These elusive tasty mushrooms are only available for hunting for a short time in the spring. When hunting - -please use a net bag such as the bag that covers your onions. The reason for this: While they are in your bag & you are moving around, the spores can shake free and fall to the ground to produce more mushrooms. Morels take 5 years to produce a nice crop in the wild.

morel, freshly picked
1 gallon water, cold
1 cup salt

Steps:

  • Soak morels for up to 4 hours in salt water. The mushrooms are hollow, and the salt water will kill any little bugs that might be living in them.
  • Drain and rinse with fresh water.
  • Slice at least one side of the mushrooms.
  • Lie mushrooms on a towel.
  • Direct the air flow of a small fan onto the mushrooms and let dry up to 24 hours.
  • The mushrooms will reduce in size drastically. When they are dry, bag them in a ziplock bag and throw them in the freezer to use later.
  • Reconstituting Mushrooms:.
  • Soak mushrooms in broth, wine, or water for up to 5 minutes. They will spring back to the size they were when they were picked.

These prized mushrooms are only around for a short time in the spring and go for top dollar if you can't find your own in the forest, or along the river.

1 pound morel mushrooms
½ cup oil for frying
2 eggs
¾ cup milk
1 (4 ounce) packet saltine crackers, finely crushed
salt and black pepper to taste

Steps:

  • Clean the mushrooms carefully with a damp paper towel or a soft mushroom brush. Cut large mushrooms in half.
  • Heat the oil in a large skillet over medium heat. While the oil is heating, beat the eggs and milk in a shallow bowl. Coat the mushrooms in the egg and milk mixture, then toss them in the cracker crumbs. Carefully place the coated mushrooms in the heated oil. The mushrooms will cook quickly. Cook the mushrooms until they are golden brown on the bottom, then flip them over to brown the other side.
  • When the mushrooms are evenly browned, remove them from the pan to drain on a paper towel. Season with salt and pepper to taste.

If you are a fan of fresh (or even dried) morel mushrooms, this is the soup for you. Everyone who eats morels knows that they go best sauteed with onions, garlic and butter. This incorporates all of those ingredients to create a magnificently creamy soup, strong with morel flavor, but not too overpowering. This isn't healthy eating, and I don't recommend trying to make it that way. Just eat less of it! Serve with crusty bread or garlic croutons.

½ cup butter
1 tablespoon minced garlic
1 large onion, diced
8 ounces fresh morel mushrooms, sliced
1 tablespoon chicken soup base
1 tablespoon all-purpose flour
2 cups water
2 cups heavy cream
⅛ teaspoon ground dried thyme
salt to taste
2 teaspoons ground black pepper

Steps:

  • Melt the butter in a large pot over medium heat. Stir in the garlic, onion, and morels; cook, stirring frequently, until the onions have softened and turned translucent, about 5 minutes. Stir in chicken soup base and flour; cook for 1 to 2 minutes. Pour in water and cream; bring to a simmer, and cook 5 minutes.
  • Puree half of the soup in small batches, filling the blender no more than halfway full each time. Return soup puree to pot. Cook on low 10 to 15 minutes. Season with thyme and salt and pepper before serving.

1 tablespoon flour
1 1/2 cups water
3/4 cup canned milk
1 chicken bouillon cube
salt & pepper
to taste savor salt seasoning

Steps:

  • Saute onion and celery in butter until tender.
  • Crush morels or other mushrooms with rolling pin, set aside.
  • Stir the flour into the onion-celery mixture, add the water and crushed mushrooms. Simmer until the mushrooms are tender, (about 5 minutes).
  • Add bouillon, milk and seasonings. Heat, but do not boil, and serve.
