1 tablespoon unrefined coconut oil
1/2 cup chopped celery
1 tablespoon chopped garlic
8 cups vegetable broth or 8 cups water
3/4 lb rinsed red lentil
1 tablespoon grated ginger
2 teaspoons ground cumin
1/2 teaspoon salt
5 cups chopped kale
5 cups chopped Baby Spinach
to taste fresh ground pepper

Steps:

  • Heat the coconut oil in a large pot over medium-high heat.
  • Add the celery and garlic and cook, stirring until the celery is softened.
  • Add the veggie broth, lentils, ginger, cumin and salt and bring to a boil.
  • Reduce the heat to low and add the kale and baby spinach.
  • Cook until the lentils are soft and tender, stirring occasionally. Season with pepper, if desired.

1/4 cup olive oil 1 cup chopped celery 1 cup chopped carrots 1 large white onion
diced 4 cloves garlic
minced 2 cups dry lentils 8 cups water 1 tbsp reduced sodium vegetable bouillon 1 can crushed tomatoes 2 tsp cumin 3 cups spinach
rinsed and roughly chopped 1/4 cup fresh basil chopped or 1 tbsp dried basil 1/2 cup white wine salt to taste ground black pepper to taste

Steps:

  • In a large soup pot, heat oil over medium heat. Add carrots, celery and onions and cook, stirring occasionally for about 10 minutes or until the vegetables have softened. Stir in garlic and cook for another minute. Add lentils, water, tomatoes, and cumin. Bring to a boil. Reduce heat to low, and simmer for about one hour or until lentils are tender. When lentils are tender, stir in spinach and basil, and cook until it wilts. Stir in wine, and season to taste with salt and pepper.For a creamy texture, remove about half of soup when cooled and puree in a blender. Add back to pot, garnish with basil, and enjoy!

raw 1 tbsp olive oil 1 cup onion
chopped 1/2 cup carrot
chopped 1/2 cup celery
chopped 1 tsp salt 1 tsp ground black pepper 1/4 tsp cayenne pepper 1/2 tsp ground cumin 1 cup canned tomatoes
no salt added 2 quarts organic low-sodium chicken broth 4 chicken sausage links

Steps:

  • Heat olive oil in a large soup pot over medium heat. Add onion, carrot, celery, and salt and sweat until onions are translucent, approximately 5 minutes.Add the lentils, tomatoes, broth, peppers, and cumin. Stir to combine. Increase the heat to high and bring just to a boil.Reduce the heat to low, cover and cook at a low simmer until the lentils are tender, approximately 35 to 40 minutes.Using a sharp knife make a cut on one end of the sausage links.Remove sausage meat from link casing by squeezing meat through the cut on the link. Heat olive oil in a large pan over medium heat. Add sausage meat and cook until golden brown, breaking up the meat as you cook it.Drain any excess fat. Add to finished lentil soup and serve hot.

1 onion 3 tbsp olive oil 2 carrots 2 stalks celery 2 cloves garlic 1 bay leaf 2 large fresh tomatoes 2 cups dry lentils 8 cups low-sodium vegetable broth 1/2 cup spinach 1/4 tsp ground turmeric 1/8 tsp ground black pepper

Steps:

  • Place large pot with olive oil over medium heat. Chop onions, carrots and celery and add to pot.Cook and stir until onion is tender. Mince garlic and pour into soup. Add bay leaf, and cook for 2 minutes.Stir in lentils, water and diced tomatoes, and bring to a boil.Reduce heat, and simmer for at least 1 hour. Then, rinse and thinly slice spinach and stir into pot until cooked. Season soup with turmeric and black pepper for flavor, and serve!
