POLISH STUFFED PEPPERS (PAPRYKA NADZIEWANA)



Polish Stuffed Peppers (Papryka Nadziewana) image

This recipe for Polish stuffed peppers, or papryka nadziewana, can be made with any color pepper, and either raw ground meat or cooked leftover meat.

Peppers
4 bell peppers (any color)
Salt, to taste
Pepper, to taste
Filling
1 pound ground chuck (or half ground beef and half lean ground pork)
1 medium onion (finely chopped)
1 clove garlic (minced)
1 cup cooked rice (or barley or buckwheat groats [kasha])
1 large egg
1 teaspoon Hungarian paprika (hot or mild)
1 teaspoon salt, or to taste
1/2 teaspoon black pepper, or to taste
Optional: 4 slices tomato
2 cups tomato juice

Steps:

  • Gather the ingredients.
  • Wash the peppers, cut off and reserve the tops, and scoop out and discard the insides. (If desired, blanch the peppers in boiling water for 2 minutes and drain.)
  • Season with salt and pepper and set aside.
  • Gather the ingredients.
  • Preheat the oven to 350 F. Lightly coat the bottom of a 9-inch-square pan with cooking spray and set aside.
  • Chop the reserved pepper tops finely and place in a large bowl. Add the ground meat, onion, garlic, rice, egg, paprika, salt, and pepper, and mix well.
  • Stuff each pepper with 1/4 of the meat mixture. Place in the prepared pan.
  • Top each pepper with a slice of tomato, if desired. Pour tomato juice over all. Cover tightly with foil and bake for 1 hour.
  • If the sauce is evaporating too quickly, add a little water.
  • Serve the stuffed peppers with potatoes, dumplings , or noodles, and enjoy.

STUFFING:
8 chicken legs, with skin
juice of 1 lime
1 cup cilantro or Italian parsley
2 garlic cloves
1 teaspoon sugar
1/2 teaspoon cumin
1/2 teaspoon turmeric
1/2 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon coriander
3 tablespoons olive oil

Steps:

  • Place the lime juice, cilantro or Italian parsley, garlic cloves, sugar, cumin, turmeric, black pepper, and salt in a food processor and give it a few good chops. Preheat oven 375°F. Gently pull the skin from the leg back and stuff the mixture into under the skin. Place the legs on a baking dish and bake for 45 to 50 minutes or until a beautiful golden color appears and the juices run clear.

I brought this dish to Easter dinner and it was a hit with all... including my 91 year old father; he loves his sweets. Everyone agreed this is a creamy, rich dessert that reminds you of being a kid and eating drumstick ice cream cones!

1 5 ounce package sugar cones (for ice cream), crushed well (must be sugar cones, no other kind.)
1 stick butter, melted
1 1/3 c crushed spanish peanuts, unsalted (divided)
1 8 ounce package cream cheese, softened
1 c powdered confectioners' sugar
1/3 c peanut butter (crunchy or smooth...both work fine)
1 large tub of cool whip (may use fat-free or sugar-free)
2 4 ounce packages instant chocolate pudding (again, may use fat-free or sugar free)
3 c milk (can use low-fat or even skim milk if you prefer)
1 large hershey bar (refrigerated) for grating

Steps:

  • 1. Preheat oven to 350 degrees. This dessert is layered. First layer: Mix together crushed sugar cones, butter and 1 cup of the crushed peanuts. Press into the bottom on a 9 X 13 glass baking dish. Place in preheated oven and bake 10 minutes to set the first layer or crust. Remove from oven and cool completely before adding the other layers.
  • 2. Second layer: Soften cream cheese, and blend well with peanut butter and powdered sugar. Blend until smooth. Fold in 2 cups Cool Whip. Spread this over the crust layer.
  • 3. Third layer: Mix up your pudding with 3 cups milk and spread over the second layer, spreading it out evenly. Take remaining Cool Whip and sppread over all. Sprinkle 1/3 cup crushed peanuts and grated Hershey bar on top. Put in the freezer, being careful not to freeze all the way. This dessert is best served half-frozen.
  • 4. Note: This dessert is very rich at best. If you are watching your weight or blood sugar, feel free to use fat-free or sugar free products when possible in making this dessert. The taste will not suffer and any little bit helps, right? Bon Apetit' Y'all!!

2 cups crushed vanilla wafers
1 cup chopped Spanish peanut
1/2 cup melted margarine
8 ounces cream cheese, softened
1 cup powdered sugar
1/3 cup crunchy peanut butter
2 cups Cool Whip
2 (3 1/2 ounce) packages instant chocolate pudding mix
3 cups cold milk
3 cups Cool Whip
2 Hershey Bars, shaved
1 cup chopped Spanish peanut

Steps:

  • Mix wafer crumbs, 1 cup nuts and margarine.
  • Press into 13x9 pan.
  • Bake 10 minutes at 350.
  • Cool.
  • Mix powdered sugar, cream cheese and peanut butter until smooth and creamy.
  • Fold in by hand 2 cups cool whip.
  • Spread over cooled crust.
  • Mix pudding with milk and spread over cheese mixture.
  • Refrigerate to set about 10 minutes.
  • Top with 3 cups cool whip.
  • Sprinkle with 1 cup nuts and shaved chocolate.
  • Freeze 1-2 hours then refrigerate 1 hour before serving.
  • Freezes well.

This recipe for gołąbki, or Polish stuffed cabbage, is made with ground pork, ground beef, rice, and garlic, and is cooked in beef broth.

1 whole head cabbage (about 4 pounds)
Salt
For the Filling:
2 tablespoons butter
1 large onion (chopped)
1 pound ground beef
1/2 pound ground pork
1 1/2 cups cooked rice
1 teaspoon garlic (finely chopped)
1 teaspoon salt
1/4 teaspoon black pepper
1 cup beef stock
Garnish: 1 cup sour cream

Steps:

  • Gather the ingredients.
  • Fill a large pot with water, bring to a boil, and salt it .
  • With the help of a sharp paring knife, remove the core from the cabbage by cutting around it. Remove and discard it.
  • Carefully place the whole head of cabbage in the boiling water.
  • Cover the pot and cook the head of cabbage for 3 minutes, or until softened enough to pull off individual leaves. You'll need 18 leaves in total.
  • When leaves are cool enough to handle, use a paring knife to cut away the thick center stem from each leaf. Be careful not to cut all the way through.
  • After retrieving 18 leaves, chop the remaining cabbage and place it in the bottom of a casserole dish with a lid or a Dutch oven .
  • Heat up a large skillet, melt the butter, and add the chopped onion. Cook until tender and remove from the heat to let them cool off.
  • Mix the cooled onion with the beef, pork, cooked rice, garlic, salt, and black pepper until well combined. Don't overmix or the meat will become tough.
  • Flatten a cabbage leaf on a cutting board or work surface and place about 1/2 cup of the meat filling.
  • Flip the right side of the leaf to the middle, then flip the left side.
  • Flip the bottom of the leaf to obtain an envelope-shaped figure. The unstuffed part of the leaf will be triangular in shape.
  • Tuck the leaf away from you to encase the meat and make a neat little roll.
  • Repeat the process with all the leaves.
  • Heat the oven to 350 F.
  • Place the cabbage rolls, seam down, on top of the chopped cabbage in the casserole dish or Dutch oven. Season each layer with salt and pepper.
  • Pour the beef stock over the rolls, cover, and place in the oven.
  • Bake for 1 hour or until cabbage is tender and meat is cooked.
  • Serve with a drizzle of sour cream , or alternatively, mix the pan juices with the sour cream and ladle it over the cabbage rolls. Enjoy.

Stuffed Drumsticks with Bacon, Brandy and Thyme image

6 turkey drumsticks (about 12 ounces each)
2 cups coarsely ground pork
6 strips bacon, finely chopped
1 1/2 teaspoons dried thyme
3/4 teaspoon very finely minced garlic
1 1/2 cups fresh bread crumbs
3 eggs, beaten well
1 tablespoon brandy
3/4 teaspoon salt
3/4 teaspoon fresh ground pepper
Big pinch ground allspice
2 cups brown veal or beef stock
4 tablespoons unsalted butter, chilled, plus extra for basting
Finely chopped parsley, for garnish

Steps:

  • Preheat oven to 375 degrees F.
  • Bone drumsticks completely, or ask your butcher to bone them for you. Remove all bones, cartilage and tendons, but be sure to keep skin intact. Season inside and out with salt and pepper. In a mixing bowl combine next 10 ingredients. Mix thoroughly. Divide stuffing among drumsticks, stuffing each drumstick evenly under skin. Place in a roasting pan, skin side up. Roast for 30 minutes, basting once after 15 minutes with softened butter, or until skin is golden brown and puffy. Remove drumsticks to a warm platter, cover and keep warm while preparing sauce.
  • Place roasting pan over high heat. Add stock and deglaze, scraping up browned bits and incorporating them into sauce. Boil until half of liquid evaporates. Whisk in butter, 1 tablespoon at a time, until incorporated and sauce is lightly thickened.
  • Serve turkey on warm dinner plates, surrounded with sauce and sprinkled with parsley.
