Came up with these when serving my Recipe #28211 this weekend. Yum! Would be great over salad as well.

Number Of Ingredients 6

1/2 loaf day old bread, such as ciabatta
1/3 cup extra virgin olive oil (more to taste)
2 garlic cloves, minced
1 teaspoon Tabasco sauce
salt
pepper

Steps:

  • Rough cut bread into 1/2-inch cubes.
  • Place in large bowl.
  • Whisk garlic, oil, Tabasco, salt and pepper in small bowl.
  • Let stand 10-15 minutes.
  • Heat oven to 450°F.
  • Pour oil mixture over bread and toss to thoroughly coat.
  • Spread evenly on cookie sheet.
  • Bake for 7-10 minutes.
  • Toss to turn cubes.
  • Bake an additional 7-10 minutes, or until golden brown and crispy.
  • These go great over salad or my Potato, Leek, Mushroom Soup (Recipe #28211).

Caesar Salad with Crunchy Croutons image

1/2 loaf crusty Italian bread
1/4 cup extra-virgin olive oil
1/4 cup grated Parmesan
2 tablespoons fresh thyme leaves
Kosher salt and freshly ground black pepper
4 anchovy fillets
1 clove garlic, smashed
2 lemons, juiced
1 tablespoon water
1/2 cup extra-virgin olive oil
1/2 cup freshly grated Parmesan
Freshly ground black pepper
Salt
2 heads romaine lettuce
Freshly grated Parmesan, for garnish

Steps:

  • Make the croutons:
  • Heat the oven to 350 degrees F.
  • Hand-tear the bread into small pieces and put them into a bowl. Add the olive oil, Parmesan, and thyme leaves; season with salt and pepper. Mix this well to combine all the flavors. Spread the cubes out onto a baking sheet and bake until they are golden brown, about 15 minutes. Let them cool before tossing them onto the salad.
  • Make the dressing: Put the anchovies, garlic, lemon juice, and water into a blender and process for 30 seconds until the mixture is smooth. With the blender running, pour the olive oil in slowly for the dressing to emulsify. Stir in the Parmesan and a couple of grinds of black pepper. Season, to taste, with salt and set aside. (Refrigerate the dressing if you will not be using it right away.)
  • Assemble the salad: Tear the lettuce into a large bowl. Add enough dressing to coat the salad to your liking. Add the croutons and some extra Parmesan and toss the salad well. Serve immediately.

This recipe marks the first time I remember making something and feeling the essence of timing in cooking: the buttered dish, the preheated oven and the melted butter cooling slightly while I gathered and blended all the other ingredients. SO satisfying.

1 1/4 cups coarsely ground cornmeal
3/4 cup all-purpose flour
1/4 cup sugar
2 teaspoons baking powder
1 teaspoon kosher salt
1/2 teaspoon baking soda
1 cup buttermilk
1/3 cup whole milk
2 large eggs, lightly beaten
8 tablespoons unsalted butter, melted, plus 1 tablespoon for greasing the pan
1 1/2 tablespoons Dijon mustard
2 large cloves garlic, grated
Kosher salt and coarsely ground black pepper
1/2 cup lemon juice
1 tablespoon caper juice
2/3 cup olive oil
1/3 cup canola oil
3 anchovy fillets, finely chopped, plus 1/2 teaspoon anchovy oil, optional
Parmesan, for grating
3 heads romaine, outer leaves discarded, washed, dried and cut into 1-inch pieces
16 to 20 thin slices pancetta, cooked crispy like bacon
1/2 teaspoon cayenne pepper

Steps:

  • For the cornbread: Preheat the oven to 400 degrees F.
  • Whisk together the cornmeal, flour, sugar, baking powder, salt and baking soda in a large bowl. Whisk in the buttermilk, milk and eggs. Whisk in the melted butter.
  • Coat the sides and bottom of a 9-inch skillet with the remaining butter. Pour the batter into the skillet and bake until the center is firm and a cake tester or toothpick inserted in the center comes out clean, 20 to 25 minutes. Let cool. Cut half of the cornbread into cubes. (Devour the other half with butter and jam.)
  • For the dressing: Combine the mustard, garlic, a pinch salt and about 1 teaspoon coarsely ground pepper in a food processor. Pulse to blend. With the machine running, pour the lemon juice and caper juice into the mix. Slowly pour in the olive oil and then the canola oil. Transfer the dressing to a bowl. Taste for seasoning. Too lemony? Add more oil. Too oily, add more lemon. Stir in the anchovies, anchovy oil and a few tablespoons grated Parmesan. Refrigerate. (See Cook's Note.)
  • For the salad: Preheat the oven to 375 degrees F.
  • Spread the cornbread cubes on a baking sheet and bake until browned and toasty, 10 to 12 minutes.
  • Add about three quarters of the dressing to a large bowl and toss the romaine with the dressing. Grate some Parmesan over the leaves. Use a tea strainer or sifter to sprinkle the pancetta with an even, light layer of the cayenne. Top with salad with the pancetta and warm cornbread croutons and serve immediately.

10 slices (approx.) of challah, defrosted
1 tablespoon granulated garlic
1 tablespoon parsley flakes
1 teaspoon cumin
1/8 teaspoon black pepper
1/2 teaspoon oregano
2 teaspoons paprika
2 teaspoons granulated onion powder
1 teaspoon za'atar (optional)
2-4 tablespoons Bartenura Olive Oil
1/3 cup Gefen Low-Fat Mayonnaise
1/4 cup Bartenura Olive Oil
1-2 tablespoons balsamic or Kedem Wine Vinegar
1 tablespoon mustard, either yellow, spicy or Dijon
1 tablespoon soy sauce or Haddar Teriyaki Sauce
1 teaspoon granulated garlic powder
2 tablespoons low-fat sour cream (optional-if making dairy)
at least 1 head of romaine lettuce
1 purple Spanish onion, sliced into half rounds
cherry or grape tomatoes
2 firm cucumbers, sliced
2 cups curly lettuce, sliced
dash of fresh lemon juice

Steps:

  • Preheat oven to 325°F (160°C).
  • Cut challah into little cubes. Place in a large bowl. Add spices to cubed challah and drizzle on some of the olive oil. Toss to ensure all cubes are coated well, adding more oil as necessary.
  • Line a baking tray with Gefen Parchment Paper. Spread out croutons in a single layer.
  • Bake about 20-30 minutes, stirring occasionally, until croutons are lightly browned, dried out and crispy. Let croutons cool completely and then store in an airtight container.
  • Blend all dressing ingredients using a hand blender or a kid who wants to "do something." If not serving immediately, refrigerate dressing until ready to use.
  • Toss vegetables together in a bowl and sprinkle with fresh lemon juice. Drizzle with dressing and top with amazing homemade spicy croutons.
  • If you are making the salad dairy, you can add some grated Parmesan or Romano cheese, or use a cubed salty cheese like feta-I prefer to use "Tzafatit" cheese in Israel, for its lighter flavor and better presentation

2 tablespoons extra-virgin olive oil, eyeball it
1 tablespoon butter
3 cups cubed sourdough bread
1 teaspoon coarse black pepper
1/2 cup grated Parmesan
2 tablespoons chopped fresh thyme leaves or 1 1/2 teaspoons dried thyme
1 clove garlic, finely chopped
1 lemon, juiced
1 teaspoon hot sauce (recommended: Tabasco)
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard
1/3 cup extra-virgin olive oil, eyeball it
2 large hearts Romaine lettuce, chopped, 7 to 8 cups
1/2 cup shredded Parmesan
Salt and coarse black pepper
Anchovies, optional garnish

Steps:

  • Preheat oven to 325 degrees F.
  • Heat garlic and oil over low heat and melt butter into the oil. Place the bread in a large bowl and toss with garlic oil and butter. Season with pepper, Parmesan and thyme. Spread croutons evenly on a baking sheet and bake until crisp and golden, 15 minutes.
  • In the bowl you made the croutons in, combine garlic, lemon juice, hot sauce, Worcestershire sauce and mustard. Whisk in extra-virgin olive oil while mixing the dressing.
  • Remove croutons and let cool. When you are ready to serve, add lettuce to the dressing in the bowl and toss to coat evenly. Add cheese, salt and pepper, croutons. Toss again. Adjust seasonings and serve, with or without anchovies.

5 tablespoons garlic and herb seasoning
1 tablespoon vegetable oil, or as needed

Steps:

  • Lay bread slices onto a flat surface. Cut circles out of the middle of each slice using a drinking glass; discard bread remainders.
  • Sprinkle about 3/4 teaspoon chili pepper and 3/4 teaspoon garlic and herb seasoning over each side of each bread circle.
  • Lightly grease a skillet with oil and place over medium heat. Cook bread circles in skillet until browned, 2 to 3 minutes per side.

½ bulb garlic, peeled
1 cup extra virgin olive oil
¾ (1 pound) loaf sourdough bread, cubed
1 cup ghee

Steps:

  • Combine garlic and oil in a small saucepan. Simmer until cloves are a light gold color, about 15 minutes. Pour oil through a fine sieve, squeeze all juice from cloves, and then discard the solids. Set garlic oil aside.
  • Preheat oven to 300 degrees F (150 degrees C). Lightly oil a baking sheet.
  • Arrange bread cubes in a single layer on baking sheet. Bake, turning bread cubes periodically, until lightly browned, about 20 minutes.
  • In a large, non-stick skillet, melt 1/3 cup ghee with 1/3 cup garlic oil over medium heat. Cook toasted bread cubes in batches until light to medium golden brown, turning frequently. Add more ghee and garlic oil as needed. Turn out into basket lined with paper towels, and drain for about 20 minutes.

1 teaspoon garlic powder
1/2 teaspoon pepper
1 1/2 teaspoons oregano
3 tablespoons parmesan cheese
1 teaspoon parsley
1 teaspoon season salt
1/2 cup olive oil
1/4 cup fresh lemon juice
2 loaves white bread, crusts removed. cut into 1/4-1/2 inch cubes

Steps:

  • Add lemon zest, garlic powder, pepper,oreagno, parmesan cheese, parsley season salt, olive oil, fresh lemon juice mix with stick blender or whisk together well.
  • In large bowl mix bread cubes with caeser dressing and mix well.
  • Bake on two large cookie sheets 350 for about 15-20 minutes or until toasted. Stirring every 5 minutes. Ovens may vary a bit so watch closely.
  • Cool compelety and store in air tight container.
  • I buy day old bread and put in freezer then when Im ready to make crutons I take the bread out for about an hour then cube it, makes it a little easier, but make sure they are to room temp and soft before adding the ceasar mix.
  • Save the crusts and toast in oven and make bread crumbs.
  • When Im making caesar salad I use this recipe and add 2-3 anchovy fillets. A nice change from creamy dressings.
