Yeah, same story as the Pancake recipe - Steve and I were watching $40 a day in Amsterdam and he got excited about the food he saw. I watched this 6 times to figure out recipes from this Amsterdam Episode. Anyhoo, This was what the host had for breakfast at a place called "De Prins" next to Anne Frank House.

1 rolls, Dark Bread or 1 grain bread
1 ounce of mix greens
1 slice gouda cheese (any Dutch cheese) or 1 slice havarti cheese (any Dutch cheese)
2 slices tomatoes
4 slices cucumbers
1 hard-boiled egg, sliced
1 ounce mixed sprouts

Steps:

  • Slice roll in half.
  • Butter top and bottom of sliced roll.
  • Stack mixed greens, Dutch cheese, sliced egg, tomatos, cucumbers, sprouts and sprinkle with fresh parsley.
  • Serve with black European coffee.

Posted for ZWT6. I grew up in a very Dutch community in Iowa and had these all the time growing up....yummy! Prep time is an estimate. Note: These can be made ahead of time; refrigerate or freeze and reheat before serving.

2 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup vegetable shortening
1 egg, beaten
1/2 cup milk
1 lb lean pork sausage
1/2 lb ground beef
1/4 cup breadcrumbs
2 tablespoons cream
salt and pepper, to taste

Steps:

  • For Dough:
  • Sift dry ingredients together.
  • Cut shortening into dry mixture.
  • Mix beaten egg and milk and add to the flour mixture.
  • On floured surface, knead dough 8 to 10 times.
  • Divide dough into 2 parts and roll each half to 1/4 inch thickness. Use a medium-sized cookie cutter to cut 15 rounds of dough from each half.
  • For Filling:
  • Blend all ingredients together.
  • Shape 30 small rolls of meat (like link sausages).
  • Assembly:
  • Place 1 roll of filling in each pastry round; fold pastry over the filling and seal edges. Place on baking sheets with raised edges.
  • Bake at 350 degrees for 40 minutes.
  • Serve hot.

2 ⅔ cups unbleached all-purpose flour
3 tablespoons malted milk powder (such as Carnation®)
2 ½ tablespoons white sugar
2 ¼ teaspoons active dry yeast
1 teaspoon salt
1 ¾ cups whole milk
¼ cup water
¼ cup butter
3 eggs
1 teaspoon vanilla extract

Steps:

  • Sift flour, milk powder, sugar, yeast, and salt together in a large bowl.
  • Combine milk, water, and butter in a small saucepan over low heat. Heat until an instant-read thermometer inserted into the mixture reads 125 degrees F (52 degrees C), about 5 minutes; butter may not melt completely.
  • Pour milk mixture over flour mixture in the bowl; add eggs and vanilla extract. Mix until batter is thoroughly blended. Cover bowl loosely with plastic wrap. Refrigerate, 8 hours to overnight.
  • Preheat a waffle iron according to manufacturer's instructions.
  • Pour 1 cup batter onto the preheated waffle iron; close and cook until the iron stops steaming, about 5 minutes.
