Try this recipe for Ree Drummond's classic Twice-Baked Potatoes from Food Network.

8 baking potatoes, washed
3 tablespoons canola oil
2 sticks salted butter
1 cup bacon bits (fry your own!)
1 cup sour cream
1 cup Cheddar or Jack cheese (or a mix of both), plus more for topping
1 cup whole milk
2 teaspoons seasoned salt
3 green onions, sliced
Freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the potatoes on a baking sheet. Rub them with the canola oil and bake for 1 hour, making sure they're sufficiently cooked through.
  • Slice the butter into pats. Place in a large mixing bowl and add the bacon bits and sour cream. Remove the potatoes from the oven. Lower the heat to 350 degrees F.
  • With a sharp knife, cut each potato in half lengthwise. Scrape out the insides into the mixing bowl, being careful not to tear the shell. Leave a small rim of potato intact for support. Lay the hollowed out potato shells on a baking sheet.
  • Smash the potatoes into the butter, bacon and sour cream. Add the cheese, milk, seasoned salt, green onions and black pepper to taste and mix together well. (IMPORTANT: If you plan to freeze the twice-baked potatoes, do NOT add the green onions.)
  • Fill the potato shells with the filling. I like to fill the shells so they look abundant and heaping. Top each potato with a little more grated cheese and pop 'em in the oven until the potato is warmed through, 15 to 20 minutes.

3 jars (26 ounces each) spaghetti sauce
2 large eggs, lightly beaten

1/2 teaspoon pepper
1 cup grated Parmesan cheese

  • Cook noodles according to package directions. Meanwhile, in a Dutch oven, cook beef over medium heat until no longer pink, breaking into crumbles; drain. Stir in spaghetti sauce; set aside. In a large bowl, combine the eggs, ricotta cheese, 4-1/2 cups mozzarella cheese, parsley, salt and pepper., Drain noodles. Spread 1 cup meat sauce in each of 2 greased 13x9-in. baking dishes. Layer each with 3 noodles, 1 cup ricotta mixture and 1-1/2 cups meat sauce. Repeat layers twice. Top with Parmesan cheese and remaining mozzarella cheese. , Cover and freeze 1 lasagna for up to 3 months. Cover and bake remaining lasagna at 375° for 45 minutes. Uncover; bake 10 minutes longer or until bubbly. Let stand for 10 minutes before cutting., To use frozen lasagna: Thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Cover and bake at 375° for 60-70 minutes or until heated through. Uncover; bake 10 minutes longer or until bubbly. I made these up years ago and have been making them ever since. They are always a big hit. These potatoes make a wonderful side dish for any meal and are terrific heated up the next day for lunch.

4 large baking potatoes
8 slices bacon
1 cup sour cream
½ cup milk
4 tablespoons butter
½ teaspoon salt
½ teaspoon pepper
1 cup shredded Cheddar cheese, divided
8 green onions, sliced, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake potatoes in preheated oven for 1 hour.
  • Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins. To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top each with remaining cheese, green onions and bacon.

1/2 cup chopped onion
1 -1/2 cups CLASSICO Tomato and Basil Pasta Sauce
3/4 cup POLLY-O FREE Natural Nonfat Ricotta Cheese
1/4 cup KRAFT Reduced Fat Parmesan Style Grated Topping
2 egg whites
1/2 cup shredded POLLY-O Part Skim Mozzarella Cheese

Steps:

  • Preheat oven to 350°F. Cook potatoes in large pot of boiling water for 5 minutes; drain. Meanwhile, brown meat with onion in large nonstick skillet, stirring occasionally. Drain, if necessary. Add pasta sauce to skillet.
  • Mix ricotta cheese, grated topping and egg whites until well blended. Spoon half of the meat mixture into 8-inch square baking dish sprayed with cooking spray. Cover with half of the potatoes; top with layers of the ricotta cheese mixture, remaining potatoes and remaining meat mixture. Sprinkle with mozzarella cheese. Cover with foil.

10 baby carrots, sliced
1 large green bell pepper, chopped
½ Vidalia onion, chopped
3 cloves garlic, chopped
2 cups baby spinach leaves
¼ cup shredded smoked Gouda cheese
1 ½ cups shredded mozzarella cheese
½ cup shredded sharp Cheddar cheese
salt and pepper to taste
1 (14 ounce) jar vodka marinara sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart casserole dish.
  • In a medium bowl, toss together the carrots, bell pepper, onion, garlic, and spinach. In a separate bowl, blend together the Gouda cheese, mozzarella cheese, and sharp Cheddar cheese. Set aside.
  • Place two layers of sliced potatoes in the bottom of the prepared casserole dish. Season the potatoes with a little salt and pepper. Traditional schnitzel sides are sauerkraut, which everyone loves, and a German Potato Salad, but I always serve it with mashed potatoes because everyone in my family loves mashed potatoes. I made a big batch so there are plenty of leftovers for tomorrow. My mashed potatoes have a make-ahead advantage-you can get those potatoes boiling way in advance and then mash the potatoes just before eating-or mash them all the way, then reheat with a little half-and-half right as the schnitzel finishes, so there's not a lot of last-minute juggling at the stove top. This way, you can put all your focus into mastering the schnitzel itself, and still sit down to a hot dinner.

4 pounds medium Yukon gold potatoes, scrubbed
Fine sea salt and freshly ground black pepper
2 sticks (1 cup) unsalted butter, cut in small pieces
1/2 cup heavy cream or half-and-half
1 cup whole milk
1/2 cup sour cream or Greek yogurt

Steps:

  • Add the potatoes to a large pot with enough water to cover them. Season generously with salt so that it tastes like sea water (this is important because you're cooking the potatoes skin-on, which keeps the creamy potato flavor locked in, but doesn't allow all the salt to penetrate).
  • Bring to a boil and cook until creamy, about 40 minutes. Drain and return the potatoes to the pot.
  • Use a clean kitchen towel to hold the potatoes and gently peel off the skin and discard.
  • Add the potato flesh to a colander set in a large bowl and use a spatula to press the potato flesh through. (If you have a food mill or a ricer, it works much more quickly, but this also does the trick without requiring you to store an extra tool.)
  • Stir in the butter to coat the potatoes completely in the fat first. Meanwhile, heat the cream and milk in a small saucepan until simmering. Gently mash into the potatoes with a potato masher or a wooden spoon, adding in the sour cream just before serving and seasoning more with salt and pepper as needed.
  • Serve hot. Store any leftovers in an airtight container with a lid in the refrigerator for up to 2 days, and reheat with additional cream, half-and-half or milk before serving.

1/2 cup(s) italian seasoned dry bread crumbs
1 egg

2 1/2 cup(s) leftover mashed potatoes
3/4 cup(s) sour cream, divided
1/4 cup(s) mayonnaise
dried minced garlic, to taste
1 1/2 cup(s) shredded cheddar cheese, divided
8-10 slices bacon, cooked and crumbled
1 medium tomato, chopped

Steps:

  • Preheat oven to 350°F In medium mixing bowl combine ground beef, onion, salt, bread crumbs, and egg. Mix well. Press into ungreased deep-dish pie dish.
  • Spread 1/4 cup sour cream on top of meat. Sprinkle on the dried minced garlic as much or as little as you want. Next sprinkle on 1/2 cup cheese. Set aside.
  • In another mixing bowl combine mashed potatoes, rest of sour cream, and mayonnaise. Spread on top of the topped meat mixture sealing it to the edges. Sprinkle with rest of cheese.
  • Place dish on a baking sheet in case it bubbles over. Bake in preheated oven for 40 - 50 minutes, or until a meat thermometer inserted to meat mixture reaches 165°F.
  • On top of the hot casserole sprinkle bacon and tomatoes. Let rest at least 20 minutes or it will be a sloppy mess trying to get it out. (Think unrested lasagna)
  • Serve and enjoy!
