BAKED APPLE ROSES
These were inspired by a cook named Ana, a Brazilian food blogger living in Italy. I really hope you give these gorgeous looking, and very delicious apple roses a try soon. Enjoy!

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Butter 2 small ramekins (6 to 8 ounce) and dust with white sugar.
- Place apple slices on a plate, overlapping slightly if necessary. Microwave on High about 45 seconds just until slices have softened a bit. Cover plate with plastic wrap and a kitchen towel.
- Mix together sugar and cinnamon in a bowl.
- Roll puff pastry sheet to less than 1/8-inch thickness. Using a pizza cutter, cut two 3-inch by 12-inch rectangles. Reserve remaining pieces for another use.
- Spread melted butter over dough; top with a generous amount of cinnamon-sugar. Place apple slices along 1 long edge of dough, about 1/4 inch beyond edge of dough, overlapping slices slightly. Fold bottom half of dough over the apple slices to form a long "folder" of dough with rounded edges of apple slices exposed.
- Beat egg and water together in a bowl. Paint surface of dough with egg wash. Sprinkle with more cinnamon-sugar, to taste.
- Starting from one end, roll dough not too tightly to form a rose-shaped pastry. Seal roll with end of dough strip.
- Transfer roses to prepared ramekins. Sprinkle with a little more cinnamon-sugar. Place ramekins directly on middle rack of preheated oven.
- Bake until well browned, about 45 minutes. Remove ramekins with tongs and place on baking sheet to cool 5 to 10 minutes. Remove apple roses from ramekins and finish cooling on rack. Dust with confectioners' sugar before serving.

APPLE ROSE PUFF PASTRY RECIPE
This Apple Rose Puff Pastry Recipe is the perfect addition to any brunch table with fresh, baked apples, warm cinnamon and flakey puff pastry.

- In a medium-large mixing bowl, put apple slices in with water (covering the apples) and 2 tablespoons of fresh-squeezed lemon juice. This step keeps the apples from turning brown.
- Microwave the apples for 3 minutes - this helps the apples soften, so they do not break when you roll them. Alternately, you can simmer them on the stovetop for a few minutes.
- On a floured surface, using a rolling pin, roll out the puff pastry dough, so that it's 12 x 9 inches (30 x 22 cm). Using a knife or pizza cutter, cut the dough into 6 strips, about 2 x 9 inches each ( 5 x 22 cm).
- In a small bowl, mix 3 tablespoons of apricot jam with two tablespoons water. Microwave for 1 minute. Using a pastry brush, brush the surface of the dough with the apricot-water mixture.
- Preheat oven to 375 degrees F (190 degrees C).
- Grease a 6 muffin, muffin tin (if it's silicone, there's no need to grease it), set aside.
- Using a colander, drain the apples from the lemon-water mixture.
- Place the apple slices, overlapping each other on each puff pastry strip so that the skin side is up.
- Sprinkle the open apple slice pastry strip with cinnamon.
- Fold over the puff pastry strip to cover the bottom edge of the apples.
- Starting at one end, roll the apple slice filed dough strip, making a circular roll.
- Place the completed apple rose in the prepared muffin tin. Repeat 5 more times.
- Bake in preheated oven for 40-45 minutes or until fully cooked. Use a foil tent over the apple roses to prevent the tops from burning, in the last 10-15 minutes, if needed.
- When the apple roses are done baking, allow them to cool and then sprinkle with confectioner's sugar before serving, enjoy!

APPLE CRESCENT ROSES
Roses never smelled-or tasted-so sweet! Our apple crescent rose pastries are ready in 45 minutes and are a delicious addition to any brunch.

- Heat oven to 400°F. Grease or spray 9 regular-size muffin cups.
- Wash and core apples. Thinly slice each one, leaving the peel on.
- In 2-quart saucepan, heat 4 cups water, 4 tablespoons sugar and the lemon juice to boiling. Add the apple slices; boil about 3 minutes or until apples are soft. You want to be easily able to bend them without breaking.
- Drain apples, and place on paper towels to dry and cool completely.
- Sprinkle flour on work surface, and roll out dough sheet. Sprinkle 5 tablespoons sugar and the cinnamon on surface of dough. Using pastry cutter (or pizza cutter), cut dough into 9 (1-inch) strips.
- Arrange cooled apple slices end to end down each strip. Carefully roll up each strip, and place in muffin cup.
- Bake 20 to 25 minutes or until nicely golden. Remove from pan, and cool on cooling rack. Serve and enjoy!

APPLE ROSES RECIPE
Steps:
- Thaw puff pastry
- Pre heat oven to 390 F and cut out rectangles from the baking paper.
- Cut apples in half, core and cut into thin slices.
- Place slices in a microwave bowl and sprinkle lime juice. Mix well.
- Place in microwave and keep on high for about 2 1/2 minutes or until apple slices are soft enough to be rolled (experiment first as microwave ovens have different settings).
- Strain apples through a fine sieve and discard juice
- On a floured surface, roll out the pastry sheet until half thin.
- Using a pastry or pizza wheel, divide in strips, about 4" wide.
- Place one strip on the counter and line apple slices along one side of the strip, overlapping one another. The top (skin side) of the slices should stick out a little.
- Using a teaspoon, sprinkle cinnamon and brown sugar.
- Fold up the bottom part of the strip.
- Starting from one end, carefully roll the dough, keeping the apple slices in place.
- Place in the baking paper rectangles then place in a regular muffin cup.
- Bake for about 25 minutes or until pastry is golden.
- Dust with powdered sugar - optional.
- This apple roses recipe tastes just as great served cold or warm.
BAKED STUFFED APPLE
An apple is filled with a cinnamon cheesecake center. I used a Braeburn apple but any variety will work. Great for a cold night! Serve with whipped cream or a scoop of vanilla ice cream.

- Preheat the oven to 375 degrees F (190 degrees C).
- Cut the stem out of the apple and hollow out the center until it is about 1 1/2 inches wide without going through the bottom. In a small cup, stir together the cinnamon, nutmeg and sugar. Set aside half of this mixture, and mix the rest with the cream cheese and dried cranberries.
- Sprinkle some of the reserved cinnamon sugar into the apple's cavity. Fill with the cream cheese mixture, and sprinkle the remaining cinnamon sugar on the top. Place the apple in a small baking dish.
- Bake for 35 to 40 minutes, until the apple is tender enough to easily pierce with a fork.

- Trim the tops and scoop out the center and the seeds of each apple and rub the edges of the trimmed fruit with the lemon. In a medium bowl, combine the butter, cereal, sugar, and walnuts. Fill the apples with the cereal mixture. Set the apples upright in muffin tins and bake until tender and bubbly, about 20 minutes. Transfer to serving dishes, top with ice cream and serve hot.

- Slice Apple into thin slices. put in bowl with lemon juice and and water to cover. Microwave for 3 minutes.
- Roll out puff pastry - enough to make 6 strips 3 inches wide. Mix apricot jam with 2 tbsp water. Spread along centre of puff pastry.
- Place apple slices along the top of the strip, slightly overlapping. Sprinkle over some cinnamon. Fold over the bottom of the pastry.
- Roll up pastry and put in a muffin tin. Bake for 35 - 45 mins. Allow to cool.

- Preheat oven to 350 degrees F. Butter 10 cups in a standard 12-cup muffin tin. Set aside.
- In a medium pot, combine 8 cups water and lemon juice. Bring to a boil over high-heat and reduce to a brisk simmer.
- Cut the apples in half. Remove core and cut apples crosswise into paper-thin slices. Transfer slices to simmering acidulated water. Cook until slices bend easily, about 3-4 minutes. They be soft enough to bend but not break when rolled. Drain and transfer to a plate or small baking sheet.
- Combine apricot preserves and 2 tablespoons water in a small bowl. If apricot preserves is very firm, transfer to microwave and heat gently, stirring at 15-second intervals, until mixture is well-combined and smooth. Set aside to cool.
- On a lightly floured work surface, roll pastry to 16" x 10", with the long side parallel to the bottom edge of the work surface. Using a pizza cutter, cut dough in half vertically, and then horizontally, at 2-inch intervals. You should have ten 2" x 8" strips.
- Brush one strip with apricot mixture. Arrange apple slices, round side up, on top portion of dough strip, slightly overlapping one another. Each slice should look like an upside-down U, with its rounded, skin-on edge sticking out over the top edge of the dough. Fold the bottom half of the dough up to meet the top half, and press lightly to seal.
- Starting from one end, carefully roll dough, keeping the apple slices in place. Seal the edge at the end with apricot mixture, and place into prepared muffin tin. Repeat with remaining strips. Sprinkle granulated sugar on top of each rose, about ¾ teaspoon each.
- Transfer muffin tin to oven and bake until golden and pastry is cooked through, about 50 minutes. Carefully remove roses and let cool on a rack before serving.
