An altered version of a recipe from an old cookbook that took 10 years for me to perfect! I have been told to sell these cookies, they are very, very, very, very good!

- Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
- In a medium bowl, cream together the margarine, white sugar and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Sift in the flour, baking soda, salt and cocoa powder; mix well. Stir in the chocolate chips. Roll tablespoonfuls of dough into balls and place them one inch apart onto the prepared cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 2 minutes before removing to a wire rack to cool completely.

- In a large bowl, beat the butter, brown sugar, and white sugar until creamy. Add egg and vanilla and mix well. Mix in flour, cocoa powder, baking soda, baking powder, salt, and cinnamon; stir until combined. Fold in zucchini and mix, then add chocolate chips. Drop large spoonfuls of dough onto cookie sheets.
- Bake for 8-10 minutes, then let the cookies cool for 5-10 minutes on the cookie sheet before removing them to wire racks.

Steps:
- Sift dry ingredients into bowl.
- Exclude chocolate chips.
- Add wet ingredients into larger bowl.
- Exclude zucchini.
- Add dry ingredients to wet.
- Fold in zucchini and chips.
- Bake at 325 degrees for 45 minutes in a floured and oiled Bundt pan.
- Make Glaze.
- Add all ingredients except soda and vanilla. Bring to a boil in a pan 5 times the size you need. Add soda the mixture will expand and change. Remove from heat add vanilla. Drizzle over warm cake. Put extra glaze in the middle and let absorb into the cake.

- Preheat oven to 350 degrees. Prepare 2 loaf pans with nonstick cooking spray. In a large bowl whisk together flour, cocoa, salt, baking soda, allspice and cinnamon; set aside. In a medium bowl whisk together the sugar and applesauce. Beat in egg substitute until just combined. Stir in vanilla, buttermilk, zucchini and chocolate chips. Gently stir the liquid ingredients into the dry ingredients until just combined. Divide batter equally among the two loaf pans. Bake until toothpick inserted into the center comes out clean and muffin tops are springy to the touch, 45 to 55 minutes; rotating halfway through baking time. Cool loafs in pan for 5 minutes, then transfer to wire rack and cool 5 minutes before serving.
