons distilled white vinegar, preferably a Thai brand
1 cup sugar
1 teaspoon kosher salt
7 red Thai chiles, fresh or freshly frozen, or canned pickled Thai red chiles
8 cloves garlic, smashed and peeled

Steps:

  • To a small saucepan, add water, vinegar, and sugar; bring to a simmer over medium-high heat. Meanwhile, roughly slice chiles and garlic. Place in a food processor with salt and pulse to a rough chop; add to the pot. Turn heat to low to maintain a steady simmer and cook, uncovered, until the liquid thickens slightly and becomes just slightly syrupy, 8-12 minutes. Cool to room temperature. The sauce will thicken further as it cools. Makes ¾ cup. You can store it in the refrigerator in a sealed container for months; the flavor improves as the ingredients continue to meld.

I created this recipe to make Thai Chicken Wings this weekend, and it was great! Use this sauce in any of your Thai recipes asking for Sweet Chili Sauce. This recipe is medium hot, so use the chilis according to your taste! I also use it on my sushi, egg rolls, and spring rolls, and it is incredible!

2 tablespoons sambal oelek or 2 tablespoons chili peppers
1 cup rice vinegar
2 teaspoons salt
1/3 cup sugar
2 teaspoons fresh garlic, minced
1 teaspoon gingerroot, grated
2 tablespoons cornstarch
1/4 cup water

Steps:

  • In a small pan add the first 6 ingredients together, over low heat.
  • Stir constantly until mixture thickens to a syrupy consistency, about 5 minutes once it starts to simmer. It reduces quite a bit.
  • Mix well, and let sit until hot.
  • Mix the cornstarch and water together in a small bowl and add to the sauce. Mix well. Let cook until it starts to thicken, then remove from heat.
  • Let cool, and use in any of your Thai recipes asking for Sweet Chili Sauce.
