These flavorful grilled pork chops are perfect for a weekend dinner party or quick and easy family dinner any night of the week. The rub is a perfect combo of sweet, salty, savory and spicy and is made with common pantry ingredients.

1 tsp salt
1/2 tsp black pepper
2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp oregano
1/4 tsp cayenne pepper

4-6 pork loin chops (3/4 to 1 inch thick)

Steps:

  • In small bowl combine all dry rub ingredients, mix well.
  • Generously coat each pork chop with the spice rub. As the name suggests, rub the spice mix into the meat.
  • Place chops in single layer in a sealed container in the fridge for at least 1 hour for best results.
  • Remove chops from fridge half an hour before grilling to bring up to room temperature.
  • Use a paper towel to coat grill grates evenly but sparingly with canola oil to help prevent food from sticking.
  • Preheat grill to medium high heat.
  • Grill chops for 5 to 7 minutes per side or until juices run clear. Flip only once or twice max.
  • Remove from grill and tent loosely with foil for 5 minutes for maximum juiciness.

3 tablespoons sweet paprika, preferably Spanish
1 tablespoon freshly ground black pepper
1 tablespoon coarse salt, either kosher or sea salt
3/4 teaspoon sugar
3/4 teaspoon chili powder
3/4 teaspoon granulated garlic or garlic powder
3/4 teaspoon onion powder
1/4 to 1/2 teaspoon ground cayenne
Six to eight 10- to 11-ounce bone-in pork rib chops, 3/4 to 1 inch thick
Vegetable oil spray

Steps:

  • At least 1 and up to 8 hours before you plan to grill the pork chops, prepare the dry rub, combining the ingredients in a small bowl. Coat the chops with the spice mixture, place them in a large plastic bag, seal, and refrigerate.
  • Fire up the grill, bringing the heat to medium (4 to 5 seconds with the hand test).
  • Remove the chops from the refrigerator and let them sit covered at room temperature for about 20 minutes.
  • Spray the chops with oil and transfer them to the grill. Grill for 18 to 20 minutes total. Turn onto each side twice, rotating the chops a half turn each time to get criss-cross grill marks. The chops are done when just a hint of pink remains at the center. Serve hot.

  • Mix dry rub ingredients (brown sugar, chili powder, paprika, salt and garlic powder) together in a bowl. Lay pork chops on a cutting board, rub 1/2 dry rub on side facing up.

1 medium onion, chopped
2 garlic cloves, minced
1 can (15 ounces) cannellini beans, rinsed and drained

4 scallions, sliced (white and green parts separated)
1 1-pound package frozen black-eyed peas (4 cups), thawed
2 cups frozen chopped collard greens (about 5 ounces), thawed and squeezed dry
3/4 cup bottled barbecue sauce
1/3 cup dijon mustard
1/4 cup plus 1 tablespoon dark brown sugar
Kosher salt and freshly ground pepper
1 tablespoon smoked paprika
1 teaspoon garlic powder
4 bone-in pork blade steaks or sirloin chops (1/2 inch thick; about 2 pounds)
Vegetable oil, for the grill

Steps:

  • Preheat a grill to medium high. Cook the bacon in a Dutch oven or large pot over medium-high heat, stirring occasionally, until slightly browned and crisp, 5 minutes. Add the scallion whites. Cook, stirring occasionally, until lightly browned and softened, about 2 minutes.

1 tbsp Cowboy Rub
1 tbsp Dried Onion
8 oz Bag Herb-Seasoned Stuffing Mix (Prepare as instructed on the package)

Steps:

  • Sprinkle the dry rub on both sides of the pork chops. Slice each pork chop open and fill with stuffing mix.
  • Insert 2-piece CanCooker racks into the CanCooker and spray the inside with non-stick cooking spray. Add the beer.

  • Make the dry rub: Get out a mortar & pestle, or a spice grinder and add the black pepper, cumin, coriander seed, and fennel seed to it. Then grind up the whole spices until they are broken yet still a little coarse. Finish the dry rub by adding the salt and paprika to these spices and mix them up with a fork or spoon.
  • Preheat your grill to high
  • Rub all of your pork chops with a liberal amount of the dry rub
  • Grill the pork chops: Place your pork chops on your hot grill and cook them for 4 minutes, then flip them over and let them cook for an additional 4 minutes. However, if you have a thick pork chop you will need to increase the time to 5 or 6 minutes each side.
