1/2 cup vegan mayonnaise
1/2 cup ketchup
1 tablespoon dill pickle relish
1 teaspoon dill pickle juice
Pinch of garlic powder
Pinch of sweet paprika
Kosher salt and freshly ground black pepper
1 cup canned black beans, drained and rinsed
2 tablespoons grated peeled raw beets
1 teaspoon garlic powder
1/2 teaspoon onion powder
Kosher salt
1/2 cup panko
1/2 cup cooked brown rice
1 teaspoon Worcestershire sauce
1/4 teaspoon liquid smoke
3 tablespoons canola oil
8 slices American cheese, optional
4 whole-wheat sesame buns
1/2 cup dill pickle hamburger chips
1/2 cup diced onion
1 cup shredded lettuce

Steps:

  • For the special sauce: Stir together the mayonnaise, ketchup, pickle relish, pickle juice, garlic powder, paprika and a pinch each of salt and pepper and set aside.
  • For the burgers: Add the black beans, beets, garlic powder, onion powder and 1/2 teaspoon salt to a food processor and pulse until coarsely chopped. Add the panko, rice, Worcestershire sauce and liquid smoke and pulse just until the mixture starts to come together. Transfer the mixture to a medium bowl and stir until thoroughly combined. Using wet hands, form 8 patties and place on a plate.
  • Heat a cast-iron pan over medium-high heat and add 2 tablespoons of the oil. Add the patties and cook for about 4 minutes. Flip the patties, top with the cheese, if you like, and add the remaining tablespoon of oil to the pan. Cook until patties are hot and the cheese has melted, about 4 minutes more.
  • To assemble, spread each bottom bun with a thin layer of the special sauce and top with some of the pickles and onions. Cover with a patty, followed with some lettuce and repeat the process with the remaining sauce, pickles, onions, patties and lettuce. Top with the top bun.

1 hamburger bun, split
⅓ pound ground beef
1 pinch salt
4 processed cheese singles (such as Kraft®)
1 tablespoon thousand island salad dressing (such as Kraft®)
1 slice tomato
1 leaf lettuce
1 slice onion

Steps:

  • Preheat a skillet over medium heat. Lightly toast both halves of the hamburger bun, cut sides down, 2 to 3 minutes. Set aside.
  • Separate beef into 2 portions and form each into a thin patty slightly larger than the bun. Lightly salt each patty and cook on one side for 2 to 3 minutes. Flip patties over and immediately place two slices of American cheese on each one. Cook until meat has reached desired doneness, 2 to 3 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Assemble the double cheeseburger in the following order: bottom bun, dressing, tomato, lettuce, beef patty with cheese, onion, beef patty with cheese, and top bun.

1 lb. crimini mushrooms, halved if large
½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt, plus more
1 lb. ground chicken or turkey, preferably dark meat
Vegetable oil (for grill and drizzling)
1 small onion, trimmed, sliced crosswise into 4 rounds
Freshly ground black pepper
8 thin slices Muenster
4 potato buns
4 Tbsp. mayonnaise
4 Tbsp. curry mustard (such as Brooklyn Delhi) or other mustard
Bread-and-butter pickles and shredded iceberg lettuce (for serving)

Steps:

  • Pulse mushrooms with ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt in a food processor until very finely chopped. (Alternatively, finely chop mushrooms by hand, then toss with salt in a medium bowl and let sit 2 minutes.) Transfer mushrooms to a clean kitchen towel, gather ends together, and wring over bowl to remove as much moisture as possible. Reserve liquid for another use.
  • Mix mushrooms and chicken in a large bowl with your hands until well combined. Divide mixture into 8 balls and gently form into patties about ¼" thick. Transfer to a parchment-lined baking sheet.
  • Prepare a grill for high heat; lightly oil grate. Drizzle onion with oil and season with salt. Grill on cooler edges of grill, turning occasionally, until slightly softened and charred, about 8 minutes. Transfer onion to a platter.
  • Season tops of patties with salt and pepper. Place, seasoned side down, on grate and season second side with salt and pepper. Grill until edges are browned, about 2 minutes. Flip and top with cheese. Grill until patties are cooked through and cheese is melted, about 2 minutes. Transfer patties to platter with onion.
  • Grill buns, cut side down, until lightly charred, about 30 seconds. Spread cut sides of bottom buns with mayonnaise and top buns with mustard. Layer pickles, grilled onion, 2 patties, and lettuce on bottom buns, then close up burgers.

salt, to taste
pepper, to taste
1 medium yellow onion, sliced
3 cloves garlic, minced
2 cups fresh spinach
2 sheets puff pastry
8 slices cheddar cheese
1 egg, beaten
sesame seed, for sprinkling

Steps:

  • Preheat the oven to 400°F (200°C).
  • In a medium 8-inch (20-cm) cast-iron skillet, press down half of the ground beef with a spatula to mold into a patty. Season with salt and pepper.
  • Place the cast-iron skillet over medium-high heat and sear the patty until browned, about 4 minutes on each side.
  • Remove the patty from the skillet and set aside. Repeat with remaining beef.
  • Return the pan to low heat and add the onion. Cook, stirring occasionally, until the onion is caramelized, about 20 minutes.
  • Add the garlic and spinach, stirring until the spinach is cooked down, about 5 minutes.
  • Lay one sheet of puff pastry on a baking sheet and top with 1 patty.
  • Layer 4 slices of cheese over the patty, then top with the caramelized onion mixture.
  • Top with the remaining 4 slices of cheese and the other patty.
  • Cover with the other sheet of puff pastry.
  • Trim the edges of the pastry with a knife and discard.
  • Crimp the edges of the pastry, then press with a fork to seal.
  • Brush the top and sides of the pastry with the beaten egg and sprinkle with sesame seeds.
  • Bake for 30 minutes, or until the pastry is golden brown and cooked through.
  • Slice and serve with additional toppings of your choice.
