Dry Roasted Almonds image

Dry roasted almonds can make or break a recipe that uses almonds. Once you master this recipe you may never use unroasted almonds again.These roasted or toasted almonds are great for snacking and putting in your favorite trail mix. They are also excellent additions when used in baking and making candy like English Toffee.

1 quart fresh shelled almonds, (about 1 pound plus 6 ounces)

Steps:

  • Spread the 1 quart almonds out evenly on a large baking pan. I prefer to use a standard 9 inch by 13 inch cake pan. Bake in a preheated 275º oven for 1 1/2 hours.
  • Stir once every 20 minutes with a spatula while baking to make sure that the almonds are evenly roasted.
  • After the baking time is up, remove 2 or 3 almonds from the oven and cut in half to check their color. They should be lightly browned on the inside. If still light colored, stir the almonds again and bake for an additional 30 minutes.
  • Remove from oven and allow to cool before storing in a jar with a tight fitting lid for storage.My storage container of choice is a canning jar with a Ball®​ white plastic lid. You should be able to get the lids wherever canning supplies are sold. If not, you can get them on Amazon.com.

This makes raw almonds delicious without using additional oil. They are great by themselves as a snack or mixed in with other dishes--chop roughly and add to green salads for extra protein and crunch, mix with a crumble topping for a lovely, fragrant flavor to your apple or peach crumble, or top your oatmeal with roasted almonds to add more essential vitamins to your meal.

1/2 cup almonds (raw)
1/4 teaspoon kosher salt (optional -- I mainly put this here because recipezaar requires at least two ingredients, as the almo)

Steps:

  • Heat oven to 350 degrees F.
  • Spread almonds on an ungreased cookie sheet.
  • Bake for 10-12 minutes or until they are golden brown and fragrant. Note that because of their high oil content, the almonds will continue to roast after you remove them from the oven.
  • Check to make sure that the almonds have the proper crunch when bitten into. It should taste toasted, not bitter or burnt.
  • Sprinkle with salt if desired.

Not your typical roasted almonds, these have a little kick of chili powder and the depth of more cinnamon than most recipes.

1 egg white
1 teaspoon vanilla extract
3 cups whole almonds
½ cup white sugar
½ cup brown sugar
1 teaspoon ground cinnamon
1 teaspoon chili powder
¼ teaspoon salt

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Lightly grease a 10x15-inch jelly roll pan.
  • Combine egg white and vanilla in large bowl; beat until frothy. Add almonds and toss to coat. Pour almonds into a mesh strainer to drain excess liquid, 5 to 10 minutes. Return strained almonds to the bowl.
  • Stir white sugar, brown sugar, cinnamon, chili powder, and salt together in a bowl. Sprinkle sugar mixture over almonds and toss to coat evenly. Spread coated nuts evenly onto prepared jelly roll pan.
  • Bake, stirring every 20 minutes, until the seasoning clings to the almonds, about 1 hour. Allow to cool completely before storing in an air-tight container.

2 cups whole almonds
¼ cup white sugar
½ teaspoon kosher salt
3 tablespoons honey
3 tablespoons water
1 tablespoon almond oil

Steps:

  • Spread almonds in a single layer on a baking sheet and place in a cold oven.
  • Turn oven on to 350 degrees F (175 degrees C). Bake almonds, stirring occasionally, until light tan and fragrant, 12 to 15 minutes. The nuts will continue to cook after removing from oven.
  • Meanwhile, mix sugar and salt together in a small bowl; sprinkle about 1 tablespoon sugar mixture into a large bowl.
  • Stir honey, water, and almond oil together in a saucepan; bring to a boil. Add almonds; cook and stir until almonds have absorbed all the liquid, about 5 minutes.
  • Transfer coated almonds to the large bowl sprinkled with sugar mixture. Sprinkle remaining sugar mixture over almonds; toss to coat evenly.
  • Spread almonds onto waxed paper to cool completely. Store at room temperature in a tightly covered container or plastic bag.
