DRIED FRUIT CHUTNEY
Decades ago when I used to do a little canning, I collected a number of recipes for chutney -- Here's one of them.

Steps:
- In large saucepan, combine all ingredients & bring to boil.
- Reduce heat & simmer, uncovered 20 minutes, or until mixture has thickened.
- Ladle into hot sterilized jars & seal immediately.

DRIED FRUIT CHUTNEY
Every year at Diwali, the Hindu New Year, my father was given boxes of dried fruit as gifts. One Thanksgiving, I was reminded of that tradition when I was given some organic dates and decided to make this chutney instead of cranberry sauce for our holiday table.

Steps:
- Heat the oil in a heavy 6-quart pot over moderately high heat until it shimmers and cook the cinnamon, star anise, and cloves for 1 minute. Add the brown mustard seeds and chile. When the seeds pop and are fragrant, after about 30 seconds, remove the pan from the heat and carefully add the orange juice and apple cider. Bring the mixture to a boil and add the cherries, dates, zest, ginger, apricots, cranberries, fennel, yellow mustard seeds, and vinegar. Briskly simmer the mixture, uncovered, stirring occasionally, until the liquid is reduced and the fruits are softened and tender, about 1 1/2 hours. Stir in salt to taste. Let the chutney cool completely before serving. The chutney keeps in an airtight container in the refrigerator for 1 week.
MEAT LOAF WITH MUSTARD AND DRIED FRUIT

- Preheat oven to 425°F. Combine beef, breadcrumbs, chopped fruits, egg, shallots, 1 tablespoon mustard, sage, salt and pepper in large bowl; mix thoroughly. Shape mixture into 2 oval loaves, each about 1 inch thick, and place on small rimmed baking sheet.
- Bake loaves 10 minutes. Mix preserves and remaining 1 tablespoon mustard in small bowl. Brush preserves mixture generously over loaves. Continue to bake until loaves are cooked through and thermometer inserted into center registers 160°F, about 8 minutes.
DRIED FRUIT CHUTNEY

Steps:
- Soak the apricots overnight, remove from the water and chop into small pieces.
- Put all the fruit and onions in a pan with the vinegar.
- Wrap the chillies and ginger in a piece of muslin and secure.
- Put the muslin bag in with the fruit and vinegar.
- Simmer until the apples are mushy, stirring often.
- Do not allow to stick and burn.
- Remove the muslin bag.
- Add sugar and boil for a further 10 minutes, until chutney thickens.
- Stir often to prevent sticking and burning.
- Pour into hot jars, tie down and seal when cool.

CHUTNEY MEATLOAF
A large moist loaf making great leftovers! Your taste buds will thank you! The roasted garlic and the sweet and hot chutney brings meatloaf to whole nother level! Oh do get an extra bottle of chutney for topping the meatloaf at serving. ;)

Steps:
- Preheat oven to 375 degrees.
- Saute the onions and peppers in a large pot in a touch of olive oil till translucent about 5 minutes.
- Remove from heat add the 6 ounces chutney, garlic, bread crumbs, milk, parsley, salt, pepper, Worcestershire sauce. Combine well then add the eggs, and meats.
- Place in a 2 quart casserole dish and mold the top smooth. Top with 2 ounces of chutney.
- Bake for 70-75 minutes or until center is no longer pink and instant read thermometer reads 160°F when inserted in center of loaf. Let stand, covered, 15 minutes before slicing letting the juices absorb back into the loaf.
SPICED DRIED-FRUIT CHUTNEY

- Stir 1 finely chopped shallot, 1 tablespoon coriander seeds, 1 tablespoon finely chopped peeled ginger, and 1 teaspoon vegetable oil in a medium saucepan over medium heat until fragrant, about 1 minute. Add 1 1/2 cups coarsely chopped dried apricots, 1 cup apple cider vinegar, 1/4 cup coarsely chopped dried figs, 1/4 cup coarsely chopped prunes, 1/4 cup golden raisins, 1/4 cup robust-flavored (dark) molasses, and 1 1/2 cups water; season with salt and pepper.
- Bring to a simmer and cook, adding more water if too thick, until fruit is soft and liquid is almost completely evaporated. Let cool.
TURKEY AND APRICOT MEATLOAF

- Preheat oven to 350°F with rack in middle.
- Soak bread crumbs in milk in a large bowl.
- Meanwhile, cook celery, carrot, onion, and garlic with chile powder and 1/2 teaspoon salt in oil in a large heavy skillet over medium heat, stirring occasionally, until softened, about 10 minutes. Add to bread-crumb mixture with turkey, dried apricots, parsley, 1 tablespoon preserves, 1 tablespoon soy sauce, Worcestershire sauce, eggs, 1 1/4 teaspoon salt, and 1/2 teaspoon pepper and mix with your hands until just combined. Form into a 9- by 5-inch oval loaf (mixture will spread slightly) in a 13- by 9-inch shallow baking dish.
- Stir together water, remaining 2 tablespoons preserves, and remaining 1/2 tablespoon soy sauce and brush over surface of meatloaf. Bake until an instant-read thermometer inserted into center registers 165°F, 1 to 1 1/4 hours. Let stand 10 minutes before serving.
