WALNUT AND BLUE CHEESE GRAPES



Walnut and Blue Cheese Grapes image

1/4 cup (2 ounces) cream cheese, at room temperature
1/4 cup (2 ounces) blue cheese, at room temperature
1/4 cup heavy cream
18 to 20 seedless red grapes, chilled
1 cup (4 ounces) finely chopped walnuts, toasted (see Cook's Note)
2 tablespoons sugar
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Line a small baking sheet or baking dish with parchment paper. Set aside.
  • In a food processor, blend together the cream cheese, blue cheese, and heavy cream until smooth. Transfer to a medium bowl. Add the grapes and stir until coated with the cheese mixture.
  • In another small bowl, mix together the walnuts, sugar, and parsley.
  • Using a fork, transfer the grapes, one at a time, to the walnut mixture and, using clean hands, gently roll in the mixture until coated. Place the grapes on the prepared baking sheet. Refrigerate for 2 to 3 hours and serve.
  • Cook's Note: To toast the walnuts, arrange in a single layer on a baking sheet. Bake in a preheated 350 degrees F oven for 6 to 8 minutes until lightly toasted. Cool completely before using.

1 1/2 cups slivered almonds, toasted
2/3 cup mayonnaise or salad dressing
2/3 cup sour cream
2 to 4 tablespoons milk
Salt and pepper to taste, if desired
Lettuce, if desired

Steps:

  • Mix turkey, cheese, grapes and almonds in very large (4-quart) bowl.
  • Mix remaining ingredients except lettuce in medium bowl. Pour over turkey mixture; mix gently. Cover and refrigerate until serving. Serve on lettuce.

This is another favorite from my favorite Waxahachie restaurant, The Dove's Nest. The recipe comes from their cookbook. This salad will keep in the refrigerator for several days.

1/2 cup vegetable oil
1/2 cup chopped onion
1/4 cup white wine vinegar
1/4 cup honey
2 teaspoons Tabasco sauce
salt and pepper
8 ounces smoked turkey, cubed
2/3 cup crumbled blue cheese
2/3 cup coarsely chopped pecans, toasted
1 cup red seedless grapes

Steps:

  • To make dressing, combine the oil, onion, wine vinegar, honey and Tabasco sauce in a blender container.
  • Process until smooth.
  • Season with salt and pepper.
  • To make salad, combine turkey, bleu cheese, pecans and grapes in a salad bowl and mix gently.
  • Add the dressing, tossing to coat.

2 pounds seedless green grapes
2 pounds seedless purple grapes
One 8-ounce package cream cheese, room temperature
One 8-ounce container sour cream
1/2 cup granulated sugar
1 teaspoon vanilla extract
1/2 cup brown sugar, firmly packed
1/2 cup pecans, finely chopped

Steps:

  • Wash the grapes and dry thoroughly with paper towels. Put the dry grapes in a 9-by-13-inch baking dish. In a bowl, combine the cream cheese, sour cream, granulated sugar and vanilla. Mix well using an electric mixer. Pour this mixture over the grapes and toss together until all the grapes are coated. Chill in the refrigerator.
  • Just before serving, sprinkle with the brown sugar and pecans.

1 (8 ounce) package mostaccioli pasta
1 ½ cups mayonnaise
1 cup sour cream
1 tablespoon minced celery root
2 cups halved seedless red grapes
2 cups diced cooked turkey
1 cup chopped celery
1 head romaine lettuce leaves, torn into bite size pieces

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the pasta, and cook for 8 to 10 minutes, or until tender. Drain, and run under cold water to cool. Drain again, and transfer to a large bowl.
  • In a separate bowl, stir together the mayonnaise, sour cream and celery root. Stir this into the noodles to coat. Fold in the grapes, turkey and celery. Chill until serving.
  • To serve, place a bed of romaine lettuce onto serving plates. Top with the turkey pasta salad.

12 cups cubed cooked turkey breast
2 pounds green grapes, halved
5-1/4 cups diced celery
1 to 1-1/2 cups chopped pecans, toasted
3 green onions, sliced
2 cups mayonnaise
1-1/2 cups chicken broth
3/4 cup vinaigrette
1 tablespoon prepared mustard

Steps:

  • In several large bowls, combine the turkey, grapes, celery, pecans and onions. In a large bowl, whisk the mayonnaise, broth, vinaigrette and mustard until smooth. Pour over turkey mixture and toss to coat. , Cover and chill for at least 4 hours before serving. Refrigerate leftovers.

Preparation is so much easier today, thanks to red grapes without seeds! Another "updated" shortcut in the preparation is miniature marshmallows...cooks from the good old days know what "sticky fun" it was to snip regular-sized marshmallows!

1 can (20 ounces) pineapple tidbits
6 ounces cream cheese, softened
2 tablespoons mayonnaise
3 cups miniature marshmallows
2 cups seedless red grapes, halved
1 cup heavy whipping cream, whipped

Steps:

  • Drain the pineapple, reserving 2 tablespoons juice; set pineapple aside. In a bowl, beat juice, cream cheese and mayonnaise until fluffy. Stir in pineapple, marshmallows and grapes. Fold in whipped cream. Serve immediately or refrigerate.

4 ounces walnuts, lightly toasted
4 ounces blue cheese
1 tablespoon honey
2 tablespoons white wine vinegar
2 tablespoons olive oil
1 pinch salt

Steps:

  • wash, drain and remove from stems the red and green grapes.
  • break walnuts into pieces, add to grapes.
  • crumble bleu cheese, add half of bleu cheese crumbles to grape, walnut mixture.
  • use fork to mix honey, salt and vinegar into remaining bleu cheese, crushing bleu cheese with fork.
  • wisk in olive oil and pour over grape mixture, stirring to coat.
  • store in refrigerator.

BLUE CHEESE & GRAPE SALAD WITH CARAMELISED PECANS



Blue cheese & grape salad with caramelised pecans image

This salad has a great balance of sour, sweet, crunchy and smooth

Number Of Ingredients 9

knob of butter
2 tbsp caster sugar
50g pecan or walnuts
1 tbsp balsamic vinegar
2 tbsp olive oil
2heads chicory
100g bag rocket
50g grape (we used Muscat)
140g blue cheese (roquefort is best)

Steps:

  • First, caramelise the nuts. Heat the butter and sugar in a small frying pan, then stir in the nuts. Cook over a low heat for about 5 mins until the nuts are crisp and coated in the sugary butter. Tip onto an oiled baking sheet, leave to cool slightly, then roughly chop. Whisk together the vinegar and olive oil until well blended, then stir through a little salt and pepper to taste.
  • To serve, tear the leaves off the chicory and put into a bowl with the rocket. Slice the grapes in half, remove the seeds, then add to the bowl with most of the dressing. Gently toss everything together until the leaves are coated, then arrange on 4 serving plates. Crumble over the cheese and top with a scattering of nuts. Drizzle with the remaining dressing to serve.
