An amazing spice and nut mixture that can be sprinkled on salads or pasta dishes, mixed with olive oil and brushed on pita or pizza dough, or coated on chicken or fish and then grilled. You can also take some great bread, dip it in olive oil, then in the Dukkah... heaven. Enjoy!

1 cup of shelled pistachio nut
1 cup almonds
1 tablespoon whole coriander seed
1 tablespoon whole cumin seed
1/2 teaspoon dried thyme
1/4 cup sesame seeds
1/4 teaspoon salt

Steps:

  • Firstly toast the nuts in a hot oven for about 15 minutes, stirring frequently to prevent burning.
  • Toast the spice seeds and sesame seeds separately in the same way.
  • Cool and combine with the remaining ingredients in a food processor.
  • Grind the mixture until it resembles small breadcrumbs.
  • The mixture should be very dry and crumbly, not a paste.
  • Be careful as over processing can release the oil from the nuts making the mixture moist, which you don't want.

Egyptian Dukkah Recipe image

Quick, homemade Egyptian dukkah recipe with nuts, seeds, and a few warm spices. I like to use a combination of three nuts here (hazelnut, almonds and walnuts), but you can use just one if you like. Use dukkah as a snack; to coat meat, chicken or fish; or as a nutty finishing touch over soup, salad or even roasted vegetables. Store in tight-lid mason jar for up to 2 weeks.

1/2 cup hazelnuts
3 tbsp almonds
4 tbsp white sesame seeds
3 tbsp shelled pistachios
1 tbsp fennel seeds
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp cayenne pepper
kosher salt

Steps:

  • Place the hazelnuts and almonds in a dry cast iron pan (do NOT add oil). Toast briefly over medium-high heat, tossing regularly, until the nuts gain some color (watch for nuts to turn a nice golden brown). Transfer to a side dish for now.
  • Place the sesame seeds in the same skillet and return to the heat. Toast over medium heat, tossing regularly, until the sesame seeds turn golden brown (this will be fairly quick so watch carefully).
  • Add the toasted nuts and sesame seeds to the bowl of a small food processor fitted with a blade. Add the pistachios, fennel seeds, spices, and a generous dash of kosher salt. Pulse for a few seconds until you reach a nice coarse mixture (Do not over process the dukkah. The mixture should not be too fine. See photos and video for exact texture).
  • Transfer the dukkah to a bowl to serve. Add a small bowl of extra virgin olive oil and your favorite bread for dipping (I like pita bread or even Jerusalem bagel). You can also store the dukkah in a tight-lid jar for up to 2 weeks to use as a topping for salad, soup, chicken, meats, or roasted vegetables!

2 egg whites
½ cup Italian-seasoned bread crumbs
⅓ cup finely chopped onion
⅓ cup Worcestershire sauce
¼ cup ketchup, divided
1 ½ tablespoons brown sugar
1 teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a loaf pan lightly with cooking spray.
  • Combine beef, egg whites, bread crumbs, onion, Worcestershire sauce, 2 tablespoons ketchup, brown sugar, salt, and pepper in a bowl. Press into the prepared loaf pan.
  • Bake in the preheated oven, uncovered, until no longer pink in the center, about 45 minutes. Spread remaining ketchup over the top and continue baking until ketchup bubbles and thickens, about 15 minutes more.

1 green bell pepper, diced
1 bunch green onions, diced
4 ounces sliced fresh mushrooms
4 ounces saltine crackers, finely crushed
2 eggs
1 (1.25 ounce) package beef with onion soup mix
1 ½ cups ketchup
1 tablespoon yellow mustard
2 teaspoons brown sugar

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large mixing bowl, combine the ground beef, green pepper, green onion, mushrooms and saltine crackers. Stir in the eggs and the beef with onion soup mix; mix thoroughly.
  • Press mixture into a 9x13 inch baking dish.
  • In a small mixing bowl, whisk together the ketchup, yellow mustard and brown sugar. Mix thoroughly and pour over the meat mixture, spreading evenly.

1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
  • In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.

2 large eggs
2 tablespoons minced fresh rosemary
1 tablespoon minced garlic
1 tablespoon Dijon mustard
½ teaspoon salt, or to taste
½ teaspoon freshly ground black pepper, or to taste
¼ teaspoon crushed red pepper flakes, or to taste
1 cup diced white onion
1 cup diced button mushrooms
¾ cup finely chopped red bell pepper
⅔ cup finely chopped walnuts
2 pounds ground bison
3 slices reduced-sodium bacon

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine eggs, rosemary, garlic, Dijon mustard, salt, black pepper, and red pepper flakes in a large bowl. Briskly stir until all ingredients are mixed together and the eggs are well blended.
  • Add onion, mushrooms, bell pepper, and walnuts; stir to combine. Add ground bison and mix until everything is well combined.
  • Turn out mixture onto a 9x13-inch metal baking pan and shape into a loaf, about 9 inches long and 5 inches wide.
  • Place bacon strips along the length of the meatloaf and secure the ends with wooden toothpicks.
  • Bake in the preheated oven until the juices run clear, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C).
  • Remove from the oven and allow to sit, uncovered, about 5 minutes. Carefully transfer onto a cutting board or serving platter.
  • Remove toothpicks and slice into 1/2-inch slices to serve.
