Duck confit takes a while to prepare properly but is well worth the effort. This melt-in-your mouth duck treat will become a favorite. I buy whole ducks and then remove legs/wings whole and breasts from the bone. Always keep the skin on duck! You can easily double this recipe if you're having a dinner party. I learned this method from Chef Uriah of the Columbian Cafe of Astoria, Oregon. The breasts become pan roasted Muscovy duck (see my recipe) and the legs/wings become confit. Never roast a Muscovy duck whole: the breast comes out dry, musky, and bitter tasting.

1 shallot, minced
¼ cup evaporated cane sugar
¼ cup kosher salt
3 tablespoons coarsely ground black pepper
4 cloves garlic, minced
6 sprigs thyme, chopped
4 duck legs with thighs
4 duck wings, trimmed
4 cups duck fat

Steps:

  • Combine shallot, sugar, salt, pepper, garlic, and thyme in a small bowl. Rub all over duck legs, thighs, and wings.
  • Arrange duck parts skin side-up in a dish and cover with plastic wrap. Refrigerate until the seasoning is well absorbed, 24 to 48 hours.
  • Rinse off the seasoning and pat the duck dry. Arrange duck in a single layer in a 9x13-inch baking pan. Let duck stand until it reaches room temperature, about 30 minutes.
  • Preheat oven to 225 degrees F (110 degrees C).
  • Melt duck fat in a saucepan over medium heat until bubbles begin to form, 6 to 8 minutes. Pour duck fat over the room-temperature duck.
  • Bake duck in the preheated oven until tender and the juices run clear, 2 to 3 hours. An instant-read thermometer inserted near the bone should read 135 degrees F (57 degrees C). Pour off the duck fat.
  • Brush a grill pan with some of the used duck fat and heat over medium-high heat until smoking. Add baked duck; cook in batches until skin is crispy, about 90 seconds per side.

This is a classic French recipe that is easy to make and easy to scale. It makes a great gift for friends and family.

2 uncooked Peking duck legs
1 tablespoon kosher salt
1 lemon, zested and thinly sliced
3 cloves garlic, crushed
1 tablespoon whole allspice berries
1 tablespoon juniper berries
2 sprigs fresh thyme
2 cups rendered duck fat

Steps:

  • Season the duck legs with kosher salt on both sides. Place them in a large resealable bag. Add the lemon zest and slices, garlic, allspice berries, juniper berries and fresh thyme. Seal, and massage the duck legs through the bag until all of the ingredients are evenly dispersed. Refrigerate for 24 hours to marinate.
  • Preheat the oven to 200 degrees F (93 degrees C).
  • Remove the duck legs from the marinade. Rinse them off and pat dry. Place the rest of the contents of the bag into the bottom of an oven safe dish just large enough to hold the legs in a single layer, preferably enameled cast iron or glass. Arrange the duck legs skin side down in the dish. Pour the duck fat into a small saucepan and warm over low heat until liquid. Pour over the duck legs until they are completely covered. If the legs are not covered, you can top it off with some olive oil. As the legs cook, more fat will be rendered from the skin. Cover the dish with a lid.
  • Bake for 6 to 7 hours in the preheated oven, until the meat pulls easily from the bone. Remove the duck legs from the fat and place in a sealable container. You may leave the bones in or remove them. Make sure there is room at the top of the container. Strain all of the solids from the remaining fat and discard the solids. Pour the fat over the duck in the container, covering completely. Seal and allow to come to room temperature. Once the jar is cool, place in the refrigerator and let the duck meat cure for 2 months. Reserve any leftover duck fat for other uses.

20 dried apricots
1 cup cognac
1 tablespoon vegetable oil, or duck fat
1 medium onion, minced
2 medium shallots, minced
6 cloves garlic, minced
4 large eggs, lightly beaten
3 tablespoons coarse salt
1 tablespoon freshly ground pepper
1 tablespoon dried thyme
2 teaspoons ground allspice
2 pounds boneless pork shoulder, finely ground and chilled
2 pounds fresh fatback, finely ground and chilled
1 1/2 pounds skinless, boneless duck breast, finely ground and chilled, plus 1/2 pound, cut into strips
1 pound skinless, boneless chicken breast, finely ground, and chilled
2 apples, peeled, cored, and finely ground
1 pound caul fat, rinsed and patted dry, or thinly sliced fresh fatback
3/4 cup unsalted pistachios, toasted

Steps:

  • In a small bowl, combine apricots and 1/2 cup cognac. Let stand for 30 minutes. Drain, reserving liquid; set aside.
  • Heat the oil in a medium skillet over medium heat. Add the onion, shallots, and garlic, and cook, stirring occasionally, until translucent, about 5 minutes. Transfer to a small bowl, and place in freezer until cold, about 15 minutes.
  • Preheat oven to 325 degrees. In a medium bowl, whisk together the onion mixture, eggs, reserved cognac plus the remaining 1/2 cup salt, pepper, thyme, and allspice; set aside. In a large chilled bowl, combine pork, fatback, ground duck, ground chicken, and apples. Mix well. Add the egg mixture, and mix until well combined.
  • Line terrines with caul fat leaving a 2-inch overhang. Divide half of the meat mixture between the 4 terrines, gently press to pack down. Arrange 5 apricots down the center of each terrine, with the strips of duck and pistachios on both sides. Top with remaining meat mixture. Fold caul fat over to enclose, and trim if necessary. Cover with parchment paper and then the top of the terrine or aluminum foil.
  • Place 2 terrines in each of 2 roasting pans. Add enough boiling water to come halfway up the sides of the terrines. Transfer to oven, and bake until a meat thermometer inserted into the center registers 140 degrees. Remove from oven, and uncover.
  • Place a piece of parchment-paper-lined aluminum foil over each terrine. Cut cardboard to fit just inside the rim of each terrine. Place cardboard on each terrine, and top each with a weight, such as a few cans. Let stand at room temperature for 2 hours. Then refrigerate overnight, and up to 2 days. Unmold or serve directly from the terrine.

1 1/2 pounds rendered duck, goose, or chicken fat (see Note)
6 garlic cloves, peeled
1 large shallot, peeled and coarsely chopped
1 tablespoon kosher salt
2 teaspoons freshly ground black pepper
1 tablespoon dried herbes de Provence (see Note)

Steps:

  • Place the duck breasts in the insert of a 5 1/2 to 6 quart slow cooker and add the fat, garlic, shallot, salt, pepper, and herbes de Provence. Cover, set the slow cooker on HIGH, and cook for 1 hour. Reduce the heat to LOW and cook until the duck is very, very tender--at least 4 and up to 8 hours. Use a slotted spoon to remove the duck from the fat, which can be strained, frozen, and reused. Serve the duck hot or at room temperature, or use it to make cassoulet.
  • There are three ways to get chicken fat for this recipe: You can skim congealed fat off the top of chicken soup or stock, buy it in a plastic tub from a kosher butcher, or make it yourself. To make your own, place raw chicken fat in a heavy saucepan and cook very slowly over medium-low heat until the fat has melted, the connective tissue has darkened and crisped, and any water has evaporated. Strain the rendered fat into a bowl. Rendered chicken fat can be kept in a sealed container in the freezer for up to 6 months.

"CHEATER'S" DUCK CONFIT

4 very fatty large duck legs
Kosher salt
Olive oil
4 large onions, sliced
2/3 bottle white wine
1 bundle thyme
10 bay leaves
1 bunch dandelion leaves
Red wine vinegar, to taste

Steps:

  • Season the duck legs with salt. Coat a large wide pot lightly with olive oil. Lay the duck legs skin side down, in a single layer, in the pan.
  • Cook the duck legs low and slow over low heat to render the fat. This process will take a while, don't rush it. It is really important to render as much fat out of the duck legs as possible. Once the pan is full of fat, turn up the heat and brown the duck legs on both sides.
  • Preheat the oven to 400 degrees F.
  • Once the legs have rendered and are nice and brown, remove them from the pan and reserve. Add the onions and season with salt. Stir to coat with the duck fat. Cover and cook over medium heat for 15 to 20 minutes. Once the onions are really nice and wilted, remove the lid and cook for another 15 minutes or until the onions start to caramelize. Taste to make sure they are very well seasoned, add salt if needed. Return the duck legs to the pan, snuggle them in with all the onions and add the wine, thyme and bay leaves.
  • Cover the pan and place in the preheated oven. Braise the duck in the oven for about 90 minutes. Stir the onion and duck every 30 minutes to be sure that the onions are not burning. When done, the duck should be incredibly flavorful, tender and falling off the bone.
  • Remove the tough lower stems from the dandelion greens, wash and spin them dry. Cut them into 1 -inch lengths. Place the greens in a large bowl with red wine vinegar. Season with salt and some of the warm duck fat. Strain some the onions out of the duck fat and toss them in with the greens.
  • Place a large mound of the dressed dandelion greens on each serving plate, lay a duck leg on the greens and top with a little more of the onions.
  • It's just ducky!!!

  • Rub salt, pepper and the minced garlic all over the duck and under the skin. Place the duck, breast down, in a deep braising pan and add duck fat to fully submerge; the amount of fat will vary depending on pan size.
  • Place the braising pan in the oven and cook for no less than 5 hours (see Cook's Note).
  • Remove the duck from the fat and gently pull the meat off of the bones.

2 sprigs rosemary
2 fresh sage leaves
1/4 orange peel without the pith
1 teaspoon kosher salt
1/4 teaspoon cracked black pepper
2 cups rendered duck fat
4 medium russet potatoes
8 cups oil
6 cups chicken stock
1 teaspoon corn starch
2 cups cheese curds
Salt and pepper

Steps:

  • For the duck: Place the duck legs in a shallow pan. Rub the the garlic, thyme, rosemary, sage, orange peel, salt and pepper into the duck legs. Cover with plastic wrap and let sit in the refrigerator for 24 hours.
  • Preheat the oven to 250 degrees F.
  • After the duck has been in the fridge for 24 hours, rub off the salt and herbs and set aside. Place the herb mix into a colander and rinse off the salt. Pat the herb mix dry and add back to the duck. Cover the duck and herb mix with the rendered duck fat and cook in the oven until the meat is falling off the bone, about 2 hours 30 minutes.
  • When finished cooking, take the duck legs out of the fat and cool. After the duck is cool, take the meat off the bone. Set the meat aside for later use.
  • For the French fries: Cut the potatoes to desired French-fry size. Place in cold water for 1 hour.
  • Heat the oil in a heavy-bottom pan until it reaches a temperature of 250 degrees F. Line a half sheet tray with paper towels.
  • Pat the uncooked French fries dry, add to the oil, and cook until the fries are soft all of the way through and not crispy, about 5 minutes. With a slotted spoon, remove the fries from the oil and place on the prepared half sheet tray. Turn the heat up on the oil to 350 degrees F.
  • For the sauce: Reduce the chicken stock by two-thirds and set aside.
  • For the assembly: Add the duck into the reduced chicken stock.
  • In a small bowl, whisk the corn starch and 1/4 cup water until there are no lumps.
  • Heat the stock and duck to a gentle boil and add the corn starch mixture, and gently boil for 45 seconds.
  • Take the blanched fries and put into 350 degree F oil until crispy and golden brown, 2 minutes.
  • Put the fries into a mixing bowl. Add the cheese curds. Sprinkle with salt and pepper and put onto a plate.
  • Spoon the duck and sauce over the fries, and serve.

6 branches rosemary or thyme
2 cups dry white wine
1 1/2 cups water
Large can rendered duck or goose fat (about 16 ounces)
3 5- to 6-pound whole ducks (use Moulard ducks, if possible)
1 tablespoon coarse sea salt
About 2 tablespoons Mixed Spices*
1/2 tablespoon saltpeter (potassium nitrate), available at some specialty stores or order from a pharmacy
1/2 tablespoon black pepper
6 branches rosemary or thyme
2 cups dry white wine
1 1/2 cups water
Large can rendered duck or goose fat (about 16 ounces)

Steps:

  • Cut up ducks: Separate thigh-leg portions in one piece. Bone thigh, leaving it attached to leg bone. Cut off top inch of leg bone with a heavy cleaver. Trim all visible fat from thigh-leg pieces; reserve fat in a heavy saucepan. Remove duck breasts and reserve for another use. Cut away as much fat and skin from the carcass as possible, chop in small pieces, and add to reserved fat.
  • Marinate duck pieces: Sprinkle thigh-leg portions all over with salt and turn skin-side down. Sprinkle with mixed spices, saltpeter and pepper. Place herb sprig on each portion. Press together 2 pieces to make 3 packages of thigh-leg portions with skin on outside. Place in a nonreactive baking dish or roasting pan, cover tightly and marinate 24 hours, refrigerated.
  • Render duck fat: Add 1 1/2 cups of the wine and just enough water to saucepan of reserved fat to moisten. Heat pan over medium heat and simmer for about 1 hour, or until all wine and water has evaporated, and only golden duck fat remains. Strain out cooked skin and reserve fat.
  • Prepare confit: Preheat oven to 300 degrees. Remove duck thigh-leg pieces from refrigerator, discard herb sprigs and pat dry with paper towels. Brush lightly with rendered fat and broil in a preheated broiler, skin-side up, until skin browns, about 4 minutes. Remove from heat, sprinkle with the remaining 1/2 cup wine and let rest for several minutes. Meanwhile, heat rendered duck fat in a large, heavy casserole. When fat boils add duck pieces. Add enough additional rendered duck or goose fat to cover. Bake covered in 300 degree F oven, 2 hours, or until duck is extremely tender, but not falling apart. Place a rack or crisscross a pair of chopsticks in bottom of a heavy earthenware crock. Lay duck pieces on rack, then pour warm fat over to completely cover and seal pieces. When cool, cover top of crock and refrigerate at least 24 hours before serving. Duck will keep, refrigerated, for several weeks.
  • To finish: Preheat oven to 400 degrees. Remove duck pieces from crock and scrape off most of fat. Place in a roasting pan and heat in a 400 degree oven until crisply brown, about 15 minutes. Serve with garlic potatoes Sauteed in some duck fat.
  • * Mixed Spices: Combine 1 teaspoon each crumbled dried basil, crumbled dried thyme, freshly-grated nutmeg, ground cloves, ground white pepper, 1/2 teaspoon cayenne and 1 bay leaf, crumbled. Yield: about 2 tablespoons

1 lb fettuccine pasta

2 tablespoons olive oil
1/2 tablespoon duck fat
2 garlic cloves, chopped
1 shallot, sliced
1 cup dried apricot, sliced
1/2 cup crushed hazelnuts
1/2 cup dry white wine
1 cup chicken stock
4 tablespoons butter, softened
1 tablespoon chopped fresh thyme
4 tablespoons chevre cheese
fresh ground pepper

Steps:

  • remove the bones from the confit, chop the meat into bite-size pieces.
  • cook the fettucine according to package directions, drain, set aside.
  • heat olive oil and duck fat in a skillet.
  • add garlic, and shallot, cook 2 minutes.
  • add apricots, cook 1 minute.
  • add hazelnuts and wine, cook over low heat, stirring until reduced by half.
  • add stock and duck, reduce by half, 6-8 minutes.
  • stir in butter, thyme and pepper.
  • mix some sauce into the fettucine.
  • spoon pasta onto 4 plates.
  • top each with sauce and 1 tbsp chevre.
  • serve.

4 teaspoons kosher salt
2 bay leaves, broken into pieces
5 sprigs fresh thyme
3 garlic cloves, crushed and peeled
1 1/2 cups lard or 1 1/2 cups additional duck fat

Steps:

  • To cook one duck, you need about 2 1/2 cup duck fat. A 4.5 lb. duck renders at least 1 cup of fat. Ask your butcher for extra duck fat, or you'll need another cooking fat to supplement. I'd use a mild lard; it's flavor isn't obtrusive. A 4.5 lb. Long Island duck typically yields about 8 oz confit meat (equal parts leg and breast meat).
  • PREPARE THE DUCK: Cut the legs and each breast half from the duck. Trim any excess skin and fat from the legs and save for rendering.
  • Gently but firmly pull the skin from the breast meat. Set the skin aside and put the breast and legs in a baking dish.
  • Sprinkle liberally with the salt. Nestly the bay leaves, thyme and garlic among the duck pieces. Cover with plastic and refrigerate for 24 hours.
  • RENDER THE FAT: Trim all the skin and fat from the carcass. Put the skin and fat, including the skin from the breasts and trimmings from the legs in a small heavy saucepan over low heat. Cook, partially covered, at a gentle simmer, stirring occasionally to prevent the skin from sticking.
  • After about 1 1/2 hours, the skin will be a deep golden in color and crisp, meaning it has rendered almost all of its fat. Take the pan off the heat and let it cool slightly.
  • Strain the fat into a container, seal it, and refrigerate until ready to use. The crisped skin may be eaten or discarded.
  • COOK THE DUCK: In a heavy, 1 1/2 qt saucepan, melt the rendered fat over low heat. Blot the duck pieces with paper towels to remove any excess salt and to dry them. Put the duck in the pan, along with garlic, thyme and bay laves. Arrange the pieces so that they're all submerged. If needed, add more lard.
  • Cook, uncovered, at a very gently simmer, between 185 degrees and 195 degrees, for 2 hours. Do not stir, and never let it boil. After 2 hours, the duck confit will be very tender and will come easily off the bone.
  • Lift the duck from the fat using tongs and either use imediately or cool and store, covered, in the refrigerateor for up to a week.

Duck confit is one of those foods that began as a method of preserving and continues because it tastes so damn good. It's a simple enough process, and the results are dependable. It's best when you use duck fat as a cooking medium. While not exactly a pantry staple, duck fat isn't terribly expensive if you buy it from a specialty retailer that makes most of its money from other parts of the duck (like Hudson Valley Foie Gras: www.hudsonvalleyfoiegras.com). Fortunately, confit is not bad with olive oil either, though when you do the math on the two and figure in how delicious potatoes sautéed in leftover confit fat are, duck fat becomes increasingly appealing. My favorite way to serve duck confit is with a simple and strongly flavored salad of bitter greens-like the Green Salad with Vinaigrette, Roquefort, and Walnuts on page 165 minus the blue cheese and made, if possible, with a fifty-fifty walnut oil/olive oil dressing.

1 cup salt
2 tablespoons dried thyme
2 bay leaves
1 tablespoon black pepper
8 duck legs
20 garlic cloves, peeled, optional
About 2 quarts rendered duck fat or grapeseed or extra virgin olive oil

Steps:

  • Mix or grind together the salt, thyme, bay leaves, and pepper. Put the duck in a roasting pan or broad, shallow bowl and rub this mixture all over it. Nestle the garlic if you're using it in among the legs and refrigerate for 24 to 48 hours.
  • Remove the duck from the salt mixture and rub off any excess salt. Preheat the oven to 300°F. Warm the duck fat so that it is pourable. Place the duck and garlic in a baking dish in one layer. Cover the legs with the duck fat. (You may not need all the fat, depending on the size of your pan; and if you do not have enough, add olive or other oil as necessary.) Put in the oven and cook, undisturbed-the mixture should send up a few bubbles a minute, but no more than that; adjust the heat accordingly-for 3 to 4 hours or until a fork pierces the leg with little resistance. Cool in the fat for about an hour.
  • The legs can be stored in or out of the fat. To store them in the fat, simply refrigerate the whole roasting pan or combine the duck and the fat in a bowl and refrigerate. To store out of the fat, remove from the fat while still warm, then cool to room temperature. Wrap each leg individually and refrigerate. The legs (and garlic) will keep for up to 2 weeks; the fat will keep, refrigerated, indefinitely.
  • To serve, heat a couple of tablespoons of the fat in a skillet over medium-low heat. Add 1 or more legs (and a clove or 2 of garlic) and brown slowly, turning as necessary, until crisp, 10 to 15 minutes. Serve with a salad (see the headnote) or with warm crusty bread.

Duck rillettes is one of the most amazing culinary magic tricks of all time. Even though most of the spread is made up of fairly lean duck meat, by emulsifying it in a little butter, duck fat, and duck gelatin, you'll swear the final product has the fat content of the finest foie gras torchon. By the way, I miss foie gras torchon.

1 ½ tablespoons kosher salt
2 teaspoons ground black pepper, or more to taste
2 teaspoons dried thyme
12 cloves garlic
6 (1/4 inch thick) slices fresh ginger
1 orange, zest cut into thin strips
1 bunch fresh thyme, plus more for garnish
3 bay leaves
1 whole duck
2 tablespoons unsalted butter, softened
1 tablespoon brandy (such as Armagnac)
2 teaspoons chopped fresh parsley
1 teaspoon chopped fresh chives
½ teaspoon Dijon mustard
1 pinch cayenne pepper
salt and ground black pepper to taste
½ teaspoon grated orange zest

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Line a 9x13 baking dish with 2 pieces of aluminum foil.
  • Stir kosher salt, 2 teaspoons black pepper, and dried thyme together in a bowl. Mix garlic, ginger, orange zest strips, fresh thyme, and bay leaves together in another bowl.
  • Season duck all over, inside and out, with about 2/3 of the kosher salt mixture. Fill duck cavity with garlic mixture.
  • Place duck, breast-side up, into prepared baking dish and season with remaining salt mixture. Wrap duck tightly in aluminum foil.
  • Roast in the preheated oven until meat pulls away from the bones, 5 to 6 hours. Cool duck with its accumulated juices, wrapped in aluminum foil, to room temperature. Chill in the refrigerator for 12 hours or overnight.
  • Pick meat from bones and place in a bowl.
  • Spoon all accumulated juices in the foil into a saucepan and place over medium-high heat. Cook until hot throughout; strain through a fine-mesh strainer into a bowl. Let fat and stock separate; transfer fat from the top to another bowl.
  • Mash duck meat, 3 tablespoons duck fat, 2 tablespoons duck stock, butter, brandy, parsley, chives, Dijon mustard, cayenne pepper, salt, and ground black pepper together in a bowl with a wooden spoon; transfer to a sealable container, press down, and drizzle a little duck fat over the top. Sprinkle thyme leaves, black pepper, and orange zest over the top. Seal the container and refrigerate for the flavors to blend, 1 to 3 days.

4 1/2 pounds duck legs and thighs, attached (6 leg and thigh combinations)
3 tablespoons coarse salt
1 teaspoon juniper berries, crushed with a rolling pin or in mortar and pestle
3 bay leaves, crumbled
6 garlic cloves, smashed and peeled
7 cups (2 1/2 pounds) duck fat

Steps:

  • Trim fat from legs and thighs, leaving skin intact over meat, but removing excess. In a bowl, combine duck with salt, juniper berries, bay leaves, and garlic, and rub salt mixture all over the duck to cover completely. Cover and refrigerate at least 24 hours and up to 2 days.
  • Remove from refrigerator and rub off excess cure (reserve garlic). Melt duck fat over medium heat in a Dutch oven large enough to hold duck, with about 3 inches space at the top. Add duck, skin side down, and heat until fat reaches about 200 degrees (test with a candy thermometer or electronic probe.) The surface should look like it is gently boiling (but should not actually be at a boil). Adjust heat if necessary to keep temperature consistent throughout cooking. Cook until the fat is clear and a knife stuck into one of the legs slides out easily, about 3 hours.
  • Transfer the legs to several glass, stainless-steel, or glazed-stoneware containers. Strain fat, discarding any solids and pour, still warm, over legs, making sure they are completely covered. Cool to room temperature, then refrigerate until ready to use, up to 3 weeks.
  • Remove desired amount of confit from fat, scraping off any excess, and keeping remaining legs covered with fat. Place skin side down in a cold cast-iron skillet or other heavy skillet. Place over medium-low heat and cover. Cook until skin is crisp, spooning off excess fat as it cooks, about 10 minutes. Serve as desired.

Duck Confit: Once esteemed as a preservation method, cooking and keeping duck in its rendered fat results in meltingly tender, moist, and extremely flavorful meat which can be used in a variety of simple preparations.

3 tablespoons salt
4 cloves garlic, smashed
1 shallot, peeled and sliced
6 sprigs thyme
Coarsely ground black pepper
4 duck legs with thighs
4 duck wings, trimmed
About 4 cups duck fat

Steps:

  • 1. Sprinkle 1 tablespoon of salt in the bottom of a dish or plastic container large enough to hold the duck pieces in a single layer. Evenly scatter half the garlic, shallots, and thyme in the container. Arrange the duck, skin-side up, over the salt mixture, then sprinkle with the remaining salt, garlic, shallots, and thyme and a little pepper. Cover and refrigerate for 1-2 days.
  • 2. Preheat the oven to 225°F. Melt the duck fat in a small saucepan. Brush the salt and seasonings off the duck. Arrange the duck pieces in a single snug layer in a high-sided baking dish or ovenproof saucepan. Pour the melted fat over the duck (the duck pieces should be covered by fat) and place the confit in the oven. Cook the confit slowly at a very slow simmer - just an occasional bubble - until the duck is tender and can be easily pulled from the bone, 2-3 hours. Remove the confit from the oven. Cool and store the duck in the fat. (The confit will keep in the refrigerator for several weeks.)
