Dragged Penne With Meat Sauce Recipe

  1. olive oil
  2. onion
  3. carrot
  4. celery rib
  5. garlic clove
  6. fresh basil
  7. ground beef
  8. dry red wine
  9. fresh tomatoes
  10. beef broth
  11. penne
  12. pecorino romano cheese
  13. parmigiano-reggiano cheese


  1. pour the oil into a skillet large enough to hold all of the cooked pasta
  2. add the onion , carrot , celery , garlic , and basil
  3. cook over medium heat until the vegetables are tender , about 10 minutes
  4. add the beef and cook , stirring frequently to break up any lumps , about 10 minutes
  5. add the wine and bring to a simmer
  6. cook 1 minute
  7. stir in the tomatoes , broth , and salt and pepper to taste
  8. simmer on low heat 45 minutes , stirring occasionally
  9. bring 4 quarts of water to a boil in a large pot
  10. add 2 tbsp of salt , then the pasta
  11. stir well
  12. cook over high heat , stirring frequently , until the pasta is almost tender but slightly underdone
  13. set aside some cooking water
  14. drain the pasta
  15. add the pasta to the skillet and raise the heat to medium
  16. cook , stirring the pasta well , for 2 minutes , adding some of the water if necessary
  17. stir in the cheeses and serve immediately
